Microwave Baked Apple

I got this recipe fro a local orchard many years ago.  Great for a snack or a breakfast treat with a bowl of oatmeal.   Eat the skin, it has many health benefits. 

1 large baking apple
2 Tbsp chopped walnuts (optional)
1/4 cup apple cider or unsweetened apple juice
1 tsp lemon juice
1/2 tsp vanilla
cinnamon

Core the apple. Place in a small microwave-proof bowl and fill hole with walnuts. Sprinkle with cider, lemon juice, vanilla, and cinnamon. Wrap bowl in wax paper and microwave on high for 3 minutes. Let stand, covered, 5 minutes.

    Sounds awesome and such a great treat for the season! With still-hot temps here in the South, I need something to remind me of the time of year!

    Dear Towanda,

    It sounds great but I would prefer to bake this in the oven as it is healthier than using a microwave.  Cancer patients are advised to stop using microwaves because there are concerns over radiation and there is also proof that it destroys the nutrients in food.

    I have a question for you food mavens out there...what, exactly, is  a "baking" apple? Particular varieties? One you happen to prefer and want to bake? I'm planning an apple-baking dish for Thanksgiving and realized that I just don't know what apples to use!

    Also, does anyone have a not-too-fattening recipe for apple crisp or any baked, sliced, cinnamon-y apple dessert?

    Marin, I use Granny Smith Apples for baking!

    This Sounds Very Yummie, and easy to do and fast!!!

    Granny Smith mixed with Golden Delicious is a great combo, a mix of sweet and tart.  Other good apples for baking: Jonathan and Rome are sweet; Macoun and IdaRed are tart.  Don't use Macintosh, they melt.
