Light (and easy!) Macaroons

These sound delicious!

Light Macaroons

14-oz. package flaked coconut

2/3 cup sugar

6 T. flour

1/4 tsp. salt

4 egg whites

1 tsp. almond extract

Set oven to 325 degrees. Grease and flour baking pan(s). Mix coconut, sugar, flour and salt. Stir in egg whites and almond until well-blended.

Drop into 36 (1 T. each) mounds, 2" apart. Bake for 20 minutes or until edges are golden brown. Immediately remove to wire racks to cool.
