Tomato Basil Sauce (Al Fresco)

After spending a few weeks in Italy this summer, my hubby and I are still trying to re-create those precious memories.
Now that tomatoes are at their peek we have been enjoying this marvelous sauce that my MIL makes.

4 or 5 medium sized fresh tomatoes (quartered)
1/2 c. extra virgin olive oil
1 c fresh basil
1 clove garlic
salt and pepper to taste

No cooking involved, just blend in a food processor or blender and pour it over hot linguini or any pasta of your choice and top it off with a little Pecorino Romano cheese. We had ours with a side of grilled baby eggplant, some crusty italian bread and a glass of red wine...mama mia now were talkin memories!!

    yum. Thank you. I'm looking for good things to prepare and freeze for my reconstruction recovery period. I'm trying to stay on my diet and my wonderful, thoughtful, lovely, generous co-workers made me some great food for my mastectomy recovery, but it was mostly off the diet. I ate it, of course, so now I'm trying to get back to the healthy stuff.

    Your recipe sounds perfect.

    Ciaoooooo! Yes, the Italians are skilled in the simplicity of food and flavor.



    I shopped this week for some lunch .... a couple of small egg plants, some mozzerella (smoked) from the markets at Civitivecchia, some fresh tomatoes and oregano dried from my balcony garden.



    drizzle olive oil in a glass dish

    slice the egg plant and layer in a baking dish ...

    slice the tomatoes and layer on the egg plant ...

    slice the mozerello and layer on top of all ....

    sprinkle oregano and parma cheese on top ....



    bake for about 30 minutes in medium heat oven ... or until brown on top ....



    serve with fresh sliced crusted italian bread ... and with water ... or karkada tea ... or white wine



    good for lunch.... buono per pranzo!!!

    I have every single ingredient in the house. Even the fresh basil! I just needed a way to put them all together easily. Thanks! Smile
