    I love Vita-muffins and it feels so good to know I'm getting loads of good-for-you stuff along with a great-tasting snack or, in my case, breakfast or dessert. Does anyone have a recipe for very nutritious muffins?

    Here is a good healthy muffin recipe 

    Healthiest Muffin Recipe

    Ingredients (use vegan versions):

        1 ripe, banana, mashed
        1 cup grated zucchini
        1/3 cup applesauce
        1 cup rice or soy milk
        1/4 cup maple syrup
        1/2 cup dates or raisins
        2 cups spelt flour
        1 cup ground flax seed
        1/2 teaspoon baking soda
        2 teaspoon baking powder
        2 teaspoon cinnamon
        1 teaspoon allspice
        1/2 cup chopped walnuts (optional)

    Directions:

    Combine dry ingredients in a large bowl. Combine wet ingredients in separate bowl. Add wet to dry and mix to combine. Add nuts if using.  Grease muffin tins and fill 3/4 full. Bake @ 375 for 15 min.  Enjoy!

    Serves: 12 med muffins

    Preparation time: 15 min + cook time

    marin, are Vita-muffins a brand name ?  If so, where do you get them?

    Yes, Celia, they are a brand and, if I'm not mistaken (I'm at work and can't check until later), they're put out by Weight Watchers (!) They have a few flavors and also muffin tops only. I buy them in the freezer section of the grocery store. Since they cost almost $5 for only 4 though, I'd like to mix up a batch every few weeks and freeze them.

    Spar2...the recipe sounds great, but what is spelt flour?

     marin, this is my favorite recipe for Applesauce muffins from a diabetic diet book. 

    Applesauce Muffins

    1 egg white

    1 tsp vanilla

    2 Tbsp honey

    1 tsp cinnamon

    2 tsp baking soda

    1 1/2 cups unsweetened applesauce

    2 tsp oil

    3/4 c oat bran

    3/4 c raisins

    1/2 c water

    1 c whole wheat flour

    Combine the ingredients with a hand-mixer, in the order given.  Pour (spoon) into Pam-sprayed, nonstick muffin pans. Bake at 350 degrees for 40 minutes.

    makes 12 muffins.

    cal. from carb. = 74%

    cal.from pro. = 12%

    cal. from fat = 13%

    Oh...yum! I definitely need to try both of these recipes! I do love muffins! And Celia, the company that makes Vitamuffins is called Vitalicious. I don't know why I thought it was Weight Watchers. Anyway, here's the website:

    thanks for the website marin, Vitalicious sounds much more appealing than Weight Watchers to me!!!

    i clicked on the hotlink word "spelt" in spar's post and that website (vegweb, 7-minute chef)) looks interesting and here is what they said about spelt:
