My favorite low fat meal

    I found this is a magazine and it has become a favorite recipe for me.

    ----------------

    1 skinless chicken breast

    1 slice mozzarella cheese

    fresh chopped basil

    tomato sliced



    Use a non stick pan with a lid and spray it generously with Pam. Salt and pepper the chicken breast and place in preheated skillet on medium heat. Turn the chicken several times so that it is browned on both sides and is cooked thoroughly. When it is no longer pink on the inside, turn off the heat and add a slice of cheese to the top of the breast. Leave the lid on until the cheese is melted.


    Top the chicken breast with chopped basil and sliced tomato.

    I usually have a rice pilaf without the butter and a side salad with Newman's light balsamic vinaigrette to complete the meal.

    This is quick, easy, healthy and delicious!

    Sounds yummy and easy!  Do you grow your own fresh basil on a windowsill?  If you do, how do you keep it going?  I buy the fresh basil in that bag of water with the roots but I know I could be doing something better because the plant doesn't regenerate new leaves.  

    Any advice on windowsill herbs?

    HannaB...if you are in a temperate climate you can take the basil you purchased from the supermarket and plant it in your garden...it will grow and keep giving you fresh basil. I live in PA and do this in the summertime so I don't have to keep buying it constantly. I don't know what would happen if you just planted it in a pot and sat it on your windowsill. It might work! Good luck with it. Fresh basil is the best herb!

    Thank you RoseDew!  I will plant it in a garden pot outside this summer and give it a try on my windowsill in a pot of potting soil.  The instructions on the basil plant bag said to keep putting water in the bag, but all that led to was rotting. 

    I think the way to succeed is probably in a pot in soil on the sill.  At least till summer!
    Thank you for helping.  I've always admired people who had those huge, healthy herb bushes!
