Barley Apple Salad - Mmmmmmm Delicious!

Not just for cereal or bread.  Barley is a whole-grain product loaded with vitamins, minerals and fiber.  Got this from a wellness seminar at my Radiation Center.  Looks like it came off the www.caring4cancer.com website.  You won't believe how delicious this is.  Enjoy.

Salad:

2-1/2 cups cooked, then cooled, barley (rinse under cold water to cool after cooking); to save time, cook up a large batch of barley and freeze for future use; dry barley "pearls" take about 30 minutes to cook fully.

1-1/2 cups frozen whole-kernel corn, thawed

1/2-cup dried cranberries or raisins

2 to 3 medium chopped scallions (green or spring onions)

3 medium applies (any variety) unpeeled and finely chopped

1 medium carrot, coarsely shredded

Dressing

2 tablespoons olive or canola oil

2 tablespoons honey

1 tablespoon lemon juice

Instructions

Mix salad ingredients in a large bowl

Combine dressing ingredients in a tightly lidded or covered container and shake 2 mins to combine

Pour dressing over salad and mix to coat salad

Serve cold or at room temperature

Prep time:  30 minutes, not including barley cook time 

Per serving (saves 4 as main dish) 320 cals; 55 grams carbs; 7 grams protein, 8 grams fat; 8 grams fiber

Can also be a side dish - divide cals/carbs, protein, fat, fiber counts in half.
