Ramen Noodle Coleslaw

This was served at the family reunion I attended last weekend and it was so yummy, I couldn’t believe it contained those cheapy Ramen noodles. .I was never a fan of Ramen noodles because of all the sodium/preservatives but I have to admit this is a delicious way to get the cancer fighting properties of cruciferous veggies like broccoli and cabbage. And since this makes a huge batch, I don’t think the per serving sodium is too bad esp if you use 1 packet of seasoning like I did. I just ordered whole grain miso brown rice all natural ramen type noodles from Amazon and can’t wait to try it with that! Just remember--it's a very flexible recipe--easy to adjust to your own taste.


1- bag of chopped cabbage/carrot (coleslaw) salad mix
1- bag of broccoli slaw
2- 3 oz. packages of ramen noodles--crumble up--don’t cook
1 or 2 ramen seasoning packets--to taste(I used ‘oriental’ flavor)
½ cup sliced almonds
½ cup raw or roasted shelled sunflower seeds(I used roasted and rinsed the salt off first)
1/3 cup (more or less) balsamic, rice or other favorite vinegar
4 TBL (more or less)sugar, honey or equiv. amt of sugar substitute
4 TBL (more or less) good oil--light olive or safflower or canola


Just mix it all together and eat immediately and enjoy the extra crunch of the noodles or refrigerate and the noodles soften. Good either way!
