It's that time of year when the house smells of baked goodies every day.  I'll be making a trip to the bulk food store soon to get all my baking needs.  I usually make Torrone and biscotti and an assorted variety of cookies.  Am feeling courageous enough this year to try some new recipes.  So, if anyone has any cookie recipes they would like to share, please post them.

    OMG, I need to get a biscotti recipe!!

    Yesterday, me and my little Ginger Snap made chocolate chip cookies.  It was fun because she used our cookie cutters to try to shape them.  Instead of gingerbread men, the cookies look like 5-petaled flowers, only the stars maintained a shape you could recognize!

    I also love the Russian tea cookies (you know the round ones, rolled in powdered sugar?).

    I'm not big into cookies but I enjoy making peanut brittle and peanut patties every year as gifts.  My family and friends always ask me to make more but time and budget only stretches so far.

    Not sure that many folks outside of the South know peanut patties.  Decadently sweet.

    Found it.

    Biscotti

    3 large eggs
    pinch salt
    1 cup granulated sugar
    1 tsp. vanilla extract
    ½ cup veg. oil
    ½ cup coarsely chopped almonds
    ½ cup coarsely chopped skinned hazelnuts
    2-1/2 cups all purposed flour
    1 tbsp. baking powder
    1 tsp. cinnamon

    Whisk together eggs and salt. Whisk in sugar and vanilla, then oil. Stir in nuts. Combine flour with baking powder and cinnamon. Stir into egg mixture.

    Dough will be very soft. Brush hands with flour and separate dough into two equal parts. Form dough into two logs on jelly roll pan lined with parchment paper. Bake at 350, 15 to 20 minutes or until well risen and firm when touched with fingertip. Don't over-bake. Cool to room temp.

    Slice logs about ¼ to ½ inch thick slices using a serrated knife. Return slices to pan, cut side down and bake for 15 minutes at 350, or until biscotti are a golden brown.

    Makes 4 dozen.

    I was just looking online and saw this site www.joyofbaking.com and the link to cookie recipes looks pretty interesting.  I haven't made a bunch of cookies since my kids were little, but I really want to do some baking this year.

    Here is my all-time favorite - few ingredients, fast to make, and perfect for the kids to help:

    Kisses Cookies

    1 cup peanut butter, 1 cup sugar, 1 egg. Mix and place quarter-size balls on cookie sheet and bake at 350 for 8 minutes. When you take them out of the oven, put a Hershey kiss on top of each one. That's it!!!

    The "official" Hershey kiss recipe has more ingredients, but isn't any better!
