    warming up his side of the bed.

    Due to middle age, chemo & tamox, I am perpetually hot and love sliding into nice cool sheets.  DH not so much.  He works nights so I go to bed before he's home.  I start off on 'his' side then when he comes to bed I roll over to 'my' side and let him have the warm spot.  And bonus, I get another shot of coolness.

    Beet and Pear Salad with Walnuts and Goat Cheese

    This is a beautiful beet and pear salad recipe. The deeply colored, sliced beets are topped with sweet pears, goat cheese, and a simple walnut vinaigrette.

    Prep Time: 15 minutes / Cook Time: 1 hour / Total Time: 1 hour, 15 minutes

    Serves: 4 if served as the first course / 2 if served as the main course

    Ingredients:

    ·  2 large red beets, stems trimmed, washed

    ·  1 ripe pear, cored, sliced thin

    ·  1/2 cup toasted walnut halves

    ·  2 Tbsp sherry vinegar

    ·  2 Tbsp olive oil

    ·  2 Tbsp walnut oil

    ·  salt and fresh ground black pepper to taste

    ·  2 cups baby arugula leaves

    ·  4 oz goat cheese (either firm-style aged, or softer fresh goat cheese)

    Preparation:

    Preheat oven to 375 degrees F.

    Wrap the beets in foil, place in a small baking dish, and bake for 1 hour, or until tender (test with a small knife). Allow to cool completely. When cool, scrape off the skin with a knife, and slice the beets as thin as possible; reserve.

    Fan the beet slices on four chilled salad plates. Top with the sliced pear and walnuts. In a small bowl whisk together the vinegar, olive oil and walnut oil. Season with salt and fresh ground black pepper to taste.

    Toss the arugula with a couple tablespoons of the dressing, and divide on top of each salad. Top each plate with the goat cheese (grate fine if using firm, aged goat cheese, or simply crumble if using soft goat cheese).

    Drizzle each beet and pear salad with more of the dressing, serving any extra on the side. Serve immediately.

    (note: while the pre-arranged salad is pretty, I keep the ingredients separate as they stay fresher if we don’t eat it up at one meal (it’s just the two of us).  One bowl w beet & pear slices, one w lettuce, one w toasted walnuts and one w soft goat cheese.  You can use bottled dressing if you don’t want to make your own.)

    (ooooh, thank you badger! I think i need to go to the store, now, that sounds perfect for tonight! doesnt walnut oil taste great on salad? i will make swordfish to go along with it, cooked normally, with a ghee and grainy mustard sauce, and  sweet potatoes, diced and baked with olive oil & turmeric, delightful color, and delish!) it will be as if we went to a great restaurant, and i will light a candle and make a toast to you!...enough about food, or we will have to move to another thread!!!

    Heirloom recipe might be my mom's buttermilk pancakes, which melt in your mouth. I have never tasted pancakes as good as hers.

    the time I put on some eggs to hard boil and forgot about them (thanks, chemo brain).  Was doing something else and thought, what's that smell -- uh oh - ruined the saucepan and the eggs.

    love most veggies but if I had to pick just one it'd be a fresh-picked ripe tomato.

    (OK that's a fruit, right, so I'll also say Brussels sprouts LOL)
