    Thank goodness I'm premenopausal 'cuz I love my BBQ.

    If you marinate your meat before grilling, it brings down the HCA level to almost nothing.

    Well yes, but here in the South (and I'm not even a native but have been here for 20 yrs), it's all about loyalty to your favorite BBQ house. People come close to blows over their allegiances! I must confess that I haven't eaten red meat or pork (is that red meat?) in a veeeeery long time, but put a plate of bbq from Bullock's in front of me and I'll be outta control! Even my once-vegetarian daughter didn't resist and once even went on a whirlwind tour with a friend in pursuit of the best Southern BBQ (state-wise). North Carolina, of course, won but Tennessee was a close second! For me, it's that vinegar in the NC BBQ...yummm!

    I just read an article in Prevention magazine that said using rosemary on meats before cooking can help to avoid carcinogens. Apparently rosemary contains antioxidants that seem to destroy HCA's (carcinogens).

    I just happen to use rosemary on all my meats purely as a flavor enhancer. I was happy to read that it could reduce this risk.

    I have given up so much to cancer, I refuse to give up my BBQ. And being from TEXAS ... I think I would have to give up resident status if I gave it up. Oh, and fruity "martinis" are another must!

    Long live barbeque... whether it be from Tennessee, North Carolina, Texas, anywhere ...
