Anyone use Summer Savory?- Stuffing

I've noticed that alot of people use sage in their stuffing.

Here in the Maritimes, alot of us use 'summer savory'

it is alot like sage only it has a softer texture to it.

here's my stuffing recipe. It's simple and good.

2 loaves of toast bread
2 onions
1 1/2 pouches of summer savory
3-4 medium sized potatos (peeled,cooked and mashed)
salt and pepper to taste

You know the drill.....break up bread, chop up onion. Mix everything together in a very large bowl. stuff turkey, chicken, etc...

This will make tons off dressing. You will probably have more than you need for the turkey. Just wrap the rest in tin foil(add some drippings from the turkey for flavour or some chicken cubes and a bit of butter)

Note: You can do all of this the night before for you who have to get up early to make your bird. Just DON'T add the onion until you'r ready to put it in the bird. (sometimes onion may 'sour' the dressing if it sits too long before it is being cooked).
