    Did you see the food one page back?....that was on the main table....and the very best part was that some of my friends stayed and got the dishes washed and  it was all cleaned up before they left....all I had to do was put things away that stay there and load the rest into my car and bring it back to Cincy....tons of booze and crackers and chips that I did not even open so I am hoping to have another party here IF I don't start on chemo again next week as my onco wants me to do.

    Oh yes, Teka, everyone had a really good time.  My former and boss and his wife and my current boss and his wife came from Cincy and my Dad knows them so that was nice and then there were neighbors and some of my father's friends and a lot of my friends and a few of Tim's so it was just a very nice mix of people.   Here I am with some of my dental hygiene classmates....me looking like their grandmother with my white hair.

    Marybe you outdid yourself...your party looked delicious and fun for all if the smiles in your photo of friends is any indication.  I'm happy for you.
     
    I'm running behind in my cooking for the holiday. I put the pumpkin in the freezer and ate the dark chocolate that I bought to make cookies (nervous eating). I'll catch up next weekend when we get back from the hospital visit in Pavia--'the sequel'.  The Rome hospital series is calming down. 
     
    In the meantime, I wanted to share with you all the pics I took at the butcher...Roberto, Annarita, and her mother. Look at the tags on the meat and you'll see next to the price a slip that tells you where the animal was born, raised and all points in between to arrive to this shop. No hormones or antibiotics. We took home our bimonthly order. The prices are per kilogram or 2.2 lbs. 
     
    The other is our orange tree...full and ready to eat. The branches are so full that DH put supports under them to keep them from snapping under the weight. They taste so fresh and sweet. That vitamin C is just in time for flu season!

    Our oregano is still producing, but the parsley is fading. I put a few small plants in the green house with hopes they'll hold up over the winter.

    Yassu filenada! I am not Greek,  but live in Greece, and that was my thought too, but Italian and Greek kitchens share many basic ideas.

      I just finished a double batch of cinnabars and am getting ready to bake the Mexican wedding cookies next.  Sugar cookie dough is chilling.  So there WILL be Xmas cookies this year.....I am just so thrilled that I have actually had the energy to do it and am going to be able to take cookies to my doctors....may not be the usual fancy ones, but at least it will be something.  Do not have all my ingredients, but hope to do fudge tomorrow night.

    ive been gone for a long time here, and doing catching up.. thank you guys so much for the help with the fiber bars. since im not doing als, i do watch the soy carefully.. im gonna try the ones you make, i think. added them both to favs on my computer...again, thanks, and good eating.. you guys are amazing! we don't "cook" much here, we "warm up" except thanks, and christmas. then, we fight each other in the tiny kitchen we have lol   3jays

    Hope to find time soon to make some chocolate chip cookies at least. My halls aren't decked and I may need to dress the dogs with antlers.  But inspiration abounds when I read our thread, and my batteries are recharged.

     

    But just in case the days get busy here again for us...I want to send this to all of you. 

       

    Meatballs cooking in marinara sauce

    Cinnabars scents nipping at our nose

    Tiny health bars with their nutrition all aglow

    Will find chocolate hard to beat tonight.

    Here is the recipe for those graham cookies if you dont' already have it.....so simple and people love them, including me.  All you need is sugar, butter, margarine and sliced almonds.

     Butter a cookie sheet with sides, ( jelly roll pan)

    1/2 box Nabisco graham crackers....break into sections and place edge to edge on cookie sheet as close as you can to cover entire surface

    In a saucepan melt  1 stick butter   1 stick margarine . Bring to a boil, add 1/2 cup granulated sugar.  Boil and stir constantly for 2 mins. Pour over graham crackers,evenly.  Sprinkle with 1 cup sliced almonds.

    Bake for 11 mins at 350o.  Take out of oven and remove from cookie sheet right away (if you allow the sugar mix to harden, forget it....you will have to beat them off the pan and they will break into tiny pieces instead of remaining in nice little bars.  Place on waxed paper or parchment paper and allow to cool, separating as you go.   Delicious!    I once drizzled chocolate on these, but really they taste like Heath bars even without the chocolate and are so easy to make. 

    A super simple appetizer :  I don't have exact measurements, but one package of pitted dates makes quite a few of these and I get three pieces of bacon out of one slice.  All  you need are pitted dates, about 1/2 lb or bacon, and pecan halves.

    Shove a pecan half into pitted date. Wrap in bacon section so edges that come together are on the bottom of a baking dish. (they seal when they cook)   Place edge to edge in pan.  Bake in a preheated oven for about 30 mins or until you can see bacon is cooked....Do not overcook, bacon will be done, but you dont really want it too crispy or it will break when you stick in a tooth pick.  Place on a plate and serve....they do not have to be hot...are good at room temp.  People eat these and come back for more and always ask What are these.   Some people will say I hate dates or I have never eaten a date and they love them.  It is a nice combination of salty and sweet.

    Marybe  do you mean both butter and margarine or either one. in your graham cracker recipe?

    Kats,   It is one stick of both....don't ask me why, but it's one stick butter AND one stick margarine.  If you have not had these you will be amazed at how good they are.....I have never liked graham crackers, even as a kid, but these taste like heath bars when they are finished.

    Hello everyone, I wish all a Very Merry Christmas, Happy Hanuka, and a Happy Healthy New Year.  I have been very busy at work.  I did mamge to bake molasses crinkles, chocolate crinkles, russian tea cakes and a small batch of cut out sugar cookies.  We made a large batch of spicy chex mix and then sent goodies out to the boys.  Last week was Christmas with mt family 22 in Mom's small house, how wonderful.  I am off until Tuesday, DH's sister and her husband are visiting form Virginai and we are enjoying may ggod meals.  Thursday night we had 3 bean chili with corn, corn chips and southwest dip and some good Argentinian Malbac wine.  We had cheese, crackers, a variety of olives and pickles for lunch and then Baked Chicken breast, I received a bottle of Lemon Olive oil for Christmas from a friend and put the oil on the chicken, a little salt, a littel balck pepper and covered in herb de provence, we roasted a giant sweet potatoe, kholarabi, olives and pickles.  We enjoyed a nice bottel of Pino Grigio and Piesporter.  Today my SIL and I are making Foccacia with carmalized onion, olives, herbs and Pecorino Romano cheese, fresh homemade polics sausage given to us from a friend, homemade sauerkraut, and pot stickers, what a regional combination!  We love cooking together when she comes home.  We will have a glass of fesh egg nog while opening gifts.  Christams dinner wil be steak grilled outside, sqaush, asparagus, relish tray and a good Chianti.  Next week will be soup and salads!!!

    Hope all of you are enjoying time with your friends and family this blessed holiday season. 

    Marilyn loved the butcher shop pics.  We are losing all of our local groceries, we have to travel 28 miles to go grocery shopping now.  Oh well since we produce so much of our food not a big deal, and living in Paradise is worth it!

    These days I'm still catching my breath from the demands of life, so I'm going to cross post something the Moderators put up...http://www.breastcancer.org/risk/organic_living/recipes/  There are some very good and healthy recipes on this.

    My tongue was hanging out for the oyster stew and bacon wrapped scallops Teka! I'll trade you this for my oranges? Oyster stew is one of my all time favorites. I looked for the month with the R so I could by them...my mother and me enjoy this everytime I visit during one of those months! I like it best with the canned milk. I remember from my nutrition course in college that this alone is a meal on the calorie count. I liked the soup as an appetizer followed by blue fish covered and steamed in milk.  Bacon wrapped scallops are a close second. 

    This past week we were North for doc check ups that turned into a surprise hospital stay for DH. I was a bit stressed and tired when I took the cab back to the hotel. After making phone calls to inform family, I wanted to eat something. I'd fasted for 12 hrs with only a Zone bar that I had in my pocket book. When I looked for my wallet I couldn't find it...panic set in. I went to the restaurant were we ate the night before to ask for help to call the Taxi service that had an automated phone service. I thought that I'd left the wallet in the cab and my Italian with an American accent is difficult for some to understand...especially with an automated system. The waitress was so kind as was the owner who made the call to the Taxi service and to the Police. Then I sat down to eat ... I had DH's wallet to pay. I couldn't think straight so they made me a plate of grilled chicken with green salad and fried plantans (it was a Cuban restaurant). By the time I finished the dish three police arrived. They were so patient and helpful. They asked for a description of the driver. I gave them my best then realized I needed to explain that he was not the threat, that he was professional, that it was my stupidity that lost the wallet. To make matters worse, I put my husband wedding ring in with my change! This was the worst part of the loss. They were sympathetic and explained that it was best to call the banks, etc. (Fortunately I had my iPad and Skype because my cell phone was destroyed by a coffee filled chocolate that my SIL gave me that I put in my pocketbook...squashed.)  I was leaving the restaurant to go back to the hotel and offered to pay my bill. The owner wouldn't accept my money...so kind. When I entered the hotel room I looked one more time through my things...nothing. Then I went to the bathroom. There on the small shelf was my wallet! I had been so tired when I returned from the hospital that I had no memory of putting it there...but I was soooo happy to find it. I went immediately back to the restaurent to tell them. They were all thrilled for me. The owner poured a small glass of red wine and told me to sit a bit. I finished and offered to pay...again, he wouldn't accept it. 

    Over these last couple of days, I found angels all around us. These kind people at the restaurant, the shuttle driver at the hotel who wisked us to the ER. The doctors who I relayed to each other via cell phone in the ER. At Milan central train station, on the way home, we were assisted with our luggage onto the train by a street person who I gladly paid.

    Yes indeed, angels all around.

    Today DH cooks lamb for his family who are arriving. It is marinating in wine vinegar and his secret spices as we speak. He made castagnaccio yesterday in preparation. I spent Christmas morning watching a VHR tape of 'Auntie Mame'. My son called to say he's flying here the first week of January. An angel hug at its' best. My 92 y.o. mother and my sister called to sing Silent Night and Hark the Herald Angels Sing over the phone...angel voices. My sister reminded me of the choir prep for midnight mass when we were kids. They planned to have dinner with my other sister and her family. She'll be having surgery in the near future for breast cancer...she called to tell me just before we went North. I wanted to be under her tree when she woke on Christmas, but our plans changed. Don't they always? I'll get there soon enough. She's in good hands and we talk often on the phone.

    Yep, angels all around. Some of the nicest angels I know are right here on this web site.

    Hello all, made a nice mushroom soup using baby bella, shitaki, and button mushrooms, I sauted the mushrooms, onion and garlic added flour, sea salt, pepper, homemade beef broth and then some fat free half anf half, topped off with a little nutmeg.  I like strawberries in a salad with olive oil and balsamic vinegar.

     Just a heads up to all I was having trouble with redness in my breast over the holidays I have this issue was told I am one of 5% who have a type of radiation damage, anyway called the doctor and he told me to come in, he checked my white count sent me home with  antibiotics telling me if anythign changed or I started to run a temp to call and he would admit me for IV antibiotic.  I have cellulitis a bacterial infection in my BC breast, just a heads up to others.
