I have struggled with breakfast ideas because I hate cereal and oatmeal.
Here are four of my favorites:
1. Egg burrito (one egg and 2TBSP organic egg whites scrambled. Roll in whole wheat tortilla. Add salsa.)
2. 2 toaster whole grain waffles. Top with lots of wild organic blueberries (I buy them frozen and then nuke them) and Grade B maple syrup (just a tad). If you're not against flax seed...you can sprinkle that on top.
3. Quesadillas. Two corn tortillas, 1 ounce organic mozarella cheese: heat on skillet. Add brocolli sprouts and salsa before serving.
4. Two poached eggs and whole grain toast.
I'm interested in other healthy breakfast alternatives. .

Some of my favorite breakfasts
1. PLain lowfat yogurt(my favorite is Fage Greek yogurt but it's expensive) with a drizzle of buckwheat honey and some walnuts, almonds or pecans
2. Plain lowfat yogurt with a lightly cooked berry compote(I lightly cook mixed berries and add a spoonful of turbinado sugar and thicken slightly with cornstarch or tapioca and then store in the frig) with nuts
3. Yogurt with wheat germ and or ground flax
4. Organic eggs with good toasted bread
5. saute spinach, mushrooms, onion, scallions or whatever combo and add a couple of eggs maybe a grating of cheese or some feta
6. Real cooked whole oatmeal with berries or maple syrup
7. Leftover homemade soup
8. Summertime I like to have a shake made with frozen banana or berries and whey powder
9. whole grain homeade pancakes or waffles(can be made in big batches and frozen and reheated as needed)

Regarding oatmeal, I no longer buy the Quaker Oats. I buy steel cut oatmeal. There is a huge difference between the normal oats in the market and the steel cut. The oats we normally see are called rolled oats... they are steamed and rolled, cut, steamed and rolled, etc. I think they get steamed 3X.
The steel cut oatmeal can be purchased at better supermarkets (not mine!!!) and places like Whole Foods. I buy them at Trader Joe's. I buy them in the carton but also pre-cooked and frozen, just open it up, put in micro for just over 2 mins and you have flavored, hot oatmeal that's really good for you!!!
