Stuffed Peppers ( 4 Large portions)

1.5-2 lbs ground Meatloaf mix ( I use a beef/pork mix but any ground meat will work)
1 egg
1/3 cup chopped onion
1/3 c flavored breadcrumbs
1/3 c special K cereal
1/2 c cooked rice
4 Green Peppers ( cut off tops high up)
I Large Jar Paul Newman's Sausage/Peppers Tomato Sauce
Combine first 6 ingredients, divide in 4 equal amounts and stuff the mixture into peppers . Pour a little bit tomato sauce into crockpot and place peppers upright next to one another, pour rest of tomato sauce over peppers. Cover and slow cook for 8 hrs
You can slow cook this in a regular pot on very low heat for several hours.
Serve with Green salad and Italian Bread if desired.

I wonder what other vegetable you can use with this delicious sounding filling. I can't do cooked peppers--they don't agree with me--but I love stuffed peppers. How about firm hollowed out tomatoes? Or maybe zuchinni(sp?)?

I have stuffed large cabbage leaves and rolled them up with this stuffing and they came out great too, the tomatoes and squash sound good but probably need to cook less time. Good Luck!

Just something I read. Ground beef is meant to be the worst kind of meat to eat for prevention of breast cancer as it is usually derived from dairy cows which are pumped up full of growth hormones. Pork is similar. I now eat the vegetrian version of stuffed peppers.
