Quick-n-easy sweet potatoes for side dish or snack

This is so easy to make, and tastes so good - and sweet potatoes are loaded with nutrients! I use this for a veggie side dish or just a little snack.

Take two cups chopped, or one of those bags of pre-chopped sweet potatoes (the latter makes it easier!). Toss with about 1 TB of olive oil, 2 tsp. rosemary, a dash of salt and fresh ground pepper to taste. (Gotta be fresh ground pepper - that pre-ground stuff is nothin'!)

Spread on a cookie sheet and place in a preheated 350 oven. Bake for 30 minutes, stir and turn after 15. This reheats well, too.
