I got this out of a low carb cookbook with a few modifications of my own. Saute an onion (cut kind of chunky) in your oil of choice until soft. Add bite size pieces of eggplant & zuchinni (about one cup each), and red,yellow,orange & green pepppers (about a cup mixed). Simmer until getting soft, then add one small can crushed tomatoes. Simmer until it "comes together". you'll know.
top off with 1/2 cup chopped black olives, and a couple of tablespoons toasted seasame seeds. Really, Really Good!!!

    I make something very similar and it IS delicious! I saute the onion and zuchinni and add a 15 ounce can of petite diced tomatoes in italian herbs and a dash of balsamic vinegar. So good as is or over noodles....

    I also make something similar but add 2 minced cloves of garlic (ya gotta love garlic!). Instead of sesame seeds, I sprinkle the mixture with fresh Parmesan cheese and serve it over brown rice. Very good!
