Cooking Terms Let's Leave Behind in 2007
December 19, 2007

1. Dressing

It's not dressing, it's stuffing.
Get it? It gets stuffed in the bird. That why it's called stuff-ing. Even if you don't use it to stuff, you're not 'dressing' the bird. The mere mention of the word 'dressing' makes me wince down to my you-know-what. (It's even hard for me to type.)

If you want further proof, it's Stove-Top 'Stuffing' Mix, not 'Dressing' mix. I don't care what the dictionary says. Don't argue with me. Or Kraft.

Ok, you can call Kraft on it. But not me. I'm too thin-skinned.

2. Veggies

Perhaps the worst offender. They're vegetables, my friends. If you're too lazy to pronounce two extra, teeny-tiny syllables, all hope for humanity is lost. You deserve to read about the mindless antics of Britney and Paris for the next decade.

And I don't mean my mindless antics in Brittany, or Paris.

3. Combine

The jury's still in recess on this one.

Judith Jones swears this word means nothing, but I beg to differ. 'Combine' means to incorporate two or more ingredients. To merge them. If I say "Combine the oats and cranberries with your hands", I think most people would get the drift.

Still, who am I to argue with Julia Child's editor. I've ditched it a while ago, so let's leave it behind us once and for all, shall we?

4. Sammies

I have nothing against Rachel Ray. Really. She's as cute and perky as all get-out. And she can smile non-stop for far longer than I'm capable of doing. I don't mind those other words like 'evoo' or whatever she says.

But I can't get this friggin' word out of my head!

It's been a couple of years now and it's really the stupidest word used in relation to food ever. I just can't shake it!
Please, make those voices in my head stop....aarrgghh.....

5. Seasonal

I'm guilty of this as well. But it's been so overused, it's as tired as those endless post-Presidential debate discussions on the cable networks, discussing the same stupid stuff over and over and over and over. I was back in the US for less than 48 hours and I had it up to my neck and ending up watching Blind Date and transfied on I Love New York 2 on VH1 for two days, which, surprisingly, was far more interesting.
(Which perhaps says something about me...)

Anyhow. I've had raspberries served to me in 'seasonally-inspired' restaurants...in New York...in January. And who really wants all that asparagus in the winter from Argentina—unless, of course, you live in Argentina? If people haven't gotten the message to cook seasonally by now, it's a lost cause, folks. Let's drop it. I'm going to give it a try. If I use the word 'seasonal' again around here, next time, you can call me on it. After you call Kraft, that is.

Any others I missed?

Someone  posted a comment after the article that they disliked the expression "pairing" a taste with another taste.  That bothers me too but even worse is,  two flavors "marrying well."  uuuuugggghhh!!!

and how about "Yum-o" (from you-know-who).  Gag......

I'm not happy with "architectural" food either (that is, the term or the tall food itself)....piling up one food on another food like a food stack.

    Barb,

I agree with you-- i like Rachel Ray too but some of the things she says makes me squirm.

    BTW, what is "stoup"?

If she makes you squirm now--Just wait till they expand her time on the

food network even more with Rachael Rays vacations.

They have gotten rid of Molto Mario except for his appearances on Iron Chef, and Emeril because they want to go in a "new direction".

I wonder how long Alton Brown will remain?

I wonder what is considered bad about Mario Batali?? He is a prestigious chef with a big following.  I thought that Emeril had a conflict with his contract (wanted more money) and that is why they are stopping his show.

Alton Brown is great and so funny.  I hope they do NOT get rid of him too.  I can live without Emeril, tho my hubby likes him and learned to cook because of Emeril.

If Rachel Ray is the "new direction" I will hate that.  She seems nice but i can't stand listening to her and she does dumb down cooking.  I think she is way over-exposed now with all of her shows and re-runs.

Bobby Flay is kind of a chump.  I ate in the Mesa Grill in NYC and it is way, way over-rated, IMO.

I would much rather watch Anthony Bourdain on the travel channel but unfortunately he does eat all kinds of disgusting stuff......makes me nauseated to even think about.

Jamie is coming back with a new series and i am looking forward to it.  I miss the Two Fat Ladies.

Mario Batali said in the NYT

Still, Mr. Batali said, “They don’t need me. They have decided they are mass market and they are going after the Wal-Mart crowd,” which he said was “a smart business decision. So they don’t need someone who uses polysyllabic words from other languages.”

    Doesn't that say it all.

Glad Jamie will be back---I like him.  I bought his Italian Cookbook recently---very good!

I also like Gordon Ramsay on the BBC channel---Kitchen nightmares; and on Fox he has Hell's kitchen---keeps it lively!

    --------------------------------------

    Adding to the list---

What the heck is "All Natural" ?  I see that on one more label I'll scream!

Mario is right that they are going for the "Walmart" crowd, and that is a shame too.  I loved it when the Food Channel was mostly about cooking as an art form and about the NY food scene.

I just can't take much more of the dumbing down direction---i feel that at any moment one of the newer Food Channel people (or maybe even Rachel Ray, or Sandra Lee) will pull out the "Hamburger Helper" to cook on their show.

"All Natural"--isn't that naked?  hehehehe.......oops I guess that is "Au Naturale"......

What are "sammies"? I don't watch Rachel Ray because she irritates me. Seems to enjoy her own cuteness just a tad too much, IMO.

How about "fusion" food? I adore it, but it seems a little overused when describing any combination of food types. I guess we need some word for it though.....?

Sammies are sandwiches.  I guess when you are about four years old!  IMHO - Rachel makes everything she cooks more difficult than it needs to be and wastes alot of time.  If I have to watch her chop another onion or clove of garlic . . . well. . .!  I used to love her in her earlier days because she talked about her Mom alot.

My favorites:  Barefoot Contessa - simple, lovely food that is easy to prepare.  Everyday Italian - same thing - simple ingredients, easy to prepare.  And you don't have to actually watch them chopping the onions and garlic - after all - we all know how to do that!

And I love Good Eats!  Lots of good imfo on that show.

Marin, I agree with you. Rachel Ray makes me crazy---would it kill her to take another few steps for supplies, instead of trying to carry the whole kitchen in one !!! ??

This thread prompted me to give ole Rachel another shot, so I watched her show the other day when Helen Mirren was the guest. Yup, she really aggravates me. I was so eager to hear what Helen M. had to say, but RR kept asking questions, giving HM about 3 seconds ro reply and then inevitably interrupted and launched into her own observations. Geeeeez.

A good show to watch is Healthy Eating with Ellie Krieger or Kreiger.  I think that's the name of it.

Her recipes are easy and nutritional, I keep hoping one of these days she'll motivate me.....

Anyone want a show on the Food Network?---this is funny!

Food Network Chef Sacked in Disgrace

    Monday, March 3, 2008

"Top Chef Robert Irvine who for a number of years had a show on the food network called Dinner:Impossible has just been sacked in disgrace for lying about his CV. In one of the funniest and brazen episodes in celebrity chef history he basically made his whole CV up and blagged his way on to the biggest food network in the world! Among some of his most outlandish claims that have since been exposed as tall tales are...

-Claiming he made the cake for the Prince and princess of Wales at their wedding.

-Claimed he was given a knighthood for his services

-Cooked for a series of US presidents

He made a career out of all these lies and the tall tales had grown so much over the years that he ended up writing his own autobiography and even launching a company producing merchandise bearing his name. Now I really must saw this is one of the funniest stories to come out of the cooking world in a long time and to be honest with you he deserves the career he has had! Anybody that good at the bullshit deserves a job on TV and the fact that nobody in the states even bothered to check up on a little thing like a knighthood is something I find hilarious! "

I always laugh when I hear the term "melange" used to describe a mixture of some kind.  It reminds me of a story my ex use to tell about going into a 7-11 late one night and asking the screamingly gay clerk what flavors Slurppy they had. He replied "Oh, we put the little leftover bits all together and now it's melange" (as if that was a flavor).
