JKL - look at you towing the line! Do you know the name of the new machine at the gym? Sounds cool!! Mall walking..what a way to get low cardio AND shop at the same time....that's what I call a workout....wish my gym was a mall lol!! Get pics of the paleo lunch...we need more food porn!

Vamp congratulations on your weight loss. It is fun to be able to fit back into “outgrown" clothes. I have been shopping my closet since dropping one size. I agree that fruit is important. Berries are full of cancer fighting nutrients and an apple a day keeps the onc away.
I can't figure out how to count carbs (or maybe just bone lazy) but I just eat half of carby things compared to before and double the veg. Also no high fat dairy or sugar and waay less wine. 😢 I don't have gluten issues so I do eat some paleo unmentionables (i.e. grains and beans). I wasn't looking to lose weight, just eat an anti-cancer diet but it has been a benefit to get smaller. Now I want to hold on to my new good habits.

DearLife, my DC 😉 pan fries then bakes the chicken. (I couldn't tell the chunk to which you were referring. It came out as a rectangle on my phone.) The coleslaw was so yummy -brightened with apple and loaded with garlic.
I too am trying to improve my odds with a healthy diet, but I need to avoid weight loss. Without my carb load, I think I might disappear. One must also weigh the cost of a life lived without muffins. 😊 Except for my weekly cheat meal, I rarely have bread and only have rice about once a week in a much reduced portion compared to what I used to consume. I'm with you on the dairy (I will cheat once a week for some pizza or lasagna) and unfortunately the wine too, but that cheat meal has it all!

The rectangle was the broccoli! A nice big chunk. Thanks for letting me know the symbol didn't transmit. Sometimes I play with the icons that come up on my iPad when I type a word but I will stick with the standard ones so you all don't think I am addicted to rectangles 🙄.
My friend told me not to lose more weight so I am trying to stabilize too but I have developed paranoia about many foods. I have read that healthy fats e.g. avocados, peanut butter are good for added calories.

TwoHobbies - my days are usually around 50-70 carbs, I have a few Vegas days in there, but my good days are usually low on the carb side. Cutting out all those breads, and pastas etc has definitely made a difference. Yesterday was back to 58 carbs and yup I ate a banana, because when you wake up around midnight and feel like crap sometimes a banana helps with that awful feeling. lol
Pi - is that rosemary chicken? Oh so yummy, your dinner looks fabulous! Pi you really got to try the lemon muffins, now yesterday I made them with Swerve and Stevia and they were not as good as the first batch that was just made with Swerve. Trying to use up the yucky Stevia I bought!
DearLife - Thank you, it is a wonderful feeling isn't it. Can't wait to lose the last 12 and just work on maintenance! If only I could pick where those last 12 came from. haha

Since I'm eating in a new way, I'm now cooking in a new way. In addition to roasting lots of vegetables (broccoli, brussels sprouts, carrots & cauliflower), I've been trying some paleo recipes this week.

Egads, it was my impression that there was an app but I cant find it so I am probably wrong. i had thought they were advertising one as we log in at one time.
JKL I eat so many roasted veggies. I just love them and its a great way for me to get quantity. One of my favorite things to do with medjool dates is just stuff it with a brazil nut. But be careful if you are watching carbs. They are not low carb at all. I am going to try that bacon dressing recipe. We have a local place that used to have my favorite salad that they discontinued. The salad dressing was warm and divine and I suspect similar to that recipe so I cant wait to try it
I also have to try some of those lemon muffins for my (formerly) diabetic husband. He loves cake so that may be a good treat for him- while I love ice cream so I will do the ice cream recipes for me. I need to get supplies for these. Do you girlsfind coconut flour at your grocery stores? I know they have almond flour-not sure about coconut.

TwoH, you're right about the carbs in those liar balls! (Those dates are delicious but super high in carbs!) I used unsweetened organic coconut & calculated each ball to be about 10 net carbs (I made them smaller than the recipe suggested). That's a lot of carbs for a little snack but not terrible for an occasional treat (plus, my DH is "helping" me eat them so I won't be having too many).
I'm still so new to paleo that I'm making a lot of things that I won't eat often just to try a variety of recipes. And counting carbs is still very new to me so I don't yet have a good sense of how many carbs I'm eating unless I look it up. The cooking & calculating is pretty time-consuming at the moment but I assume it will become easier over time.
And, in answer to your question about coconut flour, I've found that all my local grocery stores have several paleo-friendly flours (including coconut). However, the paleo flours are generally sold in much smaller quantities & are more expensive. I guess healthier eating is just going to cost a lot more!
Let me know if any of those ice cream recipes are particularly good - we're having a hot summer here! And do you have any one-pot (or baking sheet) paleo recipes that you can recommend? (I can be a very lazy cook!)

Medjool dates must have been invented by the gods! And then bacon must be the meat of the gods. So good.
I dont really use recipes a lot. I am the laziest, tiredest cook ever so I do simple and here are my lazy dinners:
1. Roasted veggies of all kinds on a sheet pan with olive oil and seasoned salt or chile powder. The last few minutes I put my shrimp in the pan. DS can eat fajita style with tortillas if he wants. DH doesnt like olive oil so he can eat whatever he damn well wants! Dont ask your chef to alter her recipe.
2. Roast a whole organic chicken or bake salmon. Throw in a sweet potato to bake and steam some broccoli. Make mashed white potatos so son will eat roasted checken or salmonwith me. Chef does cater to his every wish since he is her baby-unless friggin tired. In the summer i put the chicken in the instant pot to not have the oven on for 2.5 hours. Sometimes I put jerk spice on the chicken and fry a plaintain for that carribean feel. Add mango, cucumber, jicama salad.
3. Some kind of salad with chicken in it. This is more likely lunch or eating-out compromise.
4. Chicken wings baked with dry rub on them. Serve with raw carrots and celery. Ranch dressing for son.
5. Organic ground beef added to Newmans organic marinara. Cook pasta for DS and spiralize zucchini for DH and I or just slice zucchini strips and panfry if I dont want to mess with the spiralizer. I am going to try pesto too.
6. Pork loin is easy to make in a slow cooker or instant pot and its also good with some kind of dry rub. I will cut up a sweet apple like Gala and maybe add some frozen cherries, cinnamon and butter (Kerrygold of course) and bake it. If the apple is sweet you wont miss the sugar. Cucumber salad with a little onion and tomato...
7. Skirt steak in barbacoa and pan fry bell peppers and onions. Dice an avocado and add Frontera salsa verde. Try really hard (but fail)to not eat this with a soft corn tortillas gently warmed over the gas burner.
8. Laziest of all is cheese omelet with avocado. Good when you are totally unprepared and didnt thaw meat.
i keep a lot of veggies on hand for roasting or salads to accompany anything and to fill up where we were used to eating rice, pasta, bread. I also keep frozen fruit too and then if you dont have watermelon or cantaloupe or strawberries for “dessert” you can make a compote like I mentioned.

TwoHobbies you made me laugh, love that post. I am the opposite of you, I love to try new recipes. I just made 3 blueberry pies and a batch of blueberry jam for DH and DS's. DS1 wants a blueberry coffee cake, that will be tomorrows project, I don't have the energy to do anything else till dinner prep time.

Hey, Vamp, good to see you! How are you feeling? I've been thinking about you & hoping you're on the mend. And yes, bacon is good wrapped around almost anything! I'm thinking about coating it with some paleo-approved chocolate - what do you think?

JKL - I am not sure about bacon and chocolate, my husband thinks that would be tasty. Really though bacon with anything should be quite tasty! I am doing ok, still have sad moments over my stepdad (I don't think this will ever go away) and the nausea is still a pain in the butt. I have an appointment on Tuesday with the Doctor so hopefully will get some tests done or answers.
Soooo as I was sucking the air out of the Ziploc bag the pies were in I sucked up a pie crust crumb, just have to say that, that was a lousy Vegas trip! Pies were a hit with the men, first time making blueberry, hope the jam is just as good! I may have to try a blueberry minute muffin for myself this am.

Vamp I was trying to point out how you make alterations for non participants and well, you see the struggle! My son at one time wanted to be a chef and he gets so annoyed if you ask for changes at a restaurant because the chef is the artist. So I decided to use that at home. DH puts coconut oil in everything so I dont really like his veggies either!
That is definitely not a worthy trip to vegas- one little taste of pie crust

Thanks for the warm welcome. I've discovered that every day brings something new. Yesterday it was about Chinese food. I've been craving it for days and last night I caved. It didn't live up to my expectations, that's for sure. So it's off my wish list.
As far as weight loss goes, it's been real slow but there is a learning curve. I know what food I should eat but I'm easily tempted. But I'll get there.
Have a fabulous week everybody. Tomorrow I get to spend the day with 3 gals I graduated high school with 52 years ago. Wish me luck. That temptation devil is already tapping me on the shoulder. Bastard.

Vamp, I didnt take any offense at all. i knew you were chuckling at my sense of humor. Quinoa is not considered to be Paleo and I dont think its low carb or Keto either.
Magicalbean I will just tell you it does get easier and the key is to be on a better path most days. One day you notice how much better you eat and you arent really missing a lot of it and the things you do miss you miss less. But we live in a world of temptation so it takes a bit of time to get there.

Hi, everyone. My A1c is going up (thanks, Tamoxifen + menopause), so my PCP has me trying keto. After only 3 days my fasting glucose is down 23 points, so I'm cautiously optimistic. I'm vegeprefarian, so this diet is a challenge!
