Lacey - lovely to hear about the grandchild. I would be tired even if I were 100% healthy. So sorry you're still dealing with some memory lapse. But it sounds like physically you're doing much better? Great that you & WallyCat are trying something new.

Special - hope your DH's implant goes as smoothly as mine did. But you're right - you'll get a break from cooking.

Mommy - I solved the annual "switch out the clothes" by just getting rid of 80% was what was in my closet. What i have left for winter is one drawer of long underwear & wool socks and one drawer of wool sweaters & scarves and several heavy winter coats in the closet.

Starting at 9am today - no cokes, no tea, no chocolate for 24 hours... since I have a nuclear stress test in the morning. I'm already a little grumpy. Then no food for 6 hours before I leave here at 7am - so dinner will probably be broth or maccaroni & butter. It was going to be a Lexiscan, but I really don't need the extra drug for dilation to simulate exercise conditions since I regularly walk 6 miles, especially since there are some FDA warnings for the drug. So fortunately just the radioactive isotopes. If the doc sees something that's equivocal, he can do a PET down the road.

Tonight was broiled cod with my favorite rice blend and steamed broccoli. It was really good, DH even asked if I could make him more cod, like now. I’ll make it again soon but for tonight, the kitchen is closed.

it’s a broccoli theme! I had some leftover marinara, mushrooms, and artichoke hearts. I sautéed the mushrooms with some onion, added the sauce and artichoke hearts. I had already baked some chicken thighs so spoone the augmented sauce over and topped with mozzarella, and put it back in the oven with BROCCOLI that I roasted, lol!

Illimae, how did you prep your cod. We are just getting into white fish...it has been salmon most of the time since we moved here, especially the year we caught 22 fish...I was getting sick of salmon, LOL.

I just have to say how creative and lovely the meals are that are being posted here. Great ideas! Thanks for sharing, ladies and gents.

wallycat, this is probably our new go to for cod, it was really good. I used the bit of butter and juices from cooking it as a drizzle on top, so yummy.

Illimae, drool. Thanks again for the cod link. So simple and looks great.

I made a cauliflower, bacon, potato, lettuce "salad" with some diced raw onions. Leftovers will accompany some kind of protein tomorrow.

Yes Mae - thanks for the COD link. Looking forward to trying that one.

Special - interesting theme. Hmmm - will I use my leftover broccoli in fried rice? Or will I add it to Naan pizzas. Fresh mushrooms are on hand for either.

Linner was leftover beef & noodles. Somehow I got into a 'prep ahead' mood after I ate. Made guacamole. Made fruit salad w/oranges, apples, bananas, pineapple, coconut, baby marshmallows & sour cream. Cooked up some of my Natural Grains rice mix to combine with broccoli (?) & Brussels sprouts in a stir fry. Boiled some eggs - probably for deviled eggs. Made some chocolate pudding. And I see potato salad in my near future since I bought green onions, celery & petite red potatoes.

I'm going for an initial appointment with a new oncologist tomorrow. When my much loved MO retired, I got passed along to another doc & we never really clicked. Wouldn't you think the doc might at least be interested in your blood work? Anyway, it's taken 5 months to get an appointment with this lady. I was willing to wait since I'm mostly looking at a once a year "survivorship" appointment & someone to order & review sporadic testing. Hope it's a fortuitous meeting.

I will try that cod recipe. Looks good and easy. Thanks for the link.

We went out to dinner last night at a popular restaurant that has been in operation for many years. Sal and Judy's in Lacombe, LA. Judy departed long ago but Sal is still there and comes out to greet his devoted diners. We met a couple there and shared their table, which is there for them every Wednesday night at 6:30.

I had a cup of oyster and artichoke soup, house salad, and trout topped with lump crab meat and shrimp. DH had lasagna. Entree servings are large and we left with enough food for another meal.

Hi to all! Wallycat, I think you are new since ive dropped in last time, so welcome. Why does time pass so quickly? I think of

    image

everyone here all the time. Even got on the site, only to be interrupted before I post. Ugh.

I hope everyone is doing well. My brother is still hanging on in CA. But it is getting close. My oldest brother was just dx with Parkinsons. His wife an alcoholic and addict, stabbed him. She was ordered to stay away, but he was do worried about her, he let her back in. My younger sister was dx with lobular cancer and had a lumpectomy and needs radiation. My SIL has pancreatic cancer and her husband, my husband brother has a heart problem. Went to my Doctor for a check up and my sugar and cholesterol are up. Well, DUH!!!! STRESS, YOU THINK? LOL. then, this week, my daughter was in accident with a deer (a Wisconsin specialty this time of year) with the 2 kids. All is well with them, but we are trying to work out cars fir now, until they can buy one. This is hard right now, as they need a big car to fit at least 3 carseats, and any car is hard to come by.

I am holding up, sort of. LOL. All this comes right at my 10 year cancerversary time. Dx, and surgery by Dec. Bit 10 years! I am still standing. Ok, now I'm caught up, and hope I'm forgiven fir not popping in more often.

Im still odering and enjoying my Home Chef, even if 1 time due to shipping messes, I got a box a week later... ewwww. What a waste. They credited me even before it got here though.

We are expecting a bit of snow today, my husband is traveling to Michigan for a family wedding. And tomorrow, Im taking my 2 daughters, and the 2 oldest Granddaughters to see Wicked. Yes I was supposed to go to the wedding, but screwed up, and chased tickets and bought them for the same weekend. $500.00 nonrefundable... yeah. I feel bad, but, i guess not $500.00 worth, so we go 2 different places. LOL hugs to all.

Moon, thank you for the welcome! I miss WI; lived there for 33+ years before moving here (WA). I miss snow SO much but I do not miss the hot, yucky, humid, mosquito ridden summers.

We had the leftover cauliflower, bacon, potato, greens "salad" last night.
Tonight, I am making Cod, ala Illimae! Can't wait.

OMG! We ate dinner super early because I couldn't stop thinking about the cod! It was a HUGE hit!! DH, who thinks the sun and moon revolve around a salmon said "hmmm, this is really good; why aren't we getting more cod?" YIPPIEEE. I may prep the rockfish the same way. This is so easy and quick and so much more than the parts! I may try it with salmon! And we were in town, grocery shopping today and I remembered to buy a lemon. I usually have lemon for putting on after cooking the fish. Today, I squeezed a bit, as per the instructions. Not one fish smell that I can detect.

I served with a side of broccoli and sweet potato. I usually microwave my veggies unless I am making a stir fry or adding it IN to something. If anyone has fast, yummy ways they prep veggies, I'd love to hear it. I have a nordic ware microwave popper and floret my broccoli, drizzle with olive oil and sprinkle with my copy-cat Good Seasons dressing powder. I also microwave my sweet potato. I've tried oven "fried," but they don't seem to crisp up, so why bother---faster to nuke 'em. Again, any thoughts on different veg prep is very welcome.

Illimae, THANK YOU for linking that recipe.

We had leftover chicken and sausage gumbo from the freezer with leftover brown rice last night. Also a delicious and large tossed salad. ALSO Grand biscuits, which undoubtedly ruined my day of WW free foods. I'm trying without any success so far to take off extra lbs.

I need to go back and save that cod link. I almost never use my oven broiler and should break that pattern. DH likes cod and it's a reasonable price.

I had a Dole new bagged salad last night - Applewood. Too much bacon in the dressing for my taste.

Carole - I've held off buying any biscuits, but it didn't help since I just toasted English Muffins from the fridge.

Tonight is fried rice with everything in the fridge added - green pepper, celery, spinach, broccoli, brussels sprouts...

Greetings all! All your foods are sounding good. The cod is appealing to me too. We're big cod fans here. I'll be trying that recipe soon.

Yesterday didn't get out of the 30's so I officially kicked off cold weather season by making too much vegetable beef soup, using up a piece of beef roast I had stashed in the freezer. I was disappointed to find that I'm out of beef bones for stock so I'll have to hunt some down for next time. The soup was good nonetheless.

I was astonished to find lamb shanks at my local grocery store yesterday! They're usually rare as hens teeth. I jumped on them for the freezer.

Eric - I'm sorry about your MIL. We struggled with C-diff with my dad. It was hard on him. I hope she has made some good progress by now.

Monica - sweet Jesus girl! You need a hug! (((Monica)))

Minus - good luck with the new MO. I hate changing MOs. I'm on my third one. I like her but I don't feel like she's too invested in our relationship. Not surprising since I had already completed treatment when I got her, but like you, I'm on yearly visits so I don't feel like seeking out a new one unless something new happens. Besides, half the time I see her nurse practitioner, who I really do like, so there's that.

Carole - your gardening accounts remind me why we moved. I loved the planning and planting but the upkeep is beyond me these days. I'm still trying to find a middle ground. This year my garden was mostly in giant pots. Next year there will be some new in ground planting but in such a small area as to be manageable for me. At least that's the plan lol.

Lacey - happy anniversary! It sounds like your granddaughter is keeping you hopping - what a cutie! My knee sympathizes with your back and it's keeping you from exercising. I'm finding myself moving closer and closer to the idea of knee replacement. Ugh.

I'm astonished to think that Thanksgiving is a week from Thursday. A couple of weeks ago, I snagged a 13 pounder, paying a much higher price than if I had waited, but I figured smaller ones would be impossible to find about now. We will go to DH's sister's for the holiday but have a smaller dinner for the kids and us on Sunday. Maybe I should have sprung for a larger one. Even at $1.99 a pound, with meat prices what they are right now, it would be a bargain. I keep reading and hearing about meat prices having gone up 20% . Around here, it's much more than that at least for beef. I'm not sure what that will mean for Christmas dinner this year since it usually revolves around a big hunk of beef.

I think tonight is carryout from our favorite Mexican joint.

Last night was leftover linguine with meatballs and Rao's sauce and the addition of a couple of small slices of lasagna from dh's meal at Sal and Judy's. Also our usual large delicious tossed salad.

Now I'm out of leftovers and will have to cook. I am thawing a beef roast for pot roast. An alternative would have been beef vegetable soup, but dh opted for pot roast. It's the right kind of weather for using the oven.

I made a vegetable Udon soup (not using their spice packet) and also a roasted veggie couscous dish. I will have lunch for a few days. I tried to buy some cod this weekend to try the recipe, but they only had frozen and the sodium count was just too high. Darn it!

Tonight was an Asian inspired steamed cod and veggie (carrots, snap peas, yellow bell pepper and ginger) mix over Thai brown rice noodles. I didn’t have a steamer basket, so fish was on a short rack while veggies boiled in water instead of the soy/wine sauce. This left the veggies bland but the cod was nice, so I’ll try a better method next time, still good though.
