Hey, ladies. I'll catch up on your news soon. I've been very busy at work and not online for fun and support much. I hope all of you are well.
I'm within 100 km of fake Santiago in my analog Camino walking. I've been slowed up for the need to have a uterine biopsy. However, I have my tickets and will be walking the real Camino later this year!

I just got back from blessing the Easter basket, a Ukrainian tradition. There was the “Blessing of the Breads". the “Blessing of the Meats", and the “Blessing of the Dairy Products"...all the foods I actively avoid. I rationalized that once blessed, they're fine! 😂 Looking so forward to breakfast tomorrow!

Two hobbies - gorgeous Spring blooms! Spring is coming!
Vamps - we’re off to Italy this Thursday! Can’t wait. I’m hoping I can lose weight in Italy simply because I will be more active than when I sit on my derrière at work all day. But I also plan to enjoy the good food so we’ll see!
GG27 - I read that on walnuts too, walnuts good and peanuts bad. I wonder why, but definitely favoring walnuts over peanuts now!
InnaB - good to see you over on the Diet & Nutrition thread!
Egads - thinking of you and we all miss you over here in the cave.
I'm off to a much overdue trip to Italy this week and next with my husband and some friends, so I'm going to take a break from posting while on vacation. So leaving you with the cute dog pic of Domino and Tucker until after I'm back!

Off I go. First some trains and museums in Europe, then the Camino. I'll miss my spouse and cats terribly. So many people are visiting them while I'm gone that I don't think they'll notice my absence quite as much! I doubt I'll miss work. Here's hoping my toes (which still hurt from chemo) and knees and back (ditto from Tamoxifen) are up for a 500-mile walk.
I hope you all are well. I'm sad to see Egads hasn't been on the site since February.

Wow, ksusan, 500 miles - I am so impressed!! I spent ten days in Japan last month and we walked between seven and twelve miles each day and that about did me in. It took me a full week to recuperate enough to return to the gym. I envy you the trip; there are so many amazing museums in Europe. Enjoy yourself - I look forward to a full report when you return!
Sure is quiet around here without Egads. Vamp, have you talked to her lately? I hope her DH is recovering well and that she's not too exhausted by all of her extra responsibilities! And BTW, how are you feeling?
I have to admit that I've been less that paleo lately - who knew that Japan had truly excellent breads and pastries? It was probably the only chance I'll ever have to try them so I took full advantage of the opportunity!
Pebbles, how was your trip to Italy? Isn't it just the most amazing place? There are so many beautiful cities there that it's hard to pick a favorite but I think I lean towards Venice. It is so unique and so romantic! What was your favorite?
And Pi-Xi, how are you? Are you managing to keep your weight up? (I sure wish I could donate some of my excess baggage to you!)
I miss hearing about all of you ... it's time for everyone to check in and update the clan on what's happening! Hugs to all.

Thanks for asking, JKL! My weight is stable and for the most part I’m feeling pretty well physically. Unfortunately, my uterus is an issue and I missed my window for an easy removal, so I’ll be more sliced up than I’d like. I love my abdomen. 😢 Also not happy that I might be losing yet another a year of my life. It took me a VERY long time to recover from surgery last time. Frustrated that I’ll have to rebuild myself again and my strength may never be the same. It’s four months away, so lots of time to stress and to feel sad.

Oh no, Pi-Xi! I'm so sorry that you're facing another surgery. But I have faith in you; you are so dedicated (not to mention, so fit!) that if anyone can get back in shape quickly, it will be you. And, if your uterus is creating problems, it will surely be good to get rid of it! (And I say that as someone who had hers removed years ago and has never regretted it!) Can you consult with a physical therapist prior to surgery to map out a post-surgical exercise program? Maybe if you knew you had something in place you would feel less stress now. Plan something that feels indulgent (binge-watching a great series, a weekend getaway, a spa-day, etc) for your recovery period so you have something to look forward to and focus on the fact that you will be resolving your uterine issues. Girl, you've fought cancer; you can surely handle this!

Japan, Italy....everyone seems to be traveling to great places. I certainly would not expect Japan to have pastries, JKl. You are right to have to try them!
Pixi, I hope the surgery will be easier than you fear. I certainly understand not wanting another one and just dreading it. I had gotten that way too.
I left my job that I hated in May. I really felt like it was killing me. I will be doing consultant work on a project basis. i hope this will work out for me but it is a little scary to go to unpredictable income but I figure the worst that can happen is I have to find a full time job again or move to Costa Rica and live off my savings. LOL. Oh and I have to pay for insurance through Cobra. Oh wait, you Canadians don’t have that problem-you actually have healthcare. So, this is a slow time and I am not working but working on restoring my health, getting my yard and house in shape. I actually sleep well at night for the first time in probably 7 years, I am exercising several hours a week, and getting some natural Vitamin D and immune boosting sun rays. Trying to eat well as always and experimenting with that is fun for me. Lessons learned this month-Can’t drink fruit smoothies every day even if it is natural sugar, can’t eat low- carb sugar and flour free cheesecake either. Can eat at my favorite Mexican restaurant if I only eat the one meal -yes even non Paleo beans, rice and corn tortillas. Excited about that and trying to shrink my eating window down to 10:30 to 5 on a daily basis to see if that drives my weight lower. As you may recall, my bloodwork had never gone back to normal after being hospitalized with some weird sickness. I may have an indolent leukemia that is not currently needing to be treated and may never need to be treated. I am very motivated to see my bloodwork get back to normal and hopefully keeping that at bay so I hope all the these changes can help. No jobis worth the stress that ruins your health.

Yea for you, TwoH! It's so smart to see your health as more important than your job. It sounds like you are doing a lot of things that are good for you - exercising, sleeping, eating well, etc. I hope all of these changes lead to significant improvements in your bloodwork (crossing my fingers here!).
I'm sure it's scary being on your own professionally but I bet you'll be successful! And keep remembering what good things this move is doing for your health! (And, I'm with you when it comes to Mexican food - the real stuff is worth limiting yourself to a single meal occasionally!)

Pi-Xi - I am sorry to hear you will be heading in for another surgery, but JKL is right you are strong so I am sure going into this surgery as fit as you are will make all the difference in your recovery.
ksusan - you likely won't see this till your home, but thinking of you on your wonderful journey. So very cool this journey you are taking!
JKL - How are ya girl? Japan - exciting how was that trip?
TwoHobbies - Congrats on quitting that awful job! Sounds like you are working hard at self care and that will make all the difference in your blood work. I wish I had your will power and ambition. I am eat good 90% of the time and try to exercise as much as my body will allow me to.
Keep in mind we Canadians do have health coverage, but our wait times for tests, specialists, surgeries are ridiculously long. I wish they could come up with a plan that was like yours and ours combined and paid our doctors more so they would stay here in Canada. Oh well, our government is full of idiots what can you do??!!
I have talked to Egads - she is well and I have passed on how much she is missed. It's been a busy few months for her and I am hoping we will see her back soon!

Hello Paleo pals! It's been forever I know, I took a break from posting on the trip to Italy and then life got busy when I returned. All is well with me. Had my follow-up appointment in June and so far so good. I'm nervous about my first mammogram post-diagnosis in Sept. but trying not to overthink it for now and just enjoy life free and clear of appts. until then. I'm still on tamoxifen and so far fine with it, even kept taking it in Italy.
Italy was AMAZING!! People are so nice and the country is beautiful, and the food incredible. Their meat and cheese is organically sourced so I ate lots of it!
Pi-Xi - when are you going and where to? We were in Florence, Tuscany, Portofino and Amalfi Coast. Have you had the surgery yet? Just remember you rebuilt yourself before and you CAN do it again. You know what it takes so you are going into it knowing what works for you.
Ksusan - how was Europe?
JKL2017 - I'm glad you enjoyed Japan and all that walking is impressive! I'm all for indulging on trips. Hard to pick a favorite city in Italy for sure... I also love Venice, Portofino is gorgeous and friendly, and the place we stayed in Tuscany called Villa La Massa is unparalleled.
TwoHobbies - Kudos to you for having the strength to leave a job you didn't like and I think the time to focus on home and health is great, enjoy it! Health comes first. I'm in the US with you so totally get it on the insurance costs. Hopefully you're figuring out the right eating plan and a good benefit of the free time is you have time to exercise, something I need to do more of. I'm trying the “intermittent fasts" now where I don't eat until 11am, and eat very little after 8pm. Seems to help.
Vampeyes - thanks for continuing to keep us updated on Egads! Hope to see her back on the forums soon. I'm ready to resume our paleo plans! I took a break too so I totally get it.

Gorgeous Pebbles! Tuscany and Portofino are both delightful. I find the intermittent fasting to help and also to push more food into my second meal and eat nothing or very light in the evening. I will just call it second meal because that can be anywhere from 2pm to 4. Of course that doesn’t work that well with a work schedule.

Hi all!
I too have taken a bit of a break because of some progression, kicked off the trial so I'm now on Xeloda & trying to keep ahead of the SE's. I'm afraid I've fallen off the paleo/low carb wagon a bit in trying to find something to eat that doesn't hurt my mouth. So I've tried a bit of organic wood fired olive bread from a local bakery. Bad, I know, but so good!

Not paleo but mainly low-ish carb other than the mango, this is dinner tonight. The leftover steak isn't really as rare as it looks. best to all of you! cheers, dee

GG, sorry about the progression and I hope the Xeloda will be good for you. Mouth sores are not fun. Your dinner looks delicious and healthy and pretty Paleo to me. I have been craving salad so I think I am going go do a barbecue chicken salad tonight-maybe not totally a Paleo bbq sauce either!

I miss this thread. And I really want to commit to the diet and workouts with delicious meat still on the menu.
GG27 - that salad looks delicious and healthy. Kudos to you for finding healthy alternatives still, hoping you are managing the SEs successfully.
TwoHobbies - I’ve heard a lot about intermittent fasting and try to not eat until after 11am so I can do it a little bit. Your advice is great and I’m trying it. I also have a full work schedule so that’s the balance.
Hope everyone is doing well. I just had my first mammogram since this all started and it came back clear! I’m SOooo relieved! This means now I can just focus on the diet and lifestyle now. I know this is a journey and it may come back but today is good, going to enjoy this moment!

Yea, Pebbles, on your clear mammo and your new puppy. Finley is an adorable addition to your family. How are Domino and Tucker reacting to having additional cuteness competition? Your photo of Portofino is beautiful. I hope you had a fantastic trip! Like you, I'm missing this thread and the incentive it gives me to eat well. And with the holidays looming, I need to get back to better habits.
Ksusan, I admire anyone who can go full plant-based; will you share any good veggie meals that you find? I would love to add a day or two meatless meals to my week.
GC, how are you doing? If SEs are affecting what you can eat, don't worry about sticking to paleo. It's much more important that you keep your strength up - so eat whatever you can tolerate; you're still one of our cave clan! And I am sending prayers that your current treatment gets you dancing with NED real soon.
TwoH, nice to see you here. Hope all is well with you and that you are enjoying being self-employed.

JKL, sure. I can't guarantee the recipes will be paleo friendly, but they're all-plant with low oil.
Garbanzo-Miso Soup
(my recipe)
Add T tamari and T aji mirin to 1/2 package firm tofu.
Reduce fluid left over from cooking garbanzos. Add water if necessary. Maybe a quart all together?
Add T white miso paste.
Add ½ whole shallot, ~1-2 T shredded ginger.
Simmer.
Add some chopped shitakes (if dehydrated, filter and add soaking water).
Add tofu, sliced crimini or portabella mushrooms.
Simmer.
Add a little chiffonaded kale and sliced seaweed squares.
Correct seasonings.
Immediately remove from heat and cool.
Reheat, adding cooked corn kernels at the last minute.

GF vegan lentil loaf

Ingredients
- 1 1/2 cups brown lentils
- 3 1/2 cups water (or vegetable broth)
- 2 shallots (minced)
- 4 cloves garlic (minced)
- 2 t olive oil
- ½ c or more diced mushrooms (button, crimini, portabello)
- 1/2 teaspoon salt
- 1/2 teaspoon sage
- 3/4 teaspoon Italian herb seasoning
- 2 cups pre-cooked rice
- Olive oil non-stick spray
- 1/4 cup ketchup (or barbecue sauce)—try mix with tomato sauce or paste?
- Ketchup (or sauce) for topping
- Heat oven to 350 F. Rinse the lentils and drain.
- Fill a large soup or stock pot with water or vegetable broth and add the lentils. Bring to a boil, reduce the heat, and simmer until cooked–about 30 minutes.
- Drain thoroughly then mash the lentils while they are still hot and until they are a little more than half mashed. Set aside.
- In a skillet, sauté the shallots and garlic in olive oil for 3 to 5 minutes or until soft.
- Add a few T of water, mushrooms, salt, and spices. Sautee until mushrooms are soft.
- In a large bowl, combine the shallots, garlic, and mushroom mixture with the mashed lentils and add the rice and ketchup or sauce. Mix well.
- Gently press the entire lentil mixture into a greased loaf pan. Drizzle a bit of extra ketchup or sauce on top.
- Bake the lentil loaf for 1 hour, basting with additional ketchup or sauce every 15 minutes or so. Allow it to cool slightly before slicing and serving, as this will help the lentil loaf firm up. Refrigeration also helps.
- Serve and enjoy.
- Can be made ahead of time for quick cooking the next day. Prepare the lentil loaf the day before (without glaze), place it in a loaf pan, cover it with plastic wrap, and refrigerate. The next day, let it come to room temperature, top with ketchup or sauce, and bake as above.

Thanks, Ksusan. We will be spending Xmas with my daughter and I am going to try one or both of these while I'm there. My oldest granddaughter is a vegan and I am always looking for healthy ways to feed her and these both look like they would be perfect! How's your exercise program going? Are you doing another virtual hike?

The lentil loaf can be cooled, cut, and frozen. If she likes garbanzos, I have a pretty good garbanzo croquette dish.
I'm still recovering from the actual hike! Back-to-back Zumba twice a week (most weeks) and walking. I'm trying to get into Livestrong this spring when my schedule allows it.

Ksusan, I try to hit the gym five times a week - three for lifting weights plus an hour of something aerobic (treadmill, bike or elliptical). The other two days I try to find something different (but still aerobic) to do like water aerobics or swimming laps. I am due for a DEXA scan soon and I'm hoping the weight lifting has stabilized my bone density (it was starting to decline after I went on the AIs). In spite of all of this exercise I am seeing my weight creep up, though, so it may be time to get more serious about my diet again (I have been doing way too much paleo baking!) Paleo may be little too restrictive for me so I'm thinking about trying Primal. At the very least I need to break my carb/sugar addictions. Getting older is making it harder to lose, plus it's hard to break decades of bad habits!

Ksusan - thx! And wow, those recipes are awesome! I love meat but am going to try that vegan lentil loaf. What made you decide to go entirely plant-based? Your post makes me want to get back into Zumba, I used to do it more regularly before this all started.
JKL2017 - Domino and Tucker can't get close yet as Finley is only 1 lb. and has only had one vaccination, but Domino had a 'sniff from a distance' and I think she's intrigued! And Portofino was as gorgeous in person as in the pictures. I'm so impressed at the hour of something aerobic... and with the weight-lifting, is it possible your weight gain is actually muscle and that's good? What's primal BTW? So I noticed that when I cut carbs and sugar, that's when I lost weight, and now I've introduced carbs back so it's been harder for me to lose weight too. I might cut carbs again.
Anyways, in a continual effort to lure Egads back to this thread, here is another ADORABLE picture of little Finley...
