Thank you so much for the recipe!! I just printed it out here at work..(teehee). I will definately make it. Funny, I brought a turkey sandwich(I don't mind the honey roasted turkey breast) and a bowl of Progresso lentil soup for lunch today.
I think your recipe for the meatloaf sounds good. I love spicy Monterey jack cheese. I love spicy period!!

Yum!!!! I love lentil soup! I often make Spinach Lentil Tortellini soup. Much the same as your recipe, Bay. Seems lately we have been having more traditional fare, just low fat versions, homemade. I cook everything from scratch (no hydrogenated fats, soybean oil, msg or other ingredients we really don't want!). Last night was comfort food...chicken pot pie, salad, rolls, my kids ate and ate!! Even if we have pizza, I make my own dough, and no pepperoni, etc. I just wish when I put salmon, steamed broccoli and brown rice on the table everyone would cheer with glee, but it's not gonna happen! I keep trying!!!!!
They do eat salmon...salmon quesadillas with homemade guacamole is also a big hit! Think that will be dinner for tonight!!!

Not to override Bay, as it is her recipe...but when I make my spinach lentil tortellini soup, I use fresh spinach...though I put it in at the very end of the simmering time for the soup.

Hi Lisa, sure, I have no idea how much to recommend since it cooks down so much--I've done it once or twice and I just keep adding it until it looks right to me. I just always have frozen spinach handy and fresh spinach gets eaten raw
Annie, I have always been a from scratch cook though I have to say I am usually tired since I started tamox and beta blockers so I look for shortcuts that don't compromise health.
I would love to know your pizza dough recipe if you want to share!
Last night, family had leftover lentil soup and sweet potatoes and I wound up having vegetable sushi rolls with pickled ginger.

It's been a hectic couple of days and hard to keep up with posts. Last night I got home from work at 8pm (don't pity me too much, I went to work at 4). Had leftover minestrone soup- cranberry beans, ww pasta spirals, organic vegs, heavy on kale and italian seasonings- and whole grain basil parmesan bread w/1 t organic butter (yum!). I never tire of soups for dinner- mine are usually more like stews.
Today is a day off and I think it's time for another round of cooking ahead. Maybe time for some Indian dishes- Saag Aloo and Dal with Rice and Vegetables. Believe it or not Weight Watchers "Take Out Tonight" cookbook has some healthy and very authentic spins on traditional ethnic dishes, including these two. Allyson

Thanks Allyson, I'll look up that book. I love ethnic foods and just would love to try my hand at some Indian dishes. I had a wonderful Indian friend in grade school and still remember the wonderful tastes of the foods I ate at her house.
I had salmon in the fridge all ready to cook and then my brother stops by with pizza from the best pizza place in the area. Ahhhhhhhhh....no willpower....good thing I ate pretty healthy the rest of the day!

Hi GIrls! I made this recipe and I thought I would share it here because it's a low fat, low calorie recipe and my family really liked it tonight! I am not sure where I got it but I know it originally came from Better Homes and Gardens: Here it is: (PS--it makes a bunch, and I had more stuffing than peppers to stuff so if you don't get really big peppers, get 6 insteand of five!!!)
Chicken-and-Rice-Stuffed Peppers
By : BH&G Low Cal, Low Fat Recipes
6 or 5 Points* per serving
1 tablespoon margarine or butter
1/2 cup finely chopped celery
1 10 3/4 oz. c condensed cream of mushroom soup
1 cup water or chicken broth
1 envelope single-serving-size instant onion soup mix -- about 1 tablespoon
4 cups cooked chicken -- cubed (I just got a roitesserie chicken from the grocery store, already cooked and shredded the meat )
3 cups hot cooked rice (I used rice a roni and it was good but maybe made it too salty overall!!)
6 large green sweet peppers -- 8 ounces each
1 teaspoon lemon-pepper seasoning
1 1/4 cups shredded cheddar cheese(5 ounces)
MELT margarine or butter in a large saucepan over medium heat. Add celery and cook about 5 minutes or till tender. STIR in condensed mushroom soup, water or broth, and onion soup mix. Heat till bubbly. Stir in chicken; heat through. Stir in rice; remove from heat.
TO ASSEMBLE, halve peppers length-wise; remove stems, seeds, and membranes. Place pepper halves, cut sides up, in a large shallow baking or roasting pan. Divide chicken mixture among the pepper halves. Sprinkle with lemon-pepper seasoning. Cover and refrigerate up to 24 hours.
TO SERVE, bake peppers, loosely covered with foil, in a 350º oven about 55 minutes or till heated through. Top with cheese and pimiento. Bake, uncovered, about 5 minutes more or till cheese is just melted.
Makes 10 servings.
Per Serving: 285 Cal, 11g Total Fat(5g Sat Fat), 70mg Choles, 743mg Sod, 21g Carbo, 1g Fiber, 23g Pro. Food Exchanges: 1/2 Veg, 1 Starch, 3 Meat, 1 Fat.
*NOTE: Substitute low-fat cheddar cheese for cheddar cheese and cut to 5 POINTS. -
I love stuffed cabbage but hate rolling them all up, this is something I'll have to try this weekend!!

I'm making vegetarian enchiladas tonight. Our healthier eating is just about to do my DH in! Now if I can just get him to stay away from the GS cookies for dessert! When he breaks them out, I always seem to have a couple.
The new 100 calorie CinnaSpins are pretty good, but DH prefers the too tempting Caramel Delights.

Tonight's clean out the fridge night~lol! We have leftover lentil soup, turkey sauage vegetable soup, low fat mac and cheese made with whole wheat pasta, salad and quick vegetable bread. For sweets, there's leftover low fat rice pudding and light ice cream and a lightly cooked lightly sweetened berry compote
Try to keep eating as healthy as you can, my friends. It's not a guarantee(I've always eaten healthy--grew up eating healthy and continued) but you'll heal better, reduce risk of recurrence, feel better, look better...Love ya!

It's been awhile. Trying to catch up with all of you fine ladies (cooks)! I am getting the ingredients to make the lentil soup Bay! I will make it within the next week or so, and keep some in the freezer, so that I have it when I am down for 3-4 weeks from my surgery on Feb. 4th. Trying to prepare some meals ahead of time.
Tonight...well, my 16yr olds fav is Tuna Noodle Casserole...so that is what we are having. Along with non-sweetened applesauce with cinnamon, and fresh (either) broccoli or asparagus.

I know Lisa, me too. It stinks. I can't understand it myself really. I've struggled with the unfairness of it often in the past year and a half. But then I think to myself...I really enjoy how I feel when I eat healthy...people always said I looked a lot younger than my years...I never had to battle with my weight..I heal well...Plus I like the taste of quality foods better than junk so there really is no negative except it does require more thought and effort.
My surgeons said to me that my BC probably would have been much worse if I hadn't taken care of myself--so when I'm feeling particularly annoyed by it all, I pull that thought out and let it comfort me.

Very true. I am trying to lose weight now. I think with my age, it's been much more of a struggle. I am not allways "good", but for the most part I eat well, healthy. I agree, that I feel so much better. I could never be a junk food junkie...I wouldn't be able to handle not feeling well.
I think part of my getting through chemo, working and actually handling it all well, had to do with the way I have taken care of myself....and there is comfort in that.
Now, I hope that all my running and eating healthy, help me to heal quickly and get back to work and running quicker than they (docs) say, after this surgery!!

The junkiest eating time for me was chemo--I ate the crappiest stuff, and I gained 30 lbs. I had the weirdest and strongest cravings--felt like I was constantly grazing to settle my stomach and get the hideous taste out of my mouth and tamp down the heartburn...blech
I lost 20+ lbs since them, but still need to lose the rest. I'm not thin now, never have been----but I never have had the serious weight issues that I see my cousin and other friends struggling with. I think with menopause thrust upon me, it'll be more difficult if I'm not careful.
Running...many think it's a negative that implants don't move naturally but I never was a runner because my chest was so big, it was uncomfortable with all that flopping around and sports bras felt like a straight jacket.... Lately I've noticed when I take off running around with Dash, it feels great. These babies don't budge! I just might take up running, too! LOL
What surgery do you have coming up? I took grapeseed extract after my last 2 surgeries. It's supposed to help wound healing along with other supplements that I can't remember this moment. Anyhow, it's another thing I just have to have faith in its ability to make a difference.

Bay- I can't even imagine you eating junk food. You know it is so weird but I did not get a taste in my mouth from chemo or weird cravings except maybe a little bit for kalamata olives. Seems like I got off easy. Dinner tonight is the other half of the salmon I got for lunch out- fabulous- probably due to the extra fat content- yum! I am also going to have a mountain of vegetables to make up for the ones I didn't eat during the day- so far have only had dried cranberries, an apple, and a few green beans. I've been back to running mixed with walking- so far so good as far as injuries not coming back. Allyson

Bay, I have my reconstruction surgery on 2/4/08. Tram flap. So I will be layed up for awhile.

Ooo, Lisa, big surgery and soon too. Somehow I missed that. Are you all set for your recovery time? Someone to help you out, make meals, etc? What was your comfort food, what kind of veggies? I need details, girls, details!

Hmm- not sure this will inspire you- I ate an organic carrot w/ red pepper hommus and big bowl of baby romaine with broccoli sprouts and Annie's LF Raspberry Vinagette. The goal was just to throw something quick together and eat those vegs. I do recommend the Annie's dressing- a lot of LF dressings are not so appealling and/or are made with soybean oil which I prefer not to eat. All of Annie's LF dressings taste great and are made with healthy oils and other quality ingredients. Allyson

I made the unstuffed cabbage from the recipe posted here and it was very good... I didn't have crushed tomatoes so I used diced tomatoes instead .... also didn't have white vinegar so I used rice vinegar ... thank you for sharing the recipe!
this weekend I'm planning to make sushi ... I've never made it before but have been wanting to ... I've got the seaweed, the sushi rice (and a good recipe for the rice), ingredients to put in side (crab, carrots, cucumber, avacado, etc. I've also got the bamboo mat to roll the sushi with ... wish me luck!

I was out at a restaurant and ordered spinach as a side figuring it would be just some boiled spinach w/no flavor, and all the nutrients boiled out. Was I ever wrong.
Here's the recipe:
fresh spinach
garlic, chopped small
pine nuts
raisins
2 tbls olive oil
Saute' in evoo: garlic, pine nuts and raisins and then add the spinach and toss lightly for 1 minute or so.

I have just over a week till my big surgery!! I do have help coming in. My very dear lifetime friend (we started off in the playpen together) of 48 yrs, who went with me to every chemo visit, is going to come to my house and help me the first week. I have made up some meals and froze them. I am going to make a big pot of the lentil soup recipe you gave me. So, yes I will have help, thank goodness!

Lisa, yes you did post it already...sorry! I haven't made that for a long time, that's something to keep in mind. You're very lucky to have a friend like that(it sounds like you already know that!:)) I hope you enjoy the lentil soup--it should look and taste pretty much like the progresso.

Doreen--how did the sushi turn out? I held a package of Nori at the food store today trying to decide if I wanted to give it a try but I put it back and will wait until I have more info. I love, love, love veggie sushi.
Allyson, yes it did help actually--lol. I've been in a real spinach rut. And you telling me about the broccoli sprouts was actually very timely since I had a bottle of broccoli sprouting seeds in my iherb shopping cart...I wasn't sure I wanted the additional work but now I'll take it as a sign that you mentioned it and get them.
Well, I made the turkey sausage soup again due to requests but after it was made, I ladled some in a smaller pot and added some frozen shrimp, more red pepper and some sauteed portabella and crimini shrooms for me. I ate that with rosmary's spinach. Cup of white tea.
You'd think all this healthy food would make me invulnerable to colds but I have a bad one--all cloggy and painful nose, ears, throat....

I'm glad you enjoyed the spinach recipe. That side dish was better than my meal.
I have a potato, cabbage, parsnip soup recipe, there's no calories in it. My friend sent it to me, and it's really full of nutrients.
3 cups unpeeled russet potatoes, (I cut them into chunks)
2 cups chopped carrots
1 half of small cabbage sliced long
2 cups of peeled chopped parsnips
1 large onion sliced long and thick
1/2 tsp. thyme
½ tsp. Sage
½ tsp. basil
2 bay leaf
1/2 tsp. salt
1/4 tsp. pepper or more
1 cup lo-fat milk
1 can progresso tomato & basil soup
enough water to slightly cover veggies in pot
Sour cream to dollop on top of soup when served.
1. You'll need a large pot
2. Add potatoes, onion, carrots, cabbage, parsnips, and all seasonings to pot, add water to just cover or a little less.
3. Bring soup to a boil & simmer, about 45 min. or until vegetables are tender
4. Then add milk & tomato soup & heat gently until soup is heated through.
Serve and add the dollop of sour cream to the bowl.
Ok, there's a few calories. Taste it after 10 mins of cooking I might be low on the seasonings.

Bay: I haven't made the sushi yet!! I bought everything I needed last weekend .. but the weather turned really cold and snowy and I've wanted to have hot meals... I'm really going to give the sushi a try today though ... I'll let you know how it turns out ... I've got recommended recipes for the sushi rice and links to some good combinations for the sushi ...

We had, top round steak with a mixture of a-1 sauce and fresh garlic, ground pepper and olive oil on top. Sweet potatoes with a little butter and cinnamon (baked) and fresh asparagus with balsamic vinegrette, and seasonings drizzled on top.
Filled me up!!

OK...have had 'comfort' foods for dinner...tuna noodle casserole (whole wheat noodles and low fat version recipe)....chicken potpie (both with good salads)....made Kale Bean soup in crockpot yesterday served with whole grain rolls....kids would not touch it....hubby and I both liked it. Easy recipe....4 chopped onions, 2 chopped carrots, 1 bunch kale, 4 cloves garlic (all lightly sauteed), 1 lb. cannellini beans, 1/4 tsp. red pepper, 1 qt. chicken broth or vegetable broth, 1/4 c. tomato sauce added in at the end of cooking time. Salt and pepper to taste. I LOVE soups, just wish my kids would be more open to trying them!

If you go look at the dip recipe thread you can see the one for the healthy artichoke dip.
I am going to try using the dip as a filling for my boneless, skinless chicken breasts.
Pound out the chicken breasts. Then put finely chopped walnuts, pine nuts or cashews on the chicken breasts. Then put avocado or asparagus and then roll them shut ... instead of toothpicks I use one or two pieces of turkey bacon to hold them shut (My unhealthy recipe uses real bacon and more pieces and they look like mini footballs!) I will use this dip instead of the avocado .... I might even eliminate most of the nuts since the chicken is enough protein .. but a few is good for the crunch.

Yumm... I made the spinach with garlic, raisins and pine nuts tonight and that's all I had for dinner ... it was delicious and soooo easy !!!
Thanks for sharing the ingredients - I'd never think to put raisins w/ spinach and garlic ... I'll definitely make that again.
I still haven't made the sushi ... it's been really cold and snowy and just hasn't been what I've wanted to eat ...
The past few days I've been eating bean soup (15 types) w/ ham, onion and celery ... hits the spot when I want something warm and filling ..

I have leftover braised lamb shanks for dinner. Going to add some brown rice for the sauce, and a side of that fabulous sounding spinach. If I don't have raisins, I'll try dried cranberries or tart cherries.
