Oh I LOVE to cook over a campfire!! We went for 5 days about 3 weeks ago and had a great time .lets see favorites
For breakfast we do baggie omelets Before I leave home I chop green pepper, onions, ham and mushrooms and put them all in those disposable Ziploc bowls. Each person breaks 2 or 3 eggs into quart sized freezer Ziploc bag. Close the bag and smoosh the raw eggs to mix them up. Add shredded cheese and any of the chopped goodies you like. Meanwhile you need to get water simmering over the grill of the fire. You can use any type of big pot. I use a disposable aluminum baking pan no washing up that way Once the water is at a slow simmer, squeeze all the air out of your bag and drop it in the simmering water. It will be cooked in about 10 minutes. DO NOT BOIL THE WATER HARD! It will make the bags open up and make a mess. When the omelet is cooked, roll it out of the bag onto your plate and eat no pans too wash
We love to use the pie-irons like these

Heat for a second over the fire and then melt butter in both sides, then make any type of a toasted sandwich you like ham and cheese. We also use the irons to make yummy deserts. Spray with pam, Use Pillsbury crescent roll dough for the crust, patted flat in both sides of the iron. You can fill the center of the pie with canned pie filling, broken chocolate bars or our most recent favorite: premade Cheesecake filling (sold in the refrigerator case, made by Philadelphia cream cheese). My favorite combo is cherry pie filling, a few chunks of Hershey bar and a big spoonful of cheesecake filling. Cook the pie over low coals until the dough is nicely browned. Pop onto a paper plate and top with powdered sugar YUM
I also have used a bunch of recipes from this site http://camprecipes.com/ We especially like Hobo dinners.
Oh, and this time we made gourmet smores .we used Lorna Doone shortbread cookies and chocolate wafer cookies. For candy we used Andys mint chocolates, Caramello bars and peanut butter cup. The marshmallows melted it all nicely
Have fun -
I'm a hot cereal person for camping breakfasts.
A lot depends on whether you're in your car minutes from a grocery, or backpacked in a few miles and carrying everything. We usually do the car type, so it's much more luxurious.
I'm big on wrapping things up in tin foil. Cut up chicken breasts with squash/onions/tomato and a bit of salad dressing over the top wrapped in tin foil and then over the grill.
Otherwise my cousin and I who have 4 boys between us have been known to do the hot dog/canned beans thing or go for macaroni-type dinners where all it takes it boiled water. If you're sick of hot dogs try sausage - it's snazzier and just as easy to cook.
I am going at the end of the month and will be putting those gourmet 'smores on my shopping list! -
Thanks for all the ideas. I had no idea that there was a website devoted to just this question. And I too am definately trying those gourmet smores.

Gwen, you might get some more ideas if you google girl/boy scout camping menus. I've done that before and was surprised at what you can cook. Lisa

Gwen, I left you a message on the other thread about camping and vacations.

When we were canoe camping we came up with some fun "just add water" ideas. We were also able to carry a little more than if all the carrying is on your back so we even brought eggs!
Those tubes of pesto and tomato sauce with a little grated cheese makes for a good pasta. Felafel mix. I think we made a berry pie one night with berries we found at one of the camp sites.
If you're camping at a drive-in place you can make whatever you'd make at home, right?
