Vegetarian Bean Burgers (not vegan)

Makes 4 servings
Serving size: 1 burger
Prep time: 20 minutes
Cooking time: 40 minutes

1 15 oz. can of chickpeas (garbanzo beans), drained and mashed*
½ cup red onion, finely minced*
2 celery stalks, finely minced*
1 carrot, finely diced*
1 garlic clove, finely minced*
1 cup plain breadcrumbs
2 Tbsp minced parsley*
1 Tbsp Dijon mustard
1 egg white
2 tsp Worcestershire sauce (optional--not vegetarian, contains anchovies)
2 tsp olive oil
½ tsp dried thyme
½ tsp dried oregano
salt and pepper to taste
1 Tbsp nonfat mayonnaise or ketchup

*instead of mincing, dicing,or mashing, just combine ingredients for the food processor and pulse.(all ingredients except the last one)

Preheat oven to 350 degrees F.

Combine all ingredients (except for the mayonnaise or ketchup). Pulse in the food processor till you get the texture you want: chunky or smoother. Shape into patties.

Spray a large baking sheet with cooking spray. Place the patties on the baking sheet and cover with foil. Bake for 30 minutes.

Uncover and bake an additional 5 to 10 minutes more until well browned. Spread each burger with either the mayonnaise or ketchup, and serve on whole-grain buns or inside a whole wheat pita pocket (with lettuce, tomatoes, sliced cucumbers, or alfalfa sprouts,etc).
