    Tonight was the leftover salmon.

    We managed to (finally!!!!) score Mary's free range turkey thighs. Last year, they were impossible to find at the co-op. We went there yesterday, after going to an art gallery, and voila...the only 2 sitting there; we grabbed them!

    I don't like keeping poultry for longer than a day or so, uncooked, and rather than freezing/thawing (since we don't know if they have already been thawed), I'll cook them tomorrow.

    I just made mashed potatoes (have not had those in decades!) and will make wild mushroom gravy tomorrow; I'll use our foraged chanterelle and some dried porcini. Not sure if it will be green beans or broccoli or who knows, but that's it ....I've baked a few apple desserts for DH, using up the apples from our trees, so not sure if he wants more. He actually said NO to canned cranberries this year! Maybe I'll make a cherry/cranberry relish/side of some sort using port. And we have ice cream in the freezer :-)

    T-day, we scored Copper River salmon, so we'll make salmon on Thursday. Easy sides. Easy prep.

    This was Friday night’s dinner. I made this Hello Fresh dish with my own ingredients but used brown rice. It was just as delicious as the original was months ago, but there are leftover ingredients. That’s the advantage of the kit meals.

    The rice is cooked with sautéed white part of green onions. The second layer is a black beans skillet mixture of sautéed poblano pepper dice, green salsa, and a spice mix of cumin and chili powder. Another addition is fresh tomato salsa of diced tomato, olive oil and green onion dice. Also a crema of sour cream and spice mix with enough water to make a looser consistency. Finally, grated pepper jack. It is actually sprinkled on the bean mixture.


    Quite a prep but goes together quickly.

    This is last night’s dinner, shrimp scampi with linguine. Ingredients were olive oil, butter, lots of chopped garlic, lemon zest and juice, and grated parmesan to sprinkle on top

    Side was large romaine salad with tomato, cucumber, avocado, kalamato olives.

    Linguine was cooked and frozen. So convenient! Thank you, SpecialK.

    cooked and frozen linguini that isn't mushy? Do tell! I must have missed the post. It all looks so delicious. I've had breakfast and am hungry already.

    I do a simple "mexican rice" similar to what you describe except I just take a 1/2 cup to a cup of jarred salsa.

    Eric, so happy to hear your MIL is on the mend!

    I have not posted much because meals have been boring here due to DH's dental surgery and trying to stay on our restricted eating plan. Last night was lentil pasta with marinara that had ground turkey added in. I had a little salad of cucumber, grape tomatoes, sliced beets, and kalamata olives along side. This has been an interesting experiment for DH - his endocrinologist suggested going gluten free to see if he felt better (Hashimoto's) and by day 6 with no gluten he had no joint pain. He has lost 8 pandemic pounds, I have lost 6. We are feeling good as well, not missing the things we are not allowed to eat. Because I never went back to eating a lot of sugar I did not have the cravings this time, and I generally felt fine cutting everything out. Last time I had that malaise type feeling for a couple of weeks. I am leaning more plant based this time. I am making all of my usual T-Giv dishes since DD and her beau will be here, but I am sending the leftovers home with her. I have an extra turkey breast for us and one for her, in addition to the whole bird. I am substituting some ingredients that will allow us to eat some things like alternative brown sugar in the cranberry sauce and sweet potatoes and gluten free flour to make the pan gravy, but I probably won't eat everything.The good thing about most of what I make is that it is vegetables - yay! I am getting my booster tomorrow, and hoping I don't feel bad afterward. When I got my initial vaccines I was fine after the first one, didn't even have a sore arm, but did have a mild case of shingles. After the second, I had flu like symptoms starting the evening of, and lasting for about 36 hours. Not the best timing for a cooking marathon, but I will roll with it.

    eric - glad to hear your MIL is back home, hoping she is on the mend.

    carole - yay for frozen linguine! I love how fast a meal can come together using it. I have not found a compromise in the texture, at least with short pasta types. What did you think about that with the longer pasta?

    Mae - I saw on another thread that your DH is making creamy, garlic Brussels sprouts for T-day. I'd love to have that recipe.

    Carole - Oh shrimp linguine. Be still my heart. I have so many things backed up that as much as I've been dying for shrimp, I didn't buy any this week. Nor did I buy the wild caught lobster tails - 2 for $12.

    Special - Good to see you. Lots of good news there. I too forgot you told us about freezing leftover pasta. Any special instructions?

    Friday night we had semi-homemade cheese pizza. “Semi” because I picked up the dough from the deli section of the local fancy supermarket. It was good enough but certainly doesn’t compare to a homemade crust. Can’t beat the convenience though.

    Yesterday I made red beans and rice and an apple crumble with gingersnap/walnut/oat topping. I had a bag of apples from last years harvest that needed using. Nothing lol cal about any of that (except that we didn’t put ice cream on it.)

    Minus, we are down to 1 1/2 storage units. We could probably get down to one if we could dedicate a few days winnowing out more stuff from the main unit. We are suffering from a definite lack of enthusiasm especially with colder weather now. We did retrieve much of the Christmas decor which helped a bit.

    I’m feeling more enthusiastic about the holidays this year. Last year we did the bare minimum because of COVID and as we were in the midst of moving would have been happy to skip the whole thing. This year, I’ve even finished both Christmas shopping AND wrapping. Unheard of!

    Looking forward to thanksgiving day at dh’s sister’s home, where I’ll be contributing dinner rolls and a fruit and cheese board. The rolls are dh’s great grandmother’s recipe (aka “Ganny”, whom I never knew) and they are always a nostalgic hit. Don’t know how the only person who never ate hers turned out to be the one who always makes them but I’ve been doing it for many years. We will have a smaller turkey dinner with the kids on Sunday. DDIL is contributing the dressing so that’s one less hassle. It’s my least favorite part of the meal to both fix and eat.

    Kudos to you and the hubs Special. Glad you are both reaping the health benefits.

    So glad your mil is on the mend Eric!

    As usual Carole, I’m having seafood envy. I’m missing the gulf coast more than ever.

    Tonight is pork scallopine with buttered noodles and roasted golden beets and carrots.

    Nance - great to hear from you. Glad to hear there was some progress on the storage units. I agree - interesting that you are the custodian of the ancient family roll recipe.

    I finished the Christmas shopping a week or two ago, except for a Starbucks gift card I got for my DIL Friday. The plan was to wrap this weekend so I could mail or ship next week (almost none of my family live in the same state. Well that didn't happen - but I do at least have everything spread around the living room floor in piles for the appropriate families. Maybe tomorrow.....

    Dinner tonight was soup. Chicken noodle with vegetables, white beans and ground turkey.

    Thanksgiving this year will be a multi day affair, split between my uncle's and my mother's. The main dinner will be at my uncle's with just a few family members, and I think it will be catered. At my mothers we plan to make a green bean casserole and stuffing, maybe a small turkey, but buy the mashed potatoes pre-made. So far it will just be me, my mother, her boyfriend, and probably my aunt and other uncle, but I fully expect my siblings to show up at the last minute.

    I've been short on time but I might make a pumpkin pie. The store bought ones are a bit sweet for my taste. I'll still eat them but I prefer to make them from scratch, with less sugar and more spice.

    The frozen linguine is fine. Not mushy at all. I now cook a full package and freeze half of it, tossed with a drizzle of olive oil.

    Last night's dinner was pork roast, stuffed with mixture of green onion, garlic, red pepper, salt. Side was baked sweet potatoes

    Dinner tonight was chicken tacos. Had just enough left to give to hubby for his lunch for work.

    We spent the day running errands and visiting a friend in the hospital, so dinner was a hunk of warm, softFrench bread.

    Our lunch with my sister and her dh yesterday was much enjoyed. We shared a seafood platter with shrimp, oysters, and catfish and two sides, Mac and cheese and sweet potato fries. I especially savored the oysters, small but cooked perfectly.

    Dinner was a meatless eggplant lasagna and tossed salad

    I ate my last leftover individual Naan pizza yesterday standing at the counter while I whipped up both egg salad & guacamole. Yeah, probably not the best way to eat dinner, but since I had large quantities of Sees Candies the last two days, I was avoiding sitting down with a book.

    So at 4am this morning when I woke up & couldn't get back to sleep, I had egg salad on a toasted half of an Ace Bakery Brioche Bagel. Tonight will be nibbles - crackers & cheese & guacamole & cucumbers & black olives. Oh - & maybe smoked oysters, Carole. I really like HEB's Rosemary crackers.

    Finished wrapping & boxing all the presents last night that have to be mailed. That's 98% of my gifting. But we've all pretty much cut WAY back and gifts are mostly for the kiddos. Adults are getting Comice Pears shipped directly from Pitman Davis. I'll likely send everything else UPS this year since there is a 5% AARP shipping discount. Paper/tape/scissors/etc are spread all over the living room floor, and I've completed my shopping so I'll go ahead and get everything else wrapped & labeled before cleaning up. Then I can start on my Christmas cards. Not sure how I got so far ahead this year but it really feels good.

    Sunday night it was warm (50F) enough to grill, so I grilled a grass-fed ribeye. Sauteed mushrooms (butter, Madeira, shallot, parsley), and steamed asparagus with lemon & olive oil. Last night I had the other half of the steak and did a repeat of the mushrooms, plus a couple of the last of my homegrown Cherokee Purple cherry tomatoes & basil, and roasted Brussels sprouts. I used "Urban Kitchen" Brussels sprout seasoning--doubled the oiive oil rather than melt butter or ghee. Cleaned & halved the sprouts, tossed them in the seasoning & oil, and roasted them 20 min. at 350F in the toaster oven (adding the steak, wrapped in foil, for the last 6 minuted).

    Classic French omelet for brunch today: 2 jumbo eggs, minced herbs (Italian parsley, thyme, chives from my garden plus tarragon), grated Gruyere and a dollop of shallot-chive flavored Boursin.

    Dinner tonight will be at Chez Joel. Now thst I know how generous their portions are, I will share just a salad and my own entree (subbing out starch for double veg). Gotta make room for some slight T-Day carb cheat (have done "diet Thanksgiving" in the past, no fun at all) and try not to eat holiday gift treats. (The first one arrrived from Bob's patient last night: some booze-filled chocolates imported from Poland). I am holding at 156 but need to get down to 152 or below by Dec. 29.

    Oh well Nance, I go in spurts. I took two days week before last do to NO THING except sit in my recliner & read a Lee Child "Reacher" book. Seems lately that I'm either on full throttle or I'm in definite idle. And more idles lately too.

    Linner was a couple of Trader Joes' flame broiled meat balls, Chicken Rice-A-Roni and green peas. I hadn't cooked Rice-A-Roni in probably 10 years & this was an old box - chicken flavor. Not particularly great, although I used to love it in the 60s after it was first introduced (1958). Plenty of left overs so it will no doubt become some kind of fried rice - even though it's pretty 'soft'. Or maybe I'll add onion & celery & sage pretend it's some kind of 'stuffing'.

    Minus - I’m curious about your thoughts on the “new” Jack Reacher. I’m finding him very different than when Lee Child was doing the writing. And not in a good way.

    DH’s stomach was not doing well yesterday so we had toast and jello for dinner. He requested corn chowder for dinner tonight (feeling better but not much appetite) so that’s what we had. I only had frozen corn because I didn’t get to freeze any this summer so I don’t think it had enough sweet corn flavor. DH had two bowls though, so I guess it pleasedhim enough.

    Got the dough for the rolls made, now doing its overnight rise in the refrigerator.

    Nance - I just read #26, which was the last one Lee Child wrote alone. One of the ladies on the Book thread said her husband LOVED the new series - but I generally wait until books come out in paperback. There is one decent used book store left that does trades. February should be a good time for that when everyone turns in their Christmas present books. One of my nieces usually gives me an Amazon gift card for Christmas so I can stock up on books then too.

    Seeing as this is a food thread - I'll just announce how hungry I am for my Mother's date bread. I used to make it every year as gifts for friends and just realized I don't think I've made it since my son graduated from college, Eeeek - that will be 30 years next year.

    Tonight's fate was crockpot cauliflower soup that I lightened slightly by using half and half instead of cream at the end. I paired (keto recipe) buffalo chicken stuffed yellow peppers and added Amish dinner rolls from the freezer. Presumably in case the meal was not enough for DH. But I enjoyed one. And then 8 Trader Joe's vanilla oreos later. For some reason lately I've been eating healthier during the day then kind of eating through the evening. Gotta work harder on that with bloodwork scheduled in December. But I was glad the soup-as-dinner was ok with DH since we also had the peppers.

    I spotted some bundles of greens yesterday that looked fresh picked. I bought four bundles, thinking they were mustard greens. They turned out to be turnip when I got them home. I cooked them with diced pickled pork and they were delicious. As good as any mustard greens I've ever cooked.

    So dinner was a big bowl of greens sprinkled with hot pepper vinegar and cornbread with butter.

    On Monday at lunch with my sister and her dh, she described their last minute Thanksgiving gathering with her n'eer do well son, his wife and small child and her DH's n'eer do well son and new wife. As an afterthought she said we were welcome to come, too. Her tone and expression indicated she doubted we would want to join this group.

    DH's inclination was to stay home but I persuaded him to go. We won't be there long. I doubt everyone is vaccinated. That's a bit of a worry but we're “boostered."My sister has a daughter with three teenage kids but they will be elsewhere. Her husband has other grown kids and grandkids but has little to do with them.

    My non food news is that I will have to say YES when my dr. asks me at my annual checkup whether I've fallen. I took a surprise tumble yesterday when I went out the front door dressed in robe and gown to make sure I turned off a faucet the previous day. I was so stunned and lay there while cars passed on the street. Dh had gone to the gym so I got up without assistance. My knee is very sore and stiff but I'm hopeful there's no lasting injury.

    Auntie...hoping that your DH gets over the stomach upset soon.

    Dinner has been sort of hit and miss here. For whatever reason, the meals have been shifted "forward" and we are just eating a brunch and an early supper. It's probably not a bad thing as both need to lose some weight. I've gained 8 pounds in a year, despite running 30+ miles per week. Our annual physicals are coming up in a couple of weeks and I'm sure the doctor will grumble at us.

    I've read a couple of the Jack Reacher novels and couldn't "get into" them. I'm going to have to renew my library card as *ALL* of my books are boxed up in storage and I'm not wanting to continue to stock the personal library.


    For Thanksgiving we are getting together with the music jam folks. There will be Sharon and I and 84 year old MIL, the guitar player and his wife (their house), the mandolin player, his wife and his 90 year old father. We will be bringing a pumpkin and an apple pie, my mom's fruit salad and the garlic-cheese biscuits. The pumpkin is roasting in the oven

    This is the first time we have not cooked the entire meal in a very long time, and the first time that DD won't be home for Thanksgiving...a strange feeling. :-)

    Happy Thanksgiving and Happy Chanukah to those celebrating.

    Last night was a fried egg, big salad and leftover mashed potatoes with the wild mushroom gravy.

    Tonight will be broiled/roasted cauliflower, a frozen hamburger patti and if DH wants any more mashed potatoes, they are his; I'll have a pot of black beans.

    I spent the morning prepping lamb for tomorrow (We did our turkey thighs a few days ago) and will make Jalisco Birria with corn tortillas, lots of different veggies for sides. Thought about making slaw but spent hours in the kitchen already. Maybe I'll rethink it tomorrow, LOL.

    Carol, I certainly hope no lasting damage.

    Last night at Chez Joel we shared a house salad (mesclun, Belgian endive, walnuts, & slivered green apple) and Manila clams steamed in white wine & butter. Bob had bouillabaisse; I had duck--rare breast, leg confit, beets, mushrooms and a sweet potato croquette. I did cheat and have dessert: an almond tart with pistachio ice cream. This afternoon I had the duck leg and a piece of low-carb hi-fiber toast for lunch. (No breakfast). Not sure about tonight--might go to Eataly to see if I can score a couple of very small broken pieces of white truffle--online, the smallest you can buy is an ounce at >$200. Nope. If not, I have an Arctic char filet defrosting, which I will accompany with fennel sauteed in butter.

    Carole - so sorry about the fall. Thinking of you & hope along with Wally that there is no lasting damage.

    Eric - I usually adhere to a similar eating plan - if I eat more than one meal a day. And early supper is much healthier. I sure sleep better w/o a load of food in my stomach.

    Egg salad on 1/2 a Brioche Bagel for brunch. They are sweeter than I usually like & while they would probably be good with jelly or honey, I probably won't buy them again. Guacamole for supper along with some leftover cucumber & onion slices marinated in sour cream & dill. I'll have another piece of Sees candy for desert.

    Last night was a quick dinner.

    Today is turkey, hash brown casserole, steamed mixed veggies, biscuits, steamed turnips, yams (for hubby), stuffing, cranberry relish (maternal grand mother's recipe) and lemon meringue pie for dessert. Just going to be me, hubby and our pets aka “the kids” here. Don’t mind cooking today, even if it’s my birthday.
