Cookbook Suggestions?

I'm looking for a healthy cookbook that has ingredients that one would normally have on hand at home.  I just hate it when I find something that I would like to make and have to make a special trip to the store.  I have a hard time making substitutions because I'm just not an "outside the box" type of gal. I'm a single mom of 2 year old twins and it's quite a production to go ANYWHERE with them, let alone the grocery store. Thanks bunches :O)

    This may not be exactly what you are looking for but I am reading Eating Well Through Cancer by Holly Clegg and oncologist Gerald Miletello, MD. The recipes are easily managed, do not involve lots of "sophisticated" ingredients, and would be useful even if you are not dealing with the appetite/ nutritional challenges involved with cancer treatment. (There are sections that focus on what to eat day of and day after chemo as well as when you have specific symptoms, how to maintain high protein/high calorie intake, rebuidling after cancer treatment.) I am not a highly confident or competent cook, but I can read a recipe and create something tasty. If I find the other cookbook I like, I'll let you know.
