    this isn't really a recipe. it's just a really easy thing to do with couscous. i was married to a moroccan so i use couscous alot. follow the package directions, but don't cook it. put it in a container with boiling water and if u like the folllowing ingredients:



    small amount of oil or butter

    small amount of salt

    some curry powder

    tiny amount of sugar or sweetener

    raisins



    let it soak for about 5 minutes in a covered cotainer. fluff with a fork.

    So treat it like instant rice? In other words, even if you buy bulk couscous, don't actually cook it at all but, rather, soak it for 5 minutes?

    The curry sounds like a great addition. Maybe turmeric too or instead of? After all, turmeric is supposed to be so good for us....and now is being mentioned as possibly fighting the development of Alzheimers too!

    yes, just let it soak for five or ten minutes. you can't overdue it. turmeric is as good idea for color, but still do the curry powder for taste.

    Do you have any Moraccan recipes to share with us? I love ones with eggplant.

    Here is a tip I got from Martha Stewart. the uncle bens's wild rice boxes. Fix the rice according to the directions but do not use the flavor packet. (too high in sodium) or use just a little. When the rice is finished, add some craisens and stir and fluff. I no longer use the Uncle Ben's stuff but buy a blend of wild, brown, red, all kinds of rice and add the craisens, or dried blueberries, or white raisens.

    hi debbie-



    my husband did most of the cooking which was mostly tagines (stews in clay pots). i make my own versions sometimes by improvising with chicken and prunes or chicken and olives over couscous. put lots of cumin and turmeric in anything and it will taste and look moroccan.
