Teka, the problem with the calcium supplement is that it is needed for the absorption of Vit D3. The Vit D3 significantly helps my arthritis pain. I guess I'll need to make a choice again. I've cut back on the supplement now for summer because of the seasonal diet change and the heat that helps my joints. I need to cut my portions too. My weight is creeping up. At my age, it will always be something that needs tweeking.
For our guests yesterday, my DH made fettuccini and marinated rabbit. The rabbit was in a marinade for several hours of wine vinegar and water with a mixture of spices that my DH creates from hot pepper, rosemary, laurel, juniper, and others that he won't tell me. It was cooked slowly. We had steamed string beans with lemon juice. After, we had sliced banana with lemon juice and brown sugar. And after that, a plate of mixed cheese. The breeze on the terrace under the vines was delicious too. Around this we had the best time with our friends who we haven't seen since the holidays.
When they left we rested. A friend in Rome wrote me to ask if we felt the 3.9 earthquake with the epicenter nearby. No we didn't. We were resting. When the dogs stirred, I thought it was because they were hungry.
It's always something....

Marilyn I take Vit D 3 too, I take it in a glucosime supplement with Vit K, calcium, and other ingredients that help with arthritis. It seems to help I have gone off it and been sorer. I can only take it later in the day as I have to have 5 hours before and after my thyroid meds due to the calcium so I usually take in the evening. I try to get as much Vit D from the sun as possible some days I only get out for 15 minutes or so but they say it helps. I agree I feel better in the summer except when I do too much gardening or bike riding. Taking long walks does not work so well since the arthritis in the ankle is getting worse. Your gardens and recipes are wonderful. I live right down town in a city and my yard is the size of a small patio--perhaps 18 feet by 16 feet. It is also very shady due to a large tree in the corner...so I have impatiens planted since they bloom and like shade. Does anyone have any other suggestions for shade liking flowers?. Short of chopping the tree down, only one corner of my yard gets any direct sun. Marilyn, I noticed that you do alot of growing in pots...do you have any suggestions about how I could get started doing that, perhaps for next year, for my one sunny corner? :-)

Picked our first bowl of red raspberries today, mixed some in yogurt for breakfast and made some muffins.

I just saw this thread and was looking at some of the things you have made....Oh, I do so want to go to Italy....have been there, but oh the food pics make me want to go again. I have no luck growing veggies because the squirrels and other animals get them, but I am growing some herbs this year and just finished making some hummus. I stepped out the side door and picked some basil leaves and some spriggs of dill and am feeling quite smug about it since I never grow anything other than flowers. Now I must come up with something to use thyme and sage in. The pics of berries look wonderful!
Mandy, I have mostly shade in my back yard....have lots of ferns and hostas. Also astilbe, bleeding heart and caladiums, and several hydrangea bushes, both the oakleaf and the regular ball ones. Working in the yard is one of my favorite things to do....eating is another so I will be back here to see what's cooking.

Good morning all. I just now poured my coffee--topped with frothy, steamed milk and sprinkled with cacao--to join you all.
Carolynn--even my frothy milk topping can interfere with the thyroid meds so I wait about 30 min after taking my meds before to sip my coffee. That's an important food fact to know. Thanks for bringing this up. I take my vitamin supplements in the PM too, like you, to avoid blockage of my thyroid med absorption. My DH thought the stones were helped along with the seasonal salads we've been consuming. I doubt it. I think though that my pH was out of wack and I needed more magnesium. My metabolism isn't the fine tuned instrument that I'd like it to be.
Teka--Sorry to hear about the restaurant spaghetti sauce. That can be so disappointing. It can be the basil, but the tomatoes are important too. Maybe they used a canned paste instead of fresh or canned chopped? And everyone cooks to their taste. We are particular about where we eat too for this reason. DH taught me that you can always know a good restaurant by their pasta dish--this measure has held true. We prefer our kitchen to most restaurants--so do our friends.
Mandy1313--You can do a lot with that space. The shade is an issue. We have the same issue. We have small space and much shade which is most welcomed in this heat. And we have dogs who we coexist with. I wouldn't cut down the tree. Shade is one of the reason that ours is in pots. Terra cotta pots are better for the roots than plastic that keep the heat in and can burn the roots...we have both. I move them to the sun spots, thus the tomato chorus in pots on the counter near the BBQ. The basil and hot peppers are just in front of the chorus next to a rose bush. The strawberry plants are on the corner near the geraniums on the terrace. I really enjoy mixing flowers, veggies and herbs. I look for spots that get 5+ hours of sun.
Marybe--Thanks for writing and welcome. Isn't it one of the best feelings to pick your own herbs and add them to your food! And it taste so fresh. I use thyme and sage often--stuffed or wrapped in chicken with rosemary branch--on pork wrapped with laurel--and I used a pinch in the veggie mousse. I keep parsley pots nearby too...and mint. I made green tea with dried mint leaves...no other additives...it was very yummy and fresh.

Marybe, now htat you are growing herbs you could experiment with mixing herbs and veggies in the garden. I grow my tomatos near basil and have very little trouble with dear, rabbits, fox, etc that I share my land with. Mixing flowers, herbs and veggies helps keep bugs and certain diseases under control too. Google "companion planting" and you'll find lots of info about this. A benefit is that you get a garden that is very interesting to work in and look at! I have a circular garden and it never looks the same 2 years in a row!

Here are some pics of my backyard.....as luck would have it, the sun was hitting it at that time...it gets several hours of sun late afternoon, but for the most part is shade. I have hollyhocks and coneflowers and clematis and things that love the sun on the side and front of the house and of course as you can see, the lilies are everywhere. They don't seem to care what type of soil or conditions, they just g

Native Mariner -- Glad you could join us. Companion gardening is good advice. I remember acres of farm land in NJ rimmed with marigolds to manage insects without pesticides. Marigolds are edible too. So are pansies. Google Edible Flowers. I first learned about pansies when they were served in a salad at a restaurant on the campus of the U of P. My cousin recently landscaped to deter the deer--she lives in countryside of Oregon. Years ago I used electric wiring around my garden plots to deter the rabbits, etc. I used the same method for the horse pasture. Safe and effective.
Marybe your garden is very inviting. Seems to me that you can find room for some veggies. You don't need many plants. I googled the companion gardening as NM suggested and found charts that made the choices easier. That can be much fun to plan for next year. I don't know what planting season you live in. Jusr found this thread. Italy is on my bucket list! Zucchini is plentiful this time of year here in NY, so did the zucchini bread yesterday and had zucchine casserole for dinner... ha ha my DH thinks I have gone zucchini crazy. I only plant tomatos cause there is nothing like fresh. We have several farmers markets in the area, so I hit those frequently, any new recipes are always welcome and fun, now that I am not working and have the time.

Carberry, Marybe, Native Mainer good to see you here! I too hope to go to Italy some day, my DH and I also want to go visit the Fingerlakes area of NY, especially do a winery tour. We have been up to Niagra on the Lake and it is very nice. Using fresh herbs is always great. I like to make fresh lemon balm tea and fresh mint tea, sometimes I mix the two add some honey for a good iced tea.
This time of year I like to take garlic scapes (garlic cloves work too but good use of scapes), olive oil, parmesan cheese, and parsley, grind it in the blender or food processor. It is good on noodles, veggies or spread on bread and grill. I am trying a new flavored vinegar, will let you know how I like but so far it smells good. Cider vinegar, fresh dill sprigs, garlic scapes and shallots.

Carberry, I have a delicious zucchini recipe I will post later...my friend always says it was the best thing she got out of her lst marriage....it was her ex-MIL's. Also I have a wonderful salsa recipe, that is not the typical cooked tomato, hot one.....everyone asks What is this?, it's delicious. It is all fresh veggies and especially good for not since they are all available homegrown. Now I have to go get ready for my treatment appt...today is the last one before doing scans and I am really anxious to have those so we can find out if this stuff is working. I like this thread because as I said before gardening and food are my two favorite things.

carollynn79 We live smack in the middle of wine country on Seneca Lake, and it is beautiful here, I highly sugest a visit in the summer. the winters are a different story! We even have wine ice cream! One of thewineries is having a garlic fest soon, love all the cool things done with garlic. The grilled bread sounds awesome. BTW my name is Carolyn also
Marybe, cant wait for the recipes...good luck with your scans, I,too, need scans done but have been putting them off, since being done with all treatments, felt like I needed a break.

Teka--thanks for your comment about tea. And that's another good point about food. Everything in moderation is always a good idea. I didn't think that I was drinking so much caffeine but I may be. I have two american size coffees in the morning and an espresso after lunch. I drink tea occasionally but I like green tea and yogi teas. I have those with guests and the student who comes for english conversation. I'll do a little more research on this. I remember learning that too much green tea can stress the kidney. I'll be getting my labs back soon.
Speaking of labs, Marybe hope all went well with you treatments. We'll be here when you get back. It will be interesting to follow along with your garden plans.

If you ladies ever put a tour together that comes near Rome, let me know when you're coming and we'll have pranza (lunch) together if our schedules align. Imagine, sitting around a real table together! Friends that do the tours usually are tightly scheduled whether it's flying in or a cruise...and then there's the jet lag to contend with. So I go to Rome to meet with them. We live an hour NW of Rome near Lake Bracciano. In fact, most of my DH recipes are Roma where he was born. The veggie mousse and mostarda are both northern recipes I'm told...Lombardia. Pavia, just south of Milan, is where the restaurant is that served these dishes.
The heat broke here with a cloudy day so I'll poke my nose out for awhile. I waited until evening to exit yesterday. It was 90 F. in the shade. If you have a choice of time to travel here, I'd come May June or Sept Oct. The summer is full of people so long lines for museums and the sun is strong. In the spring you can see the green coming to the fields. In the fall, you can see the hills full of grape vines turning color...beautiful isn't it Carberry? You probably have the same views only bigger. Our lake is not so large as Seneca. Ours is 20 miles around. http://en.wikipedia.org/wiki/Lake_Bracciano We get our red wine every year from Montefisconi on Lake Bolsena which is about an hour + north of us. My DH has been getting his wine there from his friend who makes it for 40 years.

Thanks for the suggestions about my shady garden. I will keep them and plan the garden for next summer. Maybe I can try a few pots with tomoatoes though I am not certain that I have enough sun.

Carberry we would love to come in the fall for the grapes, color etc. My DH has a seed wheat business so we have to wait until he retires from that!
Marybe always looking for good zucchini recipes have a few to try once it gets going.
Marilyn will certainly let you know if we head out your way. I would love to sample the local wines of your area! I have josta berries and am planning on making wine from them this year.
My DH and I are going to Alaska in August for 12 days, we are getting excited we hear it is beautiful
We had a wonderful summer supper, new fresh potatoes, red, white and purple, kohlrabi, peas, and fresh greens with fresh raspberry vinaigrette. I love summer !! Will post pictures this weekend.

Yesterday, my plan was to go to the lake and take some pics of our dog Stella's delight of chasing water sprouts on the concrete steps leading into the lake. We were there the day before. I made pineapple salad with endive and then we took a long walk. The winds were fierce. My DH reports that the tomato plants were toppled on the terrace by the wind while Stella and me enjoyed the waves!
Instead of another day at the lake, I spent the morning online with Apple Care to rid myself of a Trojan found in my system. It was there to get my information. They said it was unusual for a Mac. Fortunately, I ran Norton and found it attached to a file in Cache. It's always something.
Teka I was so hungry for the seafood. It is one of the foods I miss very much here is the seafood from the Atlantic...the scallops, the Maine lobsters. You are fortunate indeed.
Carolynn79 your travel plans are very nice. I'd wanted to see Alaska but never made the trip. I'm glad that we are on your list to visit.
Last night I cooked steaks on the grill along with a potato and corn on the cob. The grill is electric over a pan of water to contain the smoke. The flavor is fantastic. I quartered the potato and wrapped the corn in foil with a little water to steam. It cooked in about half an hour. Then I cooked the steaks. We had more pineapple after.

My DD is in town from NYC and had to be picked up at bus station, soooo, we went to one of the lg malls near the station for some retail therapy and had lunch at a restaurant there and I had a barley, cucumber,tomato, salad (cold) in balslmic vineagar that was fabulous. Who would guess, barley? but was so simple and fresh. Loved it!

I have been posting a lot about my incredibly high tumor markers, but am taking a break from the mystifying world of cancer treatments and tests to post those recipes I talked about.
Baked Zucchini
1/4 c olive oil 2 lbs zucchini sliced (about 4 or 5)
1 cup diced celery 1 teasp salt 1/4 teasp pepper
! medium onion diced 1 cup buttered bread crumbs
! clove garlic minced 1 1/2 cup grated Parmesan cheese
Saute onions and garlic in olive oil. Add celery and zucchini and add about 1/4 cup water. Cover and cook until zucchini is soft, but not mushy. Layer zucchini in a buttered casserole dish....layer of zucchini ,salt, pepper and cheese. (about 3 layers) Use a slotted spoon to put onions and celery on top layer. Pour on a little liquid. Put bread crumbs on top of casserole with extra Parmesan or Romano cheese and bake for 20 - 30 mins at 375o
SALSA
2 large tomatoes diced 1/2 green pepper diced ( I also use yellow and red for color)
1 small can black olives sliced 12-15 green olives sliced ( I like them so use more)
l bunch green onions, chopped ( Not in original recipe, but I sometimes add black beans and corn)
1 can diced green chilies (mild or hot depending on how you much heat you like)
Put chopped veggies in a bowl. Add 2 Tbsp olive oil 2 Tbsp vinegar and 1 Tbsp garlic salt. Prepare at least 8 hrs before serving with tortilla chips for dipping. Stir every two hours. The longer it stands the juicier it gets and the better it is. I do not use exact amounts for this.....add as many veggies as I want. People love this stuff as it is not typical cooked tomato salsa and it is really pretty because it is so colorful. .
ZUCCHINI FRITTERS
1 lb zucchini (about 2 medium) 1 teasp salt 1 Tbsp grated lemon zest plus l lemon cut in wedges
10 sprigs fresh parsley , stems removed and finely chopped
1 medium garlic clove, minced
1/4 teasp pepper
2 large eggs, lightly beaten 1/2 cup all purpose flour 4 Tbsp olive oil
Using a grater, grate zucchini into a medium bowl. Add salt, lemon zest, chopped parsley, garlic, pepper and eggs. Mix well. Slowly add flour so no lumps form. Heat olive oil in pan over med heat. Carefully drop zucchini by spoonfuls into pan ( about 1 tpsp per fritter) . Cook about 2-3 mins on each side, until golden. Transfer to a plate and set aside. Add more oil to pan as necessary. Garnish with parsley springs and lemon wedge.

Marybe--The recipes raised my appetite bar--especially the fritters. Thanks for serving our table especially while you are managing your treatments.
I'm looking for a simple meal to serve as buffet to about 15 people. Any suggestions? I want to celebrate DH and my meeting each other in August. (There will be a slight delay around an OR schedule for my DH.) Our refrig is small. I'm leaning toward a bbq. I can make appetizers and salad in advance and serve fruit for dessert. What do you think? It can't be sit down...too many. It's a mixture of Brits, Americans, Swedes and Italian so I can go all over with the menu. Maybe london broil with a side of peppers and onions and mushrooms on the BBQ then sliced on platters along with marinated chicken breasts in lime juice and ginger covered in sesame seeds, a pasta freda, gelato. I did that before and it came out great.

Also lasagna is always good....can be made a day or so ahead of time and warmed up before serving and tastes even better as it ages. You could have your salad, bread and and your fruit for dessert....maybe have some sorbet which is always nice in hot weather. Or do they get sick of Italian food in Italy? If they don't , how about Stromboli ?....you can make that ahead and just have them take a slice....sounds easy to me. All this talk of food is making me hungry.

All the recipes sound good! We have been eating good in the neighboorhood this week. I am going to a BBQ tomorow evening and am bringing cocktail meatballs. I decided to make gooseberry cocktail sauce, I usally use currant jelly but thought with the fresh gooseberries I could cook them down. Fresh potatoes, peas, kolarabi, and raspberries with these garden goodies simple is easy.
