So...whats for dinner?

The lasagne looks delicious, but I'm seriously swayed by HappyHammer's shrimp.
-
Haha, and, I thought the lasagna looked devine!
MinusTwo- there truly is nothing better than Carolina shrimp, though. My DH and son took a day off from a hot week at work to dreive down to McClellanville- picked up 100lbs of shrimp caught yesterday. Brought them home and they are now neatly packed in 2 lb packages in our freezer to enjoy the rest of the summer and fall. So lucky!
-
Oh goodness. We used to drive to Galveston and buy 100 lbs off the boat years ago. But the hours of de-heading before we could pack for the freezer.... And no body wanted to have the "work" going on in any of their houses - so we sat out in the driveway in the sun. But fun. Thanks for the memories.

For some reason, I had a craving for hummus. Heck, we had lamb, isn't that the beginning of a Greek feast? So that is what we did. A lettuce salad, carrots, pickled fresh red onions, cucumber salad, feta cheese, the aforementioned hummus freshly made, and breakfast radishes. Oh, and our first cherry tomatoes from our garden! Two of them, served with a Farmer's Market larger tomato, and globe basil from the garden. This is the kind of meal that gives me such joy! We are so lucky to live in a place with such fertile land and clever farmers.
Sadly, I am allergic to shrimp. I will NOT remind Mr. 02143 of the shrimp he left behind when he followed me North. Our fishmonger has shrimp from the Gulf, but he doesn't want to ask me to cook it given my allergy. Of course, I would be happy to prepare it for him. A marital impasse. :-)

Loving those shrimp "tales". I'd love to be able to access such poundage of locally harvested shrimp. With all due respect to your allergy, Susan!
And Nance, what a beautiful lasagna!! You are such a great mommy/nurturer!
I have a little sos request of sorts. Oh and I may have forgotten to thank you, Luv, for your research on "jump ups".
Today, during and after our walk, I noticed that I felt a pebble in my sneaker under the ball of my foot....tho when I took my sneaker off, no pebble, and remaining pain. It's a developing blister, making it hard to walk. On an earlier post, I recollect that one of our members mentioned something they used for blisters that had an unusual name like elephant skin? I should probably get some! Does anyone know what this blister helper is? Thanks!
The open house we returned for at the new neighbors' was good....met lots of their friends and had tasty casual food from a good local caterer. They are a nice family who have been so happy to become a part of our community...and are being so gracious about the nightmare going on a few feet from their new house. Somehow the owner building the house has not even made himself known to these new neighbors. He lives two blocks away. Amazing!
Our house was like a hot box upon return...thanks to our "mini splits", we are cooling off. Susan I hope you keep your air conditioning on! We are an odd lot in this area.... not used to using "air" as my mother always referred to hers.
Thanks for blister repair help

Lacey - Close, but no cigar. I actually like your name better, but it's MoleSkin. Below is a link for Dr.Scholls. It looks like this or similar products are available at Walgreens, Target, WalMart - in addition to sport & camping stores like REI & probably Academy.

Bob’s car was ready at the dealership--turns out that when he t-boned the idiot who suddenly turned L in front of him (mid-block), GEICO picked a cheapo discount chain body shop which did a really sloppy job repairing his car. The guy at the Ford dealership said there were missing bolts (and the ones they did install appeared “recycled”) and cracked clips. And when the body shop finished, instead of flushing and cleaning the radiator and putting in new coolant they just topped it up--so there were air bubbles and debris floating around. The hybrid battery overheated, and the car went into “protected mode” to avoid ruining it (half the cost of the car itself). He advised we call our GEICO rep and inform them that we want the missing stuff replaced properly (and have them bill the other guy, whom they determined was at fault). I had to Uber it down to the dealership--but I managed to get the most clueless Uber driver in the city. I suggested a route but he insisted on using his GPS....which doesn’t compensate for traffic. The place was southwest of me, but the idiot insisted on going EAST to Lake Shore Drive and then west on Fullerton Ave.--which is crowded at the best of times; but because today was a perfect-weather day and is the main drag through all the touristy parts of Lincoln Park, everyone was out driving and biking. I warned him, but he insisted his GPS was correct. We also encountered loads of construction (which my route didn’t have--I know because I drove it home) and he almost got us into an accident several times and missed a couple of turns because he couldn’t get into the proper lane. A 20-min., 6-mile trip took over an hour (and was nearly 15 miles). When I rated the driver only 3 stars, the app asked why--so I clicked “driver took improper route.” (Actually, every complaint option on the menu was applicable--but I was allowed to pick only one). So I got a 25% fare refund. I could have taken a cab, which is normally nearly twice as expensive, but a real cabdriver would have known to take the route I’d suggested. I hope my customer rating doesn’t go down--I usually give 5 stars no matter what, because drivers who feel insulted if you don’t do that downrate you--and the lower your own rating, the harder it is to get one and the longer it takes to get to you.
Costco was just up the street, but I got there just before closing and they were out of hot chickens. So when I got home I fired up the grill and made a pork chop seasoned with cracked pepper and espresso salt. One of the crispers in my fridge freezes everything in it, so the haricots verts I bought 3 weeks ago were still good (not so the lettuce, fennel and celery). I threw them in a skillet and let them steam in their own ice crystals, and then finished them with blood orange olive oil and Sicilian orange sea salt. I took a little zucchini “latke” from the freezer and griddled it. Had the last couple ounces of Rioja, and dined outside on the deck--where my cat couldn’t jump on my lap the way he normally does when I eat indoors (especially in my recliner).
-
Oh we are going through lots of moleskin and antibacterial ointment and ace bandages. The fun never ends!
I wish that the cooking staff knew that veggie burgers need to be grilled instead of just heated up and served raw- if there is such a thing
It is very humid and 89- more fireworks tonight
My cat is sick of me! How insulting! We have spent the last week together in one room due to the flu and he has reposed to under the bed for the last 2 days. He is not sick, I checked. I think that he is like a wife whose husband is retired. He looks at me wondering, "Why are you here??? Go out. Go out and catch canned cat food, or whatever it is that you do during the day.
I only have him for his love, and to be a moveable ornament.
It is a rough patch in our relationship.
He had Fancy Feast Cod, Sole and Shrimp Feast Classic for dinner
He better get over it or I may divorce him
-
Thanks so much Minus!! I'll head to Walgreens to look for it tomorrow
-
BLT's and chips tonight! Going to be another hot and humid day here!
-
Given the choice between shrimp and lasagna, I would take shrimp every time, but DDIL is allergic too. I made the ricotta, noodles and sauce and she did the rest.
I like the name elephant skin too.
Bedo, you made me laugh!
-
lacey - I had to change the type of sneaks I wear because I was getting recurrent large blisters on the ball of my foot, so I got some Sketchers with memory foam. Being so cushy inside meant that the memory foam filled in around my foot and cut down on the friction. There are times I put the "elephant skin" on before I walk if I am not wearing those shoes. This is post-chemo, never had this issue prior, and have found that some regular shoes I wore before I can't tolerate anymore.
-
bedo, i am howling about you and your cat. Cat's are the best. They let you know that they really don't love you, they allow you to exist in their world.
go and get canned cat food, i am sharing this with all my fellow cat lovers.
I really needed a smile.
Oh and shrimp. I go to Charleston (I'm about 4 hours away in Harrisburg NC) and get about 50 pounds. We usually eat through it so fast. I would dream of 100 pounds.
-
To clarify about the shrimp-it was 100 lbs of "heads on" medium sized shrimp. Took several hours for him to "de head" them. We ended up with about 65 lbs of shrimp. DH does this several times a year. He has a great system and sets up in the garage- never in the house, haha. We live just below Charlotte but he is from Charleston and that is where we met- 34 years ago. DH knows several shrimpers down in McClellanville and we get our shrimp right off the boat when he goes down there. Nothing like it.
Cats are funny but, Bedo- you are so funny talking about yours. I was laughing aloud reading your post. Thanks for the chuckle!
Mommy- BLTs sound great- may make some for lunch.
Happy Sunday everyone!

How fun to have Happy & Valstim join us at the kitchen table. Welcome ladies.
-
Watermelon for breakfast!!
A group of neighbor ladies is going to see "Shear Madness" this afternoon at a local rep theater. The play supposedly holds the Guinness World Records for the longest-running play U.S. play; over 15,000 productions in Boston alone. We'll eat afterwards but no decisions on what kind of food or where yet. It will be before 5pm so we shouldn't need reservations anywhere.
Sandy - wow, I didn't know the Uber drivers rated customers. Eeek. Special - I too have a number of shoes that are no longer comfortable post chemo. And more that are not advisable to wear due to the dead feed of neuropathy. Bedo - thanks for the smiles.
-
valstim - good to see you over from the surgery thread, welcome and also to happyhammer. I was just in S. Carolina last weekend to see my in-laws - they live in Beaufort - good shrimp area!
I just made something interesting - I needed to use up some of the duck eggs because DD brought home a whole new bag. I have to admit that I don't want to eat them - I am not that much of an egg person, but the texture and viscosity of the whites of the duck eggs are a bit off-putting for me. I don't mind cooking them for DH though - he loves them! I decided to make a frittata because I could use a bunch of the eggs and have leftovers for sending with him to work over the next couple of days. I had made the Yukon potato salad yesterday, with some crumbled bacon, celery, red onion and a mayo dressing with a tiny bit of sugar and salt and pepper. I cooked some orange pepper and onion in the sauté pan with olive oil, then added a little clean bacon fat and two big spoons of the potato salad. I cooked this until the potatoes got a little crust and I was curious if the mayo would sort of melt in, and it did. I added a big handful of torn kale, then added the duck eggs that had been whisked with some sharp cheddar. I cooked it in the pan until the edges set and then put it in the oven for about 20 minutes, topping it with some grated parm the last five minutes. Success!

Hey there SpecialK, Hi minustwo and all the others. I love this thread. It really has gotten me through some dark times. Just to let you ladies know, even though some do not post, there are a lot of us lurkers out there. Hey ChiSandy, grew up in Chicago, Lake Forest to be exact, I know a yuppie, but we never knew it growing up.
Making stuffed peppers. i have some lovely red peppers from my garden, italian sausage and onions and my last jar of tomatoes from last year. Then I will have my version of succotash: baby limas, corn, okra (fresh from the garden) onions and hot smoked sausage..
yum. At least I have the energy. Had #16/33 rads on Friday and was wiped out yesterday. Today I'm the energizer bunny.

For my fellow spiralizers..... I was watching Sara Moulton on CREATE and her guest Amanda Cohen just made this fabulous looking zucchini dish. Does need labneh, or in a pinch, you could thicken your own yogurt. Vegetarian [not Vegan.]

Thanks, Susan. This looks really good. I'm just getting started with spiraling and just bought a cuisinart spiralizer. I found this recipe the other day on Pinterest that I'm trying tonight for dinner.
-
Busy group here....is everyone sitting in air conditioning, needing something to do indoors? I too am enjoying our expanded table! And love all that shrimp talk......
Special, that duck egg frittata sounds delish!
We went to our paltry Farmer's Market today after having a casual local brunch out (fruit and oatmeal for me, veggie omelet for him) due to no food in the house! I'm so disappointed that the market has fewer vendors than last year and I am missing my favorite family farm that offered fabulous greens of so many varieties. I think Sunday is not the best day for a FM in this town since so many people are away on weekends. So I'm guessing that they are losing vendors.
I am off to TJMaxx to replace a carry-on size suitcase that I ruined in Chicago last Sept, trying to go through a turnstyle with it in tow! Admittedly stupid move, but the suitcase friendly non turnstyle exit was closed. So, off I go. DH has the mission to pick up some groceries for dinner (probably chicken...if he has abeer, he will happily grill, despite the heat and humidity), and breakfast foods to get us through Tuesday AM.
Sent from my iPad a good -
Dinner won't take me long to make. Hubby cooked up the bacon earlier today so I won't have to stand for a long time making dinner. Hiding inside with air conditioning today
-
Costco has a 2-pc. composite polycarb/fiberglass 4-wheel spinner luggage set (rollaboard and 26”) for $105. Might not be there tomorrow. Lightweight, though not as light as my Rimowa Salsa Air pieces--but heckuva lot cheaper.
-
Thanks for the warm welcome, y'all
It's like a sauna here! Just went over to help DH pick our neighbor's garden. Oh my- brutal! Have been giving away veggies to other neighbors so will take some of the bounty to a local food pantry in the morning. Folks are always glad to get fresh stuff!
Don't eat duck eggs but the frittata sounds lovely, Special.
Good luck finding replacement suitcases that you like and suit your needs, Lacey and Sandy. I always hate having to replace something like that but with the new technology- maybe you will find something even better than what you had- Sandy the price you quoted sounded great!.
SO, our local grocery helped cook dinner tonight. Broke down and bought a rotisserie chicken. Having it with leftover veggies and a green salad. Easy-peasy. Too hot and humid to cook or grill here.
-
The show "Shear Madness" was really funny. I understand it's still playing in Boston - more than 15,000 performances. Any of you Boston gals see it?
Dinner was at Berryhill Cantina. All the food was good - and large servings. I had breakfast burritos w/egg, potato & cheese. One had their specialty - fish tacos. One had 1/2 & 1/2 quesadillas - poblano/chicken & spinach/???. One had fajita tacos - beef & chicken. Sure glad I hadn't eaten lunch.
-
Thanks Susan & Dara for the recipes. I love my manual Oxo spiralizer.
-
Thanks for reminding me about spiralizing- bought a spiralizer in early spring and thought I would wait to have fresh zucchini to use it. Forgot abt it- have plenty of zucchini so will try it now.

Camp log Day 32:
I have let the Cat down again. Apparently, Fresh Step is not acceptable. That is all that was available in Copake, NY after camp sick call last night. He is used to Seal and Clump. He strode around all last night stating "Mack!" "MacK!!" in the dark. I think that is a swear word.
I am growing weary of his demands, and those of some of the campers.
A bug bite is not cause to arrive an hour early for sick call.
The flu continues to march through camp. In July!!
I fear for my sanity and long for my garden and peaceful life in Providence. Lobster and whole bellies by the sea wouldn't hurt either.
3 1/2 weeks left
A cookout with macaroni salad, watermelon and warmed up veggie burgers for dinnner
In a fit of passive agressiveness,,I served the Cat dry food-Purina Complete.
-
bedo - you are hilarious
-
.....ooooh.....whole-belly clams...fresh from the fryer....homemade tartar sauce, hand-cut fries with salt & malt vinegar....but I draw the line at Moxie. (bleccch--only thing worse is Diet Moxie).
Decided to grill before the storm hit. Defrosted a Niman Ranch grass-fed “Bistro (hanger) steak.” Seasoned it with espresso salt and pepper. Started with an insalata Caprese (yellow tomato, basil, mozzarella di bufala over arugula). With the steak, I grilled asparagus and a small sweet potato, and finished the last glass of Rioja. Think I’ll have some yogurt and tart cherries. Hope it keeps me away from the gelato, sorbet, salt caramels and chocolate-covered mini grahams.
