I am working on getting more vegetables inside of me (not just buying them) and would love to hear your tips. For me, it takes planning ahead and has to be easy so I will actually get it done. Here are two things that are helping me.
1. I bought a huge 4-quart Pyrex salad bowl with a lid and make salad in the evening. Then I eat as much as I can for breakfast to make sure I get some veggies in before the day runs away from me. I put in canned beans to get protein at the same time (black beans or chick peas). Other ingredients include baby spinach or mixed greens (organic, pre-washed), cherry tomatoes, fermented red sauerkraut or beets, shredded carrots, pine nuts, BroccoSprouts.
2. I juice veggies.
I don't do these every day so more easy tips would be much appreciated!!

* Keep raw, cut-up veggies that you really like in a covered container in the fridge to just grab handfuls whenever.
* Save the liquid leftover from steaming fresh veggies and use in other recipes that call for water or broth.
* Puree cooked veggies and add to meat loaf or pasta sauces as fillers.
* Zucchini bread?

Roasted veggies are the best! Roasting totally changes the flavor of veggies, and gives them a great texture too.
For example, cut up a head of cauliflower into small florets, toss with olive oil and a little salt, spread on a foil-lined cookie sheet, and roast in the oven along with your meat or chicken - any temp between 350 and 400 will work - turning once or twice to brown on all sides.
Roasted asparagus or Brussels sprouts are my favorites!

Juicing is good except you don't get the fiber. One can use the pulp in cooking or on top of salads. I also supplement with a barley green powder which is basically a vegetable infusion. Dr. Hagiwarra's is fantastic and I noticed I started feeling great on it.
