High Protein Vegan Stroganoff

10 Meatless Meatballs (we like the Trader Joe’s brand)
1 vegetable bouillon cube dissolved in 2 cups hot water
8 oz. canned mushrooms well-drained or 1 pound of fresh mushrooms
1 Tbsp. Worcestershire sauce
1 envelope dry onion soup mix (if the recipe seems too salty, cut this in half)
8 oz. plain soy yogurt

Lightly coat the skillet with cooking spray. Combine bouillon, mushrooms, Worcestershire sauce, dry onion soup mix. Stir and let it come to a boil. Reduce heat before stirring in plain soy yogurt and meatballs. Simmer on medium heat until sauce thickens. Serve over rice or noodles. Makes 2 large servings with 25 grams of protein per serving.

    Hi Leapyear--

    The Worcestershire sauce has anchovies in it so it is not a vegetarian or vegan item. I am a vegetarian but not vegan because i do eat some eggs, cheese, and milk. If a recipe calls for Worcestershire sauce i see if i can just add some parmesan to make up for the saltiness that you would get from the anchovies. I don't use the Worcestershire sauce. I looked up some vegetarian versions of Worcestershire sauce but they didn't appeal to me. Another main ingredient in Worcestershire sauce is tamarind. I have not looked for this at all though. Tamarind is a fruit and i don't know if it is sweet or tart. If it is sweet, maybe dates could work.

    You are so right! My vegan daughter pointed out the anchovies to me the first time I made this, but we were able to find vegan Worcestershire sauce at the health-food store and thought it was fine. It might have been Annie's Naturals brand.

    if you need something with a little "kick" - try Bragg's Liquid aminos - it's almost like soy sauce but without most of the salt. It is SOY, but hey my doc said just don't eat much - Like I don't eat tofu or soy protein powder anymore. Anyway, i figure at my age (58) if it hasn't killed me yet (like dented cans) I'll probably survive.
