So...whats for dinner?

Susan- LOVE the rompers!

Susan - Cute rompers!
Had a "mini-pizza" made on a small naan, with pesto, some chicken breast, a few thin slices of chicken bratwurst, mushrooms, fresh tomato and a sprinkle of cheese. DH had it ready to pop in the oven when I came home.
Am saving my appetite today for dinner out prior to seeing La Boheme. We are celebrating Father's Day a day early and also 27th anniversary on 6/30 (will be in NYC area visiting DS & DD). Looking forward to a nice evening.

Friends from Louisiana are in town and making me Red Beans and Rice. I'm really excited!
-
lillimae - yummy!! Lucky girl.
For the very first time in my long cooking life - and even longer life as some of you know my age - I made an Italian sauce from real honest to god fresh tomatoes - not canned. I did help my Grandma & my Mother bottle fresh tomatoes, but that's not really the same thing.
I had a bunch of tomatoes that needed to be used & it was almost too late for salad, so I tackled a Rosa Sauce. It came out pretty good if I do say so myself. Compiled from 6 recipes & meatless. Hmmmm, maybe Vodka sauce next time? Served over Farfalle (no for heaven's sake, I'm not ready to try fresh pasta yet) with steamed spinach on the side. (it needed to be used too), There's enough sauce for one more meal next week.

At 10pm last night, the thermometer was showing101F degrees. The air conditioner, (crossing my fingers) is working perfectly--even during the day, it comes on for about 30 minutes each hour, but the garage door quit working again. It's too hot to go out into the garage, so the front door is being used again.
DD was busy with some work stuff today, so she came over yesterday for fathers' day. Sharon made the chicken & dumplings recipe and I made the cream cheese pie and DD successfully convinced me (not that it took much effort on her part) to make more twice baked potatoes.
The grill, when covered, makes a great oven and it doesn't heat up the house. I've figured out the knob settings needed for various temperatures.
The potatoes were baked "in" the grill.
I also made banana bread and baked it out "in" the grill.
A frozen a year ago chicken (that was apparently wrapped well as it still tasted OK) was also cooked "in" the grill.
DD left with the remaining twice baked potatoes (3 halves), a lot of the whole chicken to shred for burritos, a couple of slices of the cream cheese pie and 1/2 of the banana bread.

Last night's dinner out: Split crab cake appetizer with DH, DH's main course was paella with extra shrimp, Mine was pasta w/grilled shrimp, scallops, artichoke & mushrooms and we split an order of roasted brussels with pancetta & vanilla butter. Had a glass of Sauvignon Blanc. It was all delicious!

Last night was leftover romaine salad (from Friday night’s softshell crab Louis) with baby arugula, rainbow cherry tomatoes & vinaigrette, followed by Atkins lasagna (which was much better and more substantial than I’d expected). Father’s Day brunch out was chicken-giardineria quiche with salad, followed by a bananas Foster bread pudding we shared (and most of which we brought home). For dinner, just gonna sit here & burp.
-
Today's meal was an egg salad sandwich on thin slices of rosemary/garlic bread. It's way too hot to eat & I have to force myself to stop & consider it. I'm on a roll with Silver Sneakers classes 2x a week and water aerobics 3x a week and usually the treadmill added a couple of days. Blood work was all good for the 6 month MO doc appointment tomorrow & I have lots of energy, so obviously one meal a day or two very small meals is working for me. Maybe I'll have some peaches & cottage cheese later tonight. Or maybe just some nice cold celery sticks.
-
Might make myself a chopped liver (my heritage’s soul food) sandwich on low-carb bread, &/or a Caprese with heirloom tomatoes & homegrown basil. Or whatever Bob wants to order out—it’s still Fathers’ Day after all.
-
7:31pm. And it's 114F and most of the afternoon I've been having to work in the garage
-
Bob went around the corner & brought back dinner from En Lai. It’s nominally Chinese, but calls itself “Asian.” (I think what it does best is Thai). Bob likes it because they serve brown rice, but I find that everything on the Chinese side of the menu has the same heavy, overly salty & sweet brown sauce; and here in the heart of one of America’s largest SE Asian communities, it seems to use only American vegetables, (broccoli, carrots, celery, onions, etc.) albeit not overcooked. It’s small-town Midwestern Chinese-American: as if they couldn’t find bok choy, bean sprouts, Chinese broccoli, choi sum, bitter melon, etc. and had to make do with what they could find at Wal-Mart or Aldi. Having been raised on Cantonese-American back in NYC (both in the neighborhoods & Chinatown), as was I, I’m surprised Bob likes it so much. Hot & sour soup, bland veggie spring roll, sesame grilled chicken with veggies, more mixed veggies, and BBQ pork satays with gloppy sweet brown sauce (like diluted hoisin mixed with Karo syrup).
But I’m not gonna look a gift horse in the mouth—so I said “thank you, I love you,” and took some food.
-
My mom and dad used to have similar issues with Chinese food. Dad spent 8 or so years in mainland China and mom spent 2 years there.
Dad spoke fluent Chinese and mom had traded "American cooking" lessons for "Chinese cooking" lessons.
The only place that they liked was a restaurant at the Chinese-American center.

Celia, your dinner out sounds yummy to me.
Eric, I know you enjoyed the early Father's Day with Sharon and DD. All your food sounds good, too.
We're having chili weather here in northern MN. I cooked a lb. of dry pinto beans earlier after doing a "quick" soak by bringing them to a boil in water and letting them sit for an hour. The meat in the chili is 8 oz grass fed ground beef and 8 oz ground pork, sautéed with finely diced onion. The two large cloves of garlic, diced, went into the beans raw. After the beans were tender, I added a small can of tomato paste, half a can of Rotel tomatoes, cumin, chili powder, s & p.
I'll grate some cheddar to sprinkle on top of each serving and make a salad. So dinner is mostly done.
Last night's dinner was store-made fresh brats, slowly steamed in beer and then browned. One side was skillet potatoes that were delicious. Russet potatoes peeled and sliced. Tossed with a little oil, s & p, garlic and onion power. Browned in a skillet and then cooked with a lid on until tender. Also salad of kale and assorted crunchies with added avocado.

dayThat's what I get for not doing the work myself.
The old Volvo...the prior owner didn't have time to fix the air conditioner himself, and I didn't either...so he took it to a repair shop. They apparently overcharged the system. While sitting at a traffic light on the way home, there was a loud pop and a long hiss.....and then no air conditioning. Fortunately it was only 10 minutes from home.
I'm hoping it's the pressure relief valve and not a blown hose...the pressure relief valve reseals and little work is needed to get the system up and running again. If it's a busted hose, then I'll have to find one, install it and take a couple of hours to do a full air conditioning service job.
I always try to undercharge the systems because I know what happens when one is in stop and go traffic and it's "9 billion degrees".
When it cools down to under 115, I'll go out and hope I don't see anything wrong with the air conditioning hoses or the compressor itself.
Sharon made chicken enchiladas for tonight....she said she almost didn't need to bake them....it's 119F outside right now and it's supposed to be a couple of degrees hotter tomorrow.
.....sigh....
Edited to add...I went out and checked...it's either the compressor or the high pressure hose....so it's 3-4 hours of work...1 hour of "I've got to do it work", 1-1/2 hours or so of letting a vacuum pump doing its thing (I can be inside while that's going on) and 30-45 minutes to put new Freon into the system.
Fortunately I have mom's car, so I can drive that to work without "dying"....
Double fudge. :-)
more addition....blown hose....the "gotta be outside to do it" stuff is probably 30 minutes. The parts are on the way. I can get the stuff locally for about $400, or on-line for $80, including 2 day shipping....it will be here Thursday. It should be down to only 115F or so that day! :-)

I have been reading, but have been too fatigued to post. Lots of guests coming and going. And, another romper made! This one was a solid lavender color; a remnant from an outfit that I made for Lauren when she was about 2. This is Olivia's dad's favorite color. She spent today in this outfit. She played in the mister spray, in the dirt, all over the yard. She was dirty. The romper was dirty. It didn't restrict her movement at all.
Tonight we grilled some chicken thighs and wings, cooked up some potatoes in a fry pan, and made some cole slaw.
Tomorrow is Cycle 4, week 2.

What happened to my post? Eaten!!!!
I don't have the energy to write a long post a second time.

Thinking of you Susan..

In your pocket for tomorrow, Susan. (And stay cool, Eric).

Thinking of making meatloaf for dinner.

Yesterday was my 6 month MO visit. Blood work mostly good. Nothing alarming that points to BC. Of course we all know that once treatment is through, there really aren't any more tests (read scans). At 4+ years after my recurrence, I'm grateful for NED, but had to chuckle at his answer to my question if there was anything particular I should look out for (again). His answer was 'you'll know'. All of his patients that came back with mets correctly felt that something was wrong inside. (WTH ????). "and so it goes..."
I stopped at Katz Deli on the way home. They have a lunch special - half of one of their signature sangys plus a side for $8.50. I ordered a side salad that came in a 10" bowl, piled at least 3" high. Wow, that would have been an entire meal. Then I got HALF of a French dip. The two pieces were each more than 6" long & 6" wide. I can't imagine what a full sandwich looks like. Two 12" sections"? I was disappointed that the roll of the French dip was soft, squishy bread. I prefer something more robust - like a sourdough. Next time I'll have a Reuben. But way too much food.
-
Susan, amazing that you kept a remnant that many years! What a blessing Olivia has been/is for you. I wish I could send you some energy and stamina.
Last night's chili was very tasty and satisfying. Of course there are leftovers.
Not sure what tonight's dinner will be. Depends on dh, who will heading off to Kansas City, MO, tomorrow to attend a national wood turners' gathering. I will be on my own without a vehicle until next Monday. I am stocked up on food in the refrigerator and freezer so eating definitely won't be a problem. This trip is his present for his 78th birthday on June 8. I hope he has a great time watching demonstrations by some of the country's best wood turners.
Back to dinner. We may have hot dogs with chili, with or without buns. And another good salad. I will let him decide whether we use our tee time this afternoon at 3:50.
-
Eric, sorry about the A/C problem with the car. Hate to think of you doing automotive repairs in that temperature. I'm enjoying todays high 60's temperature with sunshine making it a pretty day. We're supposed to be cool all week. Break my heart!
Joyce, your Sunday family get-togethers bring back memories of all those Sundays when my family gathered at my parents' house. It's difficult for me to associate heat with NH. We enjoyed some summer visits to your state during our rv travelling days.
-
120F degrees. That's getting close to 50C.
Note the "partly sunny"...
-
eric, ! Even Midnight Oil refers to the Aussie Desert in “Beds are Burning” as ”…lives & breathes at 45 degrees”)!
Mammo was all good today—the girls are fine. Bloodwork was pretty good (dramatic improvement in lipids after 6 wks on Crestor, even glucose almost normal). But gradual mild anemia, steady decline in hemoglobin from 13 in 2014 to 11.7 last week. Normal iron, ferritin, folate, B12, & D. So b’bye NSAIDs, Celebrex, and even my heart-healthy baby aspirin till we can find out what’s causing this (probably a “slow leak” somewhere in the gut). Retesting in 1 mo. to see if it stabilizes or improves.

Imagine my horror, when arriving at Dana Farber, to discover that they had switched me to Nurse Karen again! Seriously? The poor receptionist was shocked when I said "No. I will not be having Nurse Karen." She said, "oh yes. That is your assignment." And I came right back "Nope. Really. I will NOT be having Nurse Karen." "But I will have to call the charge nurse. Your infusion might be delayed." "Fine. I have already talked with the Director of 9th Floor nursing and was told I would never get Nurse Karen again."
Off to the waiting room where I assumed I would wait for hours as punishment. Vital signs, and then straight to a chair where Nurse Stephen came to get my blood. Then I was chastised by one of the "front desk take you to your chair people" for a Nurse Lucy not knowing where I was. It was all so weird. Turns out that Stephen was the charge nurse and was passing me off to Lucy, who was clearly not a Lucy but a Chinese equivalent. Long story short, she was fine. I was pretty much on schedule. The 5:30AM wake up was the hardest part of the day. Except, I feel like crap tonight. Loads of the big D, so I haven't kept anything in my system. I didn't even try to eat dinner. Potassium went up a bit. Weight was stable. I am optimistic that tomorrow I will feel whole again.
*susan*
-
Thank goodness you avoided Nurse Karen. Sorry that you feel so rocky tonight, but I think it's good news that your weight was stable. Hope you don't loose it all to the "big D".
-
Sending you positive energy Susan...I wish I could do more.
No dinner tonight for me. I ate a kind of large lunch today (I don't often eat a heavy lunch) and I'm still full from that. Sharon ate some of the Chicken & Dumplings that she had cooked Saturday, so it all worked out.
It's down to 118F now at almost 8pm. This is where we pay for our 70F degree winters...still it's, I think, a good deal, even if it's not yet summer. Heat doesn't rust cars and in a few days, "the pizza oven" will have cooled to more moderate temperatures.
-
Hope you feel better soon, Susan. Good call on standing your ground against getting Nurse Karen again.
My MO is a bit nervous about the steadily declining (albeit mildly) hemoglobin despite everything in my CBC & chem panel being normal. Afraid she’s gonna ask for a smear to see if I have (ugh) a myeloid disorder. Just when my breasts have decided not to kill me….
Grilled a grass-fed ribeye I pre-seasoned with a mix of sea salts (espresso, rosemary, porcini, merlot) and cracked black pepper, along with corn on the cob and “cacio e pepe” made with zucchini spirals instead of pasta (yup, used real Pecorino Romano). Tomorrow night, halibut.
-
Tonight's dinner is going to be simple. Thinking of making some spaghetti.
