Greek chicken

Greek chicken (adapted from Weight Watchers Take 5 cookbook)
Season 2 lbs chicken (whole cut up or breasts) generously with salt and pepper. Brown in 1 tsp olive oil until brown (4 min each side). Add 1 14 oz can diced tomatoes with italian seasoning and simmer 8 minutes. Add 1 package frozen artichokes or 1 can artichokes (plain not marinated) and about 12-20 pitted kalamata olives. Simmer until cooked through (another 5 minutes or so).

Serve with couscous or brown rice.
