Sorry I have been MIA. Does anyone have problems with foods with lectins? I am super behind on reading this thread and noticed Egads made mention of this too a few pages back with pine nuts. I just had a recipe with them in it. I am still having issues with my gastrointestinal system but go to a gi specialist in October. Hoping he can help me manage all of my gi problems as I seem to be struggling.

Hello, ladies! Waiting for my last infusion right now! Thank God my blood test today is not much worse than the previous one, so I am gonna get it and be done! Feeling apprehensive, but what can I do?
About ethnic food... I have to admit, some of these items sound (and look) pretty disgusting to me, but who am I to judge? I still make beef tongue from time to time, it’s delicious when you boil it with carrots and onions, chill, slice and put a bit of horseradish on top. We just finished liver pate I’ve made from chicken livers. My grandma and my mother used to make a wonderful beef jelly from cow’s feet. I lost that art when my husband fessed up and said he never particularly liked that delicacy.
When my daughter invited her American friends to a Russian restaurant for her birthday, she made them promise to try the foods without asking what they are made from. Some of them bailed out then and there, the brave ones came with us and had a great time. They gobbled everything in sight and, I am proud to say, none of them puked when we explained later what they ate.

Ksuze, Vamp & JKL - You all hit the nail on the head, I bought the star anise (looooove it, so versatile, savoury or sweet....and even Christmas tree as JKL pointed out!) As for the fungus (definitely bought a pack)....dried mushroom in reality (all mushrooms are fungus), but this one is special. It's called 'The Veiled Lady', for good reason...
Kinda pretty eh? These cute little ladies grow on the floor of bamboo forests. Besides being pretty (before being dried and stuffed into cellophane packages...then stamped with the ugly 'fungus' moniker) they pack a power house of nutritional/cancer fighting nutrients. The taste? Like a mushroom. Rinse, soak and use as a wrap for meat and veg, poach in broth and you have yourself a bowl full of delish!

Ksuze & Inna (godda davida) - I laughed when I read both your posts.....funny how whatever Mom plunks down on the table is a culinary delight, until we find out what it's made of. Inna, I grew up eating beef tongue. It has to be the most tender, melt in your mouth, cut of beef known to man. It wasn't until my mother mistakenly left a tiny shred of the outer layer (tough as hell) which came up as gristle. I took one look and started screaming "OMG I SEE TASTEBUDS!!! YOU'RE FEEDING ME SOMETHING'S TONGUE". I was 9 at the time. It wasn't until I hit my 30s that I decided to give it a try again....I wasn't disappointed. A true paleo eats every portion of the animal, so I guess it's a step in the right direction....don't think I'll be eating donkey cakes any time soon though. Ksuze the very same revelation happened to me with chopped liver....as did my son at age 6 when he asked "what's chicken made of?" When I said "chickens" his face blanched and he said 'NOOOOOO!!!" lol, he got over it.
TwoH - LOL, no way was I trying one of those fish cigars....and not because of the fish. The ingredient list was a chemistry major's dream come true....more chemical than fish. Gotta love the name though....Miss Bong LOL!!!

Inna & Egads - My mother was born and raised in Germany and so she also cooked beef tongue, along with kidney, heart, etc. I agree with you that the tongue is quite delish. We used to have tongue sandwiches with the leftovers. My mother would serve the tongue with her homemade bread balls, which she would slice and fry with onions the next day. All yummy! the only part that was disgusting was the outer taste bud covering.

A laugh for all but me.... Went shopping with my friend Kim (she's 38) and her nearly 1 year old daughter. We were leaving the store and one of the employees asks me if Kim is my daughter! I am only 42, the worker new this because she had to check my i.d. for the beer I bought DH and she commented that I was born the same year as her daughter. So what made Kim supper happy, has completely crushed me. Am I over reacting? I don't know, maybe, but hard to control how you feel. I get I didn't look my best today, but I didn't think I looked 60! That woman needs glasses!

Cowgal, I had massive GI issues last spring but they cleared up when I quit taking magnesium, switched AIs & started eating paleo (all that fiber!). I don't know if any of those suggestions would help you but you have my sympathy - it's a tough way to live. I hope you get answers soon! (Be sure to take a list of all the meds your taking - they are often the culprit in these cases.)

Egads, those mushrooms ARE cute. Using them as a wrap is a cool idea; I can imagine them stuffed with sauteed vegetables & maybe been a little cheese? (Or lining the walk to my front door on Halloween!)
Vamp, I'm sure the salesperson wasn't even thinking when she said that. She was probably jealous of your gorgeousness (is that even a word?) & was punishing you for it! (Remember the old commercial where Andie McDowell said "don't hate me because I'm beautiful"? With your exercise & paleo regime you probably intimidated her! Erase her from your mind!!!

Egads those mushrooms are pretty. Are they strong enough to use as a wrap? What is the texture like? This could be my answer to the tortilla wraps I miss so dearly.
JKL - Thank you for your kind words, I don't feel any of that right at this moment. How did the weights go? I don't do the Wendesday exercise anymore - worried I will be too tired for work on Thursday and I have just been so tired for the last 5 days. I have got in a couple workouts - small ones though.
So my Naturlopath says Keto is a 21 day diet only, does not recommend any longer on it. 21 days and switch to Paleo, that's lucky seeing as that is my goal - Paleo. I brought him my latest blood test (from July) and it shows my cbc and hb are low, no surprise on the cbc it seems to be low every other test. (Can't be too important if my doctor didn't follow up with me, right or it's just the fact that my doctor has two full practices and missed me!) He wants me to get back to the doctor for a more thorough blood test, need to know why I am anemic (at least this helps explain the fatigue). He has me on a new magnesium for my joint pain, thank you Tamoxifen, a herb ordered to help with my memory - he says all but one of his clients has noticed an improvement in memory - can't wait to try it. He talked me into trying the mistletoe, I read that Susan Summers used it to fight her breast cancer years ago, it's what they use in Germany, so lets give it a try and hope that it helps keep the cancer away. I may need to take on more clients at this rate. lol

I bet Mick & the boys would be proud to know how they helped pull you through! It just struck me....you're of Russian decent?? Oh boy, oh boy, oh boy...I'll be hitting you up for recipes! My mother used to make a potato salad, soaked in vinegar and onion slices, do you recognize? She always called it Russian Potato Salad. I'd love it if you had a recipe!
Vamp - Obviously the lady not only needs glasses, she needs a big dose of ginkgo biloba for her memory after JUST reading your ID...you got ID'd for beer???? Lord girlfriend, I haven't been carded since the wheel was invented! That right there tells me the lady is either nuts, jealous, catty or plain stupid. I find it hard to believe that you look 20 years older than your age.....you don't! (is that why you took your profile pic down?) Your voice is even young lol! So no worries, you don't look 60! Mushroom texture is spongy, like a regular mushroom that has been cooked in a stew, so no go on regular wrap. They are usually stuffed with goodies and poached in a nice broth (like the stuffing JKL mentioned) I'm working on a 'holy grail' wrap myself but haven't got there yet. Most recipes are more like pancakes. When I'm home I have a new one to try so I'll post asap. Might be carby though....treat stuff. Mistletoe.....you'll become a kissing bandit LOL! Be sure to run this by your MO. My MO strictly forbids me to take any herbal medicine without running it by him first just in case it buggers up the tamox. So no more feeling down....ya young sexy thang!

JKL - What a great idea! I can hang the dried fungus from my hedges and scare the heck out of the neighborhood...well except for the Asian family across the street....I might find the fungus missing in the morning...now if I could only get them to hang almond flour it would be an even trade
))) The mushroom fungus can be stuffed with anything you'd like as long as they are rinsed really well and soaked to soften for a few hours. They lend themselves well to so many cuisines besides Asian.....and can look gorgeous on a plate. Never though of cheese....another great idea! Thanks!

Ok kids, I did it again...humiliated myself. I went out foraging for a meal I could eat in my hotel room. Found a great little seafood tray, no crappy stuff added. Got out of my car, dropped the bag and the seafood exploded out of it's container inside the bag. Not wanting to have a fishy, dripping bag while I walked through the hotel lobby, I scooped it back into its container, sealed it up and went on my way....REEKING of fish.....I mean, cats were following me!!! The ride up to the 11th floor in the elevator was interesting. People were sniffing and looking around. My crimson face gave me away. I don't even want to THINK about what they said when I got off the elevator....probably "thank god the chicken of the sea is gone"....or worse....*blush*
I'm feeling the Rolling Stones tonight, so I'll leave you with one o' my favs to rock out to....while I eat my seafood....after scrubbing my hands like a surgeon...…:)))))))))))))))))

Russian descent! I am a Russian speaking Ukrainian Jew, who didn’t speak English until immigration to the US 23 years ago. Still make a mean hot borsch in winter and cold borsch in summer, and my herring under the fur coat has been known to produce tears of nostalgia among the expats from the Soviet Union.
Egads, I think the salad your mother was making is the famous Olivie. It was invented by a French chef who lived in Russia in the 19th century, I believe. There are a 100 variations, probably. Here’s mine:
5 big potatoes
6 long carrots
1 jar of Dill pickles
4-5 cups of smoked turkey (or any type of cooked or smoked meat or poultry), cubed.
1 can of peas
1 can of sweet corn
Mayonnaise and Runch dressing
Boil potatoes and carrots together in their skins. Once they are done, cool them, peel them and cube them. Cube the pickles. The smaller the cubes are, the better will the salad look at the end. Drain the peas and corn. Combine everything together and add mayonnaise and ranch (3 parts mayo, 1 part of dressing). Make sure you add enough mayo/dressing so the salad is not dry. Add salt and pepper to taste.
Optional add ons:
Hard boiled eggs, fresh cucumbers, scallions or regular onions.
This salad is very forgiving. If you have a favorite ingredient, cube it and add it.
This recipe will produce enough salad to feed a small army. I still make it for all the special occasions and so far the only person who dislike the taste of it is my daughter’s American boyfriend. She almost broke up with him because of it. To make a dinner for 2, use 1/3 of the proposed quantities.

Oh, hey! I'm descended from at least one Ukrainian Jew, giving me a surname that people say sounds Ukrainian but the meaning of which is uncertain.
I'm finishing my 9th week of keto. 10# down, more or less, fasting blood sugars generally 10-40 points lower. FBS this morning was 80--I haven't seen that in a long time. I am getting a little antsy about what my LDL and HDL might look like at this point.
My lovely wife heated up CostCo pulled pork (no carbs) but we had no sugar-free barbecue sauce in the house. She is now making GF keto sauce. I am making mashed cauliflower. In case I haven't posted the recipe:
Mashed cauliflower
Cut the florets from a small head of cauliflower. Don't use stems. Break florets into small pieces. Steam in a covered stove top steamer until a fork easily goes right through them. While you wait for this, liquify about 5T unsalted butter. Shred up some kale, cheese, and prosciutto if you like. Remove cauliflower from heat and uncover. Rest it for a few minutes. Drain any water that collected in the steamer insert. Drain the water from the bottom pot. Move the steamed cauliflower to the bottom pot. Mash with a potato masher until it looks pretty mashed. Add the melted butter, granulated garlic, salt, and pepper. Other herbs would work, too. Use a handheld blender to blend until it looks like mashed potatoes. Spoon some into a bowl. Add cheese, prosciutto, and kale. Or not. Add more cauliflower. Top with cheese and meat if you want.

Egads I was just thinking those pics are why people become vegetarian!!! Ksusan great that your glucose is decreasing. I will admit that my cholesterol is slightly over normal, but my HDL went up so i dont think its a problem.

Good evening Ladies,
Appt. with vascular doctor was just a 3 mos. follow up on the blood clots in my lower left leg. They're still there but the clot that was spreading upwards in my Sapheous vein is now just scar tissue. I have venous insufficiency in my left leg from the massive reconstructive surgery I had back in 2000 at the Mayo Clinic in Arizona for primary bone cancer in my left hip and the valves in my left Sapheous vein are shot, so the blood pools in my lower leg. Then there's the Faslodex for my BC that increases my chance of developing blood clots. Oh yeah! NOT! The vascular doc wants to do a procedure to close the vein, however, he can't until the blood clots resolve. Hence, the blood thinners and time.
Oh Egads! - Poor you! How horrifying to know everyone can smell the fishy odor as you cringe in embarrassment. But on the upside, the odds of you ever seeing those people ever again are very slim. Plus, if they can't take a joke, shame on them!
Vampeyes - I had a similar situation happen several years ago, except it was to a woman whom I was having lunch with. She was about 59 at the time and I was 52. A waitress approached our table and asked what I and my mother would like to order. Initially I chuckled and told the waitress that my friend and I were nearly the same age, then I glanced at my friend and saw the expression on her face and felt horrible for her. She was a very sensitive individual and had some serious medical issues.

ksusan - I wonder if my Naturalpath only said this because I stressed how I was defeated by keto, but felt I could do Paleo. I suffer with depression and this time of year it is bad for me, he knows this, so I wonder if that is part of his reasoning for the 21 day statement or if he truly feels this as last time I seen him he wanted me to start Paleo and go Keto with me lined up to eventually take a Keto course. Fantastic job on 10 weeks down, is your wife doing the Keto plan with you?

Inna - your post made me chuckle, thanks for that! Have you thought that maybe it's the not having the eyebrows that have made you stand out with beauty? My grandma and her sisters use to draw their eyebrows on - I thought this looked funny, I was little though so what did I know. You have a doppelganger living in my town, I had to take a double look at you and where you were from. You are truly a beautiful woman inside and out.

Junie - I tried to do the brussels sprouts once and apparently I bought them too big and it was an epic fail in this house. Eggplant doesn't go over well either. hahaha

Vampeyes, that makes sense. My naturopath has left the practice. Got to find someone new. I have concerns about keto; I think there's a lot to support a modified Mediterranean diet for me, but I agreed to do this for 3 months and assess.
My wife had a number of surgeries before she was 10 and acquired hepatitis C from transfusions she didn't know she'd had. As a consequence of undergoing the 11-month hepatitis C protocol, she became intolerant of gluten, dairy, eggs, legumes, celery, apples, pears, and carrots, so we can't eat the same diet. Most of the keto entree recipes include eggs and dairy, most processed meat without nitrates has celery, and a lot of keto baking uses nut flours that she was already allergic to. There is a paleo bacon we can both eat, we can eat hunks of meat, and we can share some vegetables. Olives, pickles, some vegetables. I made cauliflower mash last night. She can tolerate some stick butter (whipped has added milk fats that knock her down) but I plan to experiment with olive oil instead next week. As you can imagine, it's a bit of a challenge to have us over for dinner. It's easiest to do it buffet-style.

JKL2017 - Thanks for the advice on the GI issues. Did you get tested for a magnesium deficiency or did you just add it to your diet?
Ksusan - yeah, I am starting to feel like my husband and I are the people nobody wants to dine with anymore either.
Egads - sorry about the fish dinner. It just stinks (literally) when you try so hard to be compliant with what you eat and then you drop it. Oh well, at least you got to cuddle with some cats for the evening.

ksusan, try to use ghee for your wife. It's clarified butter, which is butter without milk solids. As a matter of fact, you can use it as well. If you need to sauté something, it's much better to use ghee than any other oil or butter because it adds a sweet taste to the food. Not all ghees are created equal, though. This is the best one, in my humble opinion. Sold in Whole Foods or on Amazon.

Cowgal, when I was experiencing a lot of SEs on anastrozole, my PCP suggested magnesium to help with fatigue, loss of bone density, sleep issues, joint pain & muscle aches. My magnesium levels were never tested but I was desperate for some relief so I began taking it. (My MO didn't think it would help but wasn't opposed to my taking it.) After several months with SEs PLUS additional gastric issues, I discovered that many forms of magnesium could cause such problems (even though neither my PCP nor my MO ever mentioned that possibility). Stopping the magnesium helped, as did switching AIs & changing my diet (to paleo). I had to make several changes to get relief & my doctors really weren't much help. Hope you find an answer!

Yeah, I found a Paleo friendly cupcake recipe. Gluten-free too! I have not tried them, but thought someone might be willing to try the recipe.
Figgin' Fantastic Paleo Diet Fig Newton Cupcakes (Gluten-Free)
Servings 8 cupcakes
Ingredients
Filling Ingredients
- 1/2 cup dried black mission figs stems removed
- 1 tablespoon unsweetened applesauce
- 1 1/2 teaspoons agave nectar
- pinch cinnamon
Cupcake Ingredients
- 1/2 cup + 2 tablespoons almond meal
- 1/2 cup coconut flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1 tablespoon vanilla extract
- 2 teaspoons lemon juice
- 1/4 cup coconut oil melted
- 1/4 cup honey
- 4 large eggs
- 1/4 cup applesauce
Frosting Ingredients
- 1/2 cup coconut oil
- 1/4 cup honey
- Dried figs for topping optional
Instructions
Filling Instructions
- Place figs in a food processor with all other filling ingredients. Process until smooth.
Cupcake Instructions
- Preheat oven to 350 F.
- In a large mixing bowl, combine almond meal, coconut flour, and baking soda.
- In a small bowl, combine salt, vanilla, lemon juice, coconut oil, honey, eggs, and applesauce.
- Mix the wet ingredients into the dry ingredients.
- Fill cupcake liners 1/4 full with cupcake batter.
- Add a heaping tablespoon of fig filling over batter in each liner.
- Top filling with enough batter to fill liners 3/4 full.
- Bake for 20 minutes or until a toothpick inserted into the center of a cupcake comes out dry.
Frosting Instructions
- Place coconut oil and honey in a small bowl and use a hand mixer or an immersion blender to fully mix the two ingredients.
- Leave the frosting on the counter for a few hours to thicken. It will be more runny right after mixing.
- Spread on cooled cupcakes.
- Optionally top with sliced dried figs.
Recipe Notes
These cupcakes work just as well without the glaze, but they won't seem quite as cupcakey.
The cupcakes stick to regular cupcake liners, so be sure to use grease-proof liners or silicone liners.
