Salmon burger dinner:
I bought a salmon burger (e.g. from Whole Foods, Fresh Direct, Lobster Place, Wild Edibles), dredged one side in pre-toasted sesame seeds and cooked, both sides.

Next to it, I julienned (while burger cooked) some cucumber and red pepper (you could add red onion) and drizzled over that some drops of sesame oil and some rice wine vinegar, added some lettuce.

Delish, and, needless to say, easy/fast. Possibly even healthful. Also pretty. I felt like Rachael Ray.

One could instead create a mango salsa/slaw instead of the veggie mixture I described. Maybe cut mango, cut jicama, cut bell peppers, cut hot peppers, some onion, some garlic, cut cucumber, squeeze of lime.

Pasta with shrimp fra diavolo
This was in a magazine for men so I figured it might be within my capabilities. My family liked this.

While dry pasta (either 8-12-16 oz) cooks, heat a large saute pan with 1 Tblsp olive oil. Add 2 med. yellow onion (chopped) long with 3-4 cloves minced garlic, 3-4 tsp red pepper flakes, 1/2 tsp dried oregano or thyme (or both).

When onions are soft, add one 28 oz can crushed tomatoes.

Add 12oz- 20 oz cleaned (defrosted from Trader Joe's or fresh) shrimp -continue to cook 3-4 minutes.

Serve this sauce over the drained pasta. Parsley optional. Salt and pepper optional. Side salad nice.
