Well, I was trying to read about Shrove Tuesday when of course I went into brain fog. The only thing I managed to absorb was that pancakes and Shrove Tuesday go together.

It was the Homesick Texan blog.
Apparently if you want the greatest brunch in the world Austin is the place to go and the Magnolia Cafe and Kerby Lane are the place to go especially for Ginger Pancakes.

Anyway, I've never heard of Shrove Tuesday, or Ginger Pancakes, and I've never been to Texas but they do sound decadent.

I've reposted the recipes from both restaurants
Homesick Texan mentioned she tops hers with candied pecans and vanilla yogurt.
I wouldn't mind whip creme and syrup.

Gingerbread Pancakes (From the Magnolia Cafe, Austin)
Ingredients:
3 eggs
1/4 cup brown sugar
1/2 cup buttermilk
1/2 cup water
1/4 cup brewed coffee
21/2 cups all-purpose flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cloves
1 tablespoon cinnamon
1 tablespoon ginger
1 tablespoon nutmeg
4 tablespoons (1/2 stick) unsalted butter, melted

Method:
Cream eggs and sugar together. Stir in buttermilk, water, and coffee and set aside. In a separate bowl sift together remaining dry ingredients.
Stir egg mixture into dry ingredients, then mix in melted butter.
Add more water or buttermilk if necessary, but batter should be thick.
Cook until done on a lightly greased hot griddle or in a heavy skillet (turn once when bubbles appear on upper side and start to break).
Pancakes will be thick and cake-like in texture.
Makes 8 to 10 five-inch pancakes.

Kerby Lane GINGERBREAD PANCAKES – Austin

2 eggs
4 T. brown sugar
½ c. buttermilk
½ c. decaf coffee
2 t. cinnamon
2 t. ginger
2 t. nutmeg
½ t. cloves
2 c. flour
4 T. margarine, melted
3 t. baking powder
2 t. baking soda

Mix together the eggs, sugar, buttermilk, coffee, water, spices and flour. Add the melted margarine and mix just until blended. Add the baking powder and baking soda, again stirring just until blended.

    saluki...Those sound awesome! We celebrated every Shrove Tuesday (or as we call it 'Fat Tuesday') by eating pancakes. Since it's the day before Lent (and Lenten fasting) begins, pigging-out is the tradition. Of course that's when Mardi Gras is too and that can be pretty decadent as well!
