    does anybody have any simple recipes for salmon? i used to eat it all the time until i guess i got sick of it. i went to a restaurant yesterday and ordered it cold with mustard dill sauce. it was simple and delicious. i used to bake it all the time, but i'd like to try something different.

    Have you ever tried salmon croquettes?  Delicious, and easy to make.

    I make them when I get tired of roasted or poached fish.  My whole family loves them, esp, since I rarely fry food.

    One lrg pouch of salmon, drained

    1 free range egg

    whole grain bread crumbs, enough to make the mixture hold together

    Mix ingredients and form croquettes in the palm (about 2.5 inch across, 1 inch thick) of your hand.  Heat about 1/2 inch of safflower oil in skillet on medium heat until a tiny piece dropped in sizzles.

    Place the croquettes in the oil about 3 minutes on each side.  Remove and drain on paper.  Serve over wild brown rice and with a side salad or spinach salad.

    Salmon is my favorite. I was going to suggest the mustard dill spread over it and baking, but you got there first.



    I mainly just eat it au-natural with some lemon. I find grilling preferred, and the freshest salmon always the best.



    I served it with a Mango Chutney once that was good. Let's see, hmm:



    one or two good size, fresh mango's, cut into small eatible bites

    one or two green onions, diced very small

    two ripe plum tomatoes, diced small

    a small amount of typical vinagrette

    1 table spoon either dill or basil, fresh, and cut very small

    tiny amount of salt, some pepper

    Mix all ingrediants, and chill well.



    Broil, grill salmon; serve chutney on side.



    Ummm!

    When I'm in a really big hurry I will boil it in lemon juice with dill weed. Nothing spectacular about it,tastes good, healthy and it's very quick if you're in a hurry.

    I'm not a big mustard fan but I recently discovered how fabulous it is with salmon!  I like this recipe from Ina Garten

    I bake salmon with cajun seasoning, butter and lemon juice.  It is fantastic (if you like cajun!)

    Ummm, this is making me seriously hungry. Don't know why I never thought of cajun seasoning, jelly-donut.



    Got that, now I need to just go fishing!

    While we're all thinking of salmon, I thought I'd bring this to your attention so we can keep eating it in the future.  I hope you all are only buying wild caught salmon.

    When an outdoor grille is not available, what does everyone use?  Their oven broiler, a George F. grille, other appliance?  My dh HATES me to cook fish in the house because of the lingering odor.

    Thanks, Rosemary for posting that. I try to buy wild salmon, although the cost and the taste are two avoidants. Yet I've always hated the idea of farmed salmon, as problems arise (like sea lice in the article) when fish are so heavily grouped). Plus they add all those color additives.



    How sad that even fish are being fished out of our oceans.Sad too, because some are tasty and healthy for we humans. Our food chain issues are becoming major issues, especially on a breast cancer diet.



    Tina, we usually broil with the vents on but at times I am nausous from the lingering odor. Ever since chemo it doesn't take much to remember.

    Here's one that's different, easy, delicious:

    SALMON ONE-POT MEAL

    In a large pot with a small amount of water, layer (in this order):

    POTATOES (I use red potatoes), cut in chunks 

    CARROTS, peeled and cut in chunks

    LEEKS, well washed and cut in one-inch chunks

    Bring the water to a boil, cover and cook for 10 minutes.

    Add well-washed

    KALE (or you can use other greens, if you prefer)

    Cover again and cook for 5 minutes.

    Lay SALMON pieces on top of the kale. Cover and cook for another 8 minutes, or until done. (Don't overcook.)

    Remove the salmon and vegetables to a platter. To the water remaining in the pot add a tablespoon or two of mustard. Stir well. Pour over fish and/or vegetables to serve.

    Mix 1/4 C of Mayonnaise and 3 T (or so) of Pesto Sauce together and put on top of your salmon during the last minute of baking or broiling.  Top with Parmesan Cheese.  Smile

    I just use a dry rub of some sort (lots to choose from at Penzy's--they're on line), then I spray a little olive oil in a nonstick pan, and sear the salmon on both sides. Only a few minutes per side. Nothing worse than over cooked salmon!

    I only eat the wild salmon. I buy a bag of individually wrapped and frozen filets at Costco. They are really good. And I don't notice a lingering fishy smell after a quick pan searing.

    I discovered a recipe using steel head trout and have also used it with salmon....place salmon/trout on a sprayed roasting pan....slather tops with a tsp or so of Basil Pesto sauce ( jar or make your own) and drizzle olive oil over all...broil till done usually 6-7 minutes..delicious ( steel head trout ..if u are not aware looks very similar to salmon..I just recently discovered it myself )

    i just had the worst salmon (and scallops) that i ever had. we took my boyfriend's daughter to bugaboo creek for her birthday, and the way they described the salmon and scallops on the menu made it sound really good. the scallops were literally raw and the salmon was tasteless. so the moral of the story is if at bugaboo creek stick with the onion blossom.
