Energy Chili!

Well I found this recipe in a natural health magazine within an article singing the praises of coffee. Who would have thought to use coffee as a base for chili?

Black Bean Coffee Chili

Serves 4

Marinade:
2 cups strongly brewed French Roast coffee
4 oil-packed sundried tomatoes, chopped
2 cloves fresh garlic, finely minced
1 jalapeno pepper, finely minced
¼ red onion, finely diced
1 tbsp. hot sauce
8 ounces tempeh, cut into ¾-inch cubes

Chili:
2 cloves fresh garlic, thinly sliced
1 red onion, diced
2 tbsp. extra-virgin olive oil
1 can (32-oz.) diced tomatoes
2 serrano chilies, seeded, minced
1 can (15-oz.) black beans, rinsed and drained or 2 cups cooked black turtle beans

1. In a bowl, stir together the first six marinade ingredients. Add tempeh; toss to coat well. Cover and chill 30 minutes.

2. Meanwhile, in a large saucepan over medium heat, cook garlic and onion in oil for 3 minutes or until onion begins to turn translucent. Stir in tomatoes and chilies; bring to a simmer.

3. Stir in black beans, tempeh & remaining marinade. Cover; increase heat to medium-high, and bring to a boil. Reduce heat to low and cook 35 minutes, or until tender. Season to taste with salt and freshly ground black pepper.


Per serving: 329 calories, 13.7 grams fat (2.3 grams saturated), 34 grams carbs, 18.2 grams protein, 6.7 grams fiber, 675 mgs. sodium
