Happy Experiment for Cauliflower

I made some steamed cauliflower the other day, and since I think the veg is a little bland, I decided to make a dressing for it. I the following stuff in the food processor: a little oil (you chose), balsamic vinegar, and pepitas (unsalted) sprinkle of dried parsley. I pulsed the dressing, and then dumped in the cauliflower to just make it "chunky". I though it was pretty good. Having some leftovers, the next day I put what was left in the mini-chopper, added some non-fat sour cream, and made "mashed" cauliflower. Turned out pretty good to my tastes. Yum. Yum.
