Sierra, I get emails in from vitalchoice.com. They always seem to add new salmon recipes in it.

I have a great recipe for Salmon Oat Patties from the First Place cookbook

    SALMON OAT PATTIES
    Each serving amount: 2 patties
dietary exchanges 2 meat 1/2 bread
chol: 38 mg Carbo 13 gm Fat 7 gm
    Calories 165 Protein 23 gm Fiber 1 g
    Sodium 501 mg

    INGREDIENTS:
    1 (15 1/2 oz) can pink salmon
    1 small sweet onion, chopped
    2 egg whites
    1/2 C quick cooking oatmeal
    non stick spray

    Steps in preparation:
    1. Preheat oven to 375 degrees.
    2. Drain salmon and remove any large bones or skin
    3. In medium mixing bowl, flake salmon and add chopped
onion, egg whites, and oatmeal. Mix well; divide and form into 8 patties.
    4. Spray non-stick spray on baking sheet. Place patties on sheet.
    5. Bake at 375 degrees for 10-12 minutes on each side.

    Serves 4

You probably could form into a loaf and bake but I am not sure how long to bake it.
