High protein spread

This is a recipe I stumbled across back in 1983 when my grandmother was dx with ovarian cancer and needed higher protein nourishment that would be tempting to stimulate her appetite. It is: equal amounts of Ricotta cheese and peanut butter; mix well (I use about 1 cup of each); add honey to make a spreakable consistency and ground cinnamon to taste. This spread has 18g of protein per 3 TBS...it can be used on rice cakes, toast, melba toast, crackers, plain cookies or whatever you can dream up. It is absolutely delicious and for those of us who need extra protein it is a fun,delicious way to nibble especially when feeling punky. This recipe can be varied according to your individual tastebuds...try adding maple syrup instead of the honey or nutmeg or ginger instead of cinnamon...or come up with some of your own...and share the ideas..............

    To update this recipe...for those of you who have mouth sores or who are just too darn tired to chew or too busy to stop for a meal....I add a banana, some low fat yogurt and some low fat milk right to a few spoonfuls of this spread and blend away....a delicious, nutritious smoothie........works for me.....

    I wonder if there is something to replace the peanut butter? I have to avoid the scent when I am pukey. Or does the ricotta tone it down a lot? Thanks
