Taco Soup

Hi Ladies,

With fall weather setting in soon I thought some of you might enjoy trying this one.

I found a good recipe for Taco Soup in one of Paula Deen's books.

I like it as soup my husband likes to use it to top a salad  to make a taco salad, with fat free sour cream, salsa, and corn chips.

1 1/4 lb -ground chuck(ground turkey can be used )

1- large onion chopped

2 -cloves of garlic minced

2 -14.5 oz cans diced tomatoes, with juice

1 -15-16 oz can kidney beans, drained

1 -15-16 oz can pinto beans, drained

1- 15-16 oz can black beans, drained

1- 15.25 oz. can of corn drained( I have used frozen works just as well)

1- 14.5 oz can chicken broth(another can of broth can be added if desired)

1 -1.25 oz package of taco seasoning mix

1.  Cook beef , onion & garlic in large Dutch oven over med heat , stirring until browned and the meat crumbles.  Drain well and meat and vegtables to Dutch oven.

2.  Stir in tomatoes,beans,corn,broth, and seasoning mix. Bring to boil, reduce heat and simmer uncovered for 30 min.

Serves 10-12 

I have used this for the "guys" on football Sunday's .  Enjoy Smile
