So I made pancakes today. You have to keep making them until you use all the batter, right????

What to do with leftover pancakes?

Um ..... instead of using 2 pieces of bread to make a peanut butter and jelly sandwich for Teryn, we used pancakes!!! Oh it was yummy! And of course, she thought Mommy was so funny and we were so bad!!!

How do you make-over a meal??

    that sounds like a good idea. im not very creative in the kitchen. i usually throw all my leftovers out. (and yes in the back of my mind i hear my mother saying "dont you know there are starving kids in etheopia"). but i still cant bring myself to save anything. so i guess im kinda a bad girl also

    We freeze leftover pancakes and waffles. Put them in the toaster to reheat and get crispy again.

    I think a cheese sandwich with pancakes would be good too.

    My husband thinks the grossest thing I ever invented was my "tortilla dog". Hot dog and shredded cheese wrapped in a tortilla and microwaved. I always seem to have leftover tortillas and leftover hot dogs. Why do they put 10 hotdogs in a pack and 8 buns in a pack? -- Donna in VA

    I have kids and husband hanging around the house while I'm at work. So leftover stuff like that I leave out and sometimes it's gone when I return.

    I like a mid-morning snack at work so I might drip some syrup on it and take it in a baggie.

    On lean weeks,mostly due to the darn co-pays for meds and dr visits,I would make pinto beans one day,the next day I would make chili with the beans and the day after that I would make hot dogs using the chili.Cheaper grocery bill anyhow.

    I make homemade croutons with extra italian bread, hot dog rolls, whatever. I cut it in cubish type pieces, drizzle olive oil, sprinkle italian seasoning, some red pepper flakes and garlic salt and either bake until crispy or freeze in a zip lock bag until needed.

    I try and make sure anything left over is popped in the dogs dishes, otherwise I would eat myself silly !! Isabella.

    I am involved with a deal called Once A Month Cooking. The idea is, you cook like a fiend for a couple of days, and then have meals for a month. Everything goes in freezer bags and gets frozen. I would freeze the left-over pancakes. But then, I would freeze almost anything! LOL

    I have looked at websites geared towards Once a Month Cooking. It looks like a really good way to minimize cooking time on a daily basis. I even bought a Food Saver vacuum thingy and never went any further. LOL I just have to get my rear in gear and give it a try!

    Fancy, I did the once a month cooking August 2005 in preparation for surgery wher eI knew I wouldn't be mobile for at least 2 weeks(turned into a 3-4 month nightmare but that's a different story...) Anyhow, it was huge amount of work initially(between the shopping and prep)but the pay off was huge too--good fresh meals with little effort each night. I hope to start doing this again in between chemo weeks so dinner can be thrown together by anyone in the house when I am too sick or whatever. The saving dinner website has a email program for frozen meals--I might try that.

    You can freeze the pancakes. Then heat them up in the microwave. I do it all the time. French toast too.

    I bring my leftovers to work for lunch. Saves money, I eat less and eat healthier. Or I freeze them. Whenever I cook I make double and freeze 1/2 for another time. If you freeze leftover roasts (turkey, pork loin etc). you can steam them. Place some water in a pot. Put meat wrapped in foil on a steamer in the pot and heat through.

    I used to cook pancakes and bacon for my children when they were still in school. All I had to do was heat it. Well, I suppose the bacon wasn't the healthiest thing to serve them, but what did I know!

    She still thinks making sandwiches out of the pancakes was so funny!!

    Whenever I a make a chicken, after we eat the main parts, we use the back, wings and pick the bones and I make a chicken chile relleno casserole! Yum Yum!!!!

    INGREDIENTS
    1 pound chicken, shredded or cubed
    1 onion, chopped
    2 (4 ounce) cans whole green chile peppers, drained
    1 1/2 cups shredded Cheddar cheese, divided
    4 eggs
    1/4 cup all-purpose flour
    1 1/2 cups milk
    salt and pepper to taste

    DIRECTIONS
    Preheat oven to 350 degrees F
    Cook the onions (but most of the time, I use onion powder unless I am using ground beef then I will cook up onions with the beef)
    Arrange 1 can of the chile peppers on the bottom of a big baking dish. Sprinkle with half the cheese and top with the meat mixture. Sprinkle the meat mixture with the remaining cheese, followed by the next can of chile peppers.
    In a medium bowl, combine the eggs, flour and milk, whisking until smooth. Pour this into the baking dish over the chile peppers. Season with salt and pepper to taste.
    Bake at 350 degrees F for 45 to 50 minutes. Let cool for about 5 minutes before cutting.

    -- My friend gave me most of the recipe but I have changed it by adding the chicken and onions. In addition to that I add garlic powder and a tsp of sugar and some cinnamon to the egg mixture. It really adds. When I leave out the cinnamon, I can tell the difference!!
