So...whats for dinner?

Minus, I saw a branch in the same strip mall as the Ulta store I visited the other day. Since I have to avoid sugar and starch (except for special occasion desserts at restaurants), it never even occurred to me to go in. We have an award-winning frozen custard shop/patisserie on our corner, but I dare never go in except when they have the sugar-free dark chocolate salt caramels I like. Back when I was recovering from knee replacement surgery, I could eat a small cone of custard without it triggering carb cravings, because the opioid I was on occupied most of the endorphin receptors in my brain and it took only a little bit of sweets to satisfy me. (My PT warned me it wouldn’t last forever, and once I weaned off the painkillers I found to my chagrin he was right). I’m not a cake person, though--I never did get the whole cupcake craze. My taste in sweet no-nos runs to gelato, sorbet, mousse, cannoli and cream pies. (And Bakers’ Square’s pies never did really float my boat--except for raisin sour cream and Candy Cane; the former’s been discontinued at most location, the latter is seasonal). Hoosier Mama Pie Shop was my undoing when I was doing rads--it was en route home and I would console myself with their Smores, Passionfruit Meringue or Espresso Cream after each session. I wasn’t on letrozole yet and figured that since I wasn’t gaining weight I’d be fine. Then came our Mediterranean cruise, and the rest of my restraint disappeared. In retrospect, I should have gotten as thin as I could before starting letrozole or even setting sail, but I guess I was “The Thing That Wouldn’t Leave” the pity-party I attended once the diagnosis process began.

Welcome to our home Wildtulip. I think most of us want to eat healthier but alas it doesn't always happen. Sounds like you have some cooking challenges in your home.
I did make the fake cheesecake pie, a chocolate version. Used 1/2 pkg sugar free choc. pudding mix and 1/2 of regular. Looked at 3 places for chocolate yogurt but the only one I could find only faintly caramel like. I added some powdered hot choc. mix to it. Next time I will just use vanilla and not bother with the choc. yogurt.
Well you've done it now Minus. There is one in Ft Worth, shocked. Might be on the next shopping trip. Not too far from Central Market. Yum.
Thanks for the recipe Special. I thought somehow naughty might be alcoholic but in a meatloaf.
Cute story about the naughty ice cream treat Sandy. Did the guy survive another date with the girl? Yum sour cream raisin pie. I'll have to look that one up.
Minus do you have a source for the little lemonade cans or do you just split a big one? If you can get the little ones I might be able to or even limeade.
I know we don't talk a lot of alcohol stuff on here but DH made a Peachcomber. I have a small bottle of Mathilde Peach liqueur left from last summer when I was going to do something with our peaches. It was tasty with rum, the liqueur, club soda and some margarita mix. I bought a can of peach nectar to try it again or might puree some nectarines from the fridge.
Hope everyone is having a enjoyable 4th of July long weekend. Still waiting for DD to get our here. She might make it in time for dinner lol.

luvmygoats, there's a "what about drinking" thread (maybe it's "how about drinking").
Last night I pan-seared sockeye salmon filets in grape seed oil spray, seasoned only with Salish alder-smoked sea salt and a fresh grind of black pepper. Sautéed Brussels sprouts in olive oil and a bit of garlic, then finished with supermarket balsamic and black truffle salt. Also an insulate Caprese with heirloom tomatoes, basil from my garden, mozzarella di bufala and a drizzle each of EVOO and aged balsamic. Poured a 2013 Bouchaine Pinot Noir (Carneros). Dessert was Greek yogurt with chopped fresh pineapple, mango, and apricot.
-
Yes, there is a drinking thread, but I think a lot of us enjoy some wine or a cocktail and it's a natural fit with a dinner thread. Sandy, I always enjoy your wine posts. Besides, why would I want to leave "the kitchen table"? I just put a bottle of Bailey's Carmel Irish Cream in the fridge. I wouldn't want it to go bad before I had time to drink it - even though Tia Maria is my after dinner drink of choice. The Peachcomber sounds lovely.
Luv - I haven't been able to find the 6 oz cans of frozen juices anymore either. I bought the 12 oz and mixed what was left to put in a pitcher in the fridge.
Dinner is a repeat - California Roll and potato salad. That's one of the problems of buying & cooking for one. Good thing I like leftovers.
-
Minus, Nothing Bundt Cakes sound amazing! Unfortunately I just looked them up and there is one about 3 miles from me!
My kids left this AM to go to their dad's, so I had a late lunch of a bean burrito and then cheese and crackers for dinner.
ChiSandy, your dessert sounds yummy and has inspired me. I'm going to go have some plain greek yogurt and fresh kiwi.
-
minus - I had a bundtlet from Nothing Bundt Cakes when I helped my friend clean out her garage - she had a coupon so we went and treated ourselves. I have a pan to make those little bundt cakes in - I should do some.
Funny about the naughty meatloaf ideas - it is just naughty because it involves bacon and sugar!
chisandy - I laughed about the ice cream story - we used to have a Farrells near where I grew up in suburban L.A. - I ate a Pig Trough (essentially two banana splits) by myself on my birthday one year - I think I was turning 16. Some girls had a "Sweet 16" but I apparently was happy eating enough ice cream for any 4 people. At the time I was 5'2" and weighed 95 lbs. I am still 5'2" but am definitely not 95 lbs. anymore!

Dinner tonight was a casserole made by my mother in law. She bought a new TV, DVD/Blue Ray player, and sound system after her old stuff finally quit working...... and for putting it all together, plus getting all the setup correct, she fed Sharon and I.
I was kind of busy today and that is all I ate...
-
Dinner tonight was our 45th anniv. party at Broadway Cellars. Champagne toast with Thienot NV Brut. We all ordered off the menu. Julienne apple-walnut-cranberry-chevre salad for the two of us; Bob had fish & chips, I had a honey-brined grilled pork loin chop with mashed sweet potatoes, sauteed spinach and mustard sauce. (Liar’s Dice 2010 Zinfandel). Dessert, which we shared, was salted caramel and double chocolate gelato. And the dessert toast was a Pecota sparkling Moscato.

Sandy - happy anniversary. Sounds like a good dinner.
I remember in college eating a "Pigs Dinner" at an ice cream place in SLC. Special's extravaganza sounds similar. Can't remember the name for the life of me, but from the web I think it was Snelgroves. I know that I have the pin/badge that I was placed on my jacket if I want to climb up to get the 'memory box' in the top of the closet. Hmmm - my HS graduation tassle, the signet ring of a boy I went steady with at 15 - don't think I'll go there today. But 15.....Oh my word.
-
Congrats Sandy, 45 years is quite an accomplishment!
-
Congrats Sandy!
Off to P-town with typically waaaaay too many clothes. I am so "packing"challenged!! Getting worse as I get older......

Lots of food has been prepared and consumed here. Tonight, we smoked the pork ribs that had been curing for two days. I made a mustard-potato salad with only enough mayo to coat, the Carolina cole slaw, and an Austrian cucumber salad with dill. Our BNB guest donated a couple of tomatoes which I sliced and served with fresh basil from the garden. Generally, I have no plans to invite guests to dinner, but this one is here for a week and alone. He has been the perfect guest, and I thought he would enjoy a home-cooked meal. We went together to the craft beer store where he had a great time talking with the owners all about beers. He makes beer at home, so it is a passion. Turns out that the road he grew up on was the "end of the world." Just yards from his home was the Iron Curtain between Austria and what is now called the Czech Republic. Such interesting stories!
I have been reading, but for some reason, I have just been exhausted and find it difficult to contribute right now. Trust me, I am thinking all the correct thoughts as I read each of your posts. Big deadline this weekend. The files must be ready on Tuesday so I have been pushing my body to its current limits.

Lazy day today after a late night yesterday--slept in. Decided to have leftover spinach and about an ounce chunk of last night’s pork chop along with a fried jumbo egg.....you guessed, another double-yolker! Bob was jonesing for a smoked BBQ turkey leg at the Taste of Chicago....but it doesn’t start till Wed. and he’s off only this weekend and tomorrow. So I dialed around and found a BBQ in Evanston that was about to bring them out of the smoker. Sauce on the side, of course. Bob had his with the traditional white bread, sauce & fries that came with it. I put my bread in the fridge and fries in the freezer, and had mine plain, with greens and a little bit of black-eyed peas. Didn’t feel like wine tonight, so I had a nonalcoholic Clausthaler Amber.

Congratulations Chi.....5 more and you'll be golden.
Mom gave me an ice cream parlor story. About 10 years ago, I was driving her across town when she shouted, "There's May Coyles!" It turns out the place was her "hangout" back in the old days but she lost track of it when the owners moved to Phoenix in the early 1950s. We stopped and inside she mentioned that it looked like the one "back home". That got the owners children out, with a scrap book, and mom pointed herself out in a few of the pictures.
the most risque thing they had, was a newspaper clipping in one of the scrapbooks. A movie reviewer was complaining about noisy zippers and wished for the return of button fly pants. Hmm......
Unfortunately the place fell onto hard times and while it is still open, it is now just a shadow of its former glory.
That does sound interesting, Susan, listening to the stories of the guests. I sometimes dream of doing a B&B out in the country, but then I realize how much work it would be and I wake up from the dream. :-)
I understand, and I'm sure everyone else does too, how busy one can get. ...You'll notice I, too, sometimes go a few days without posting anything. Here's hoping for bug free files/code..
The two dogs are looking out the windows and whenever they see the flashes and hear the pops from the fireworks, they do the "protect the den and pack" barks. Fortunately they don't seem to be afraid.. The cat doesn't like the loud barking and he's laying on the floor at the other end of the house.

Bob picked our first quart of black raspberries this afternoon, saying he didn’t want me to risk scratching my right arm & hand on the thorns. He gets dibs on as many as he wants to bring into his office (he promised them some).

Breakfast for the twins

I took advantage of the cooler temperatures this weekend to make spaghetti sauce and 4 lbs. of toasted sugar. A portion of the sauce became last night's dinner along with some Italian sausages and fresh thick spaghetti. There is enough left over for lunch today. The toasted sugar is destined for some baked good down the road no doubt. I may even make some ice cream with it. DS and DDIL are coming in this month to celebrate DDIL's and my birthdays. (Hers is today, mine later this month.) She and I have decided that we are cooking for our own birthdays -- lasagna, all from scratch. The toasted sugar should make for a caramel-ly flavored ice cream to go with some kind of cake. Should be fun.
Since Thursday, we have gotten 7 1/2 inches of rain. I am ever so grateful. It was a perfectly slow, steady rain, so no big washouts. In spite of the wet, I managed to dig enough lovely potatoes for a potato/green bean salad today. That will go with the ribs and a tangy coleslaw. The garden has perked up nicely and I even have some tiny peppers coming on. The cucumbers and squash are finally blooming. We're in for a spell of hot weather again this week, so that should help things catch up. The rain made for a 5 hour baseball game yesterday. Yike! A few die hards were still at the stadium. I love baseball, but not me, man! It was hard enough to stick with it on tv.
All of the deer have shown up to eat apples today. And all of the squirrels. Did I mention that one of our foxes was in the yard a week or so ago with a dead squirrel she caught (and partially ate)? I gleefully told her that apple stuffed squirrels were a great delicacy and that she should have all she wanted. The apples are one to two weeks from being ready. I still don't know if we'll get any. The critters have emptied one tree and are working feverishly on the other two.
Sadly, the rain has stopped so people will no doubt be shooting off fireworks in the subdivision tonight (and today too probably.) I wouldn't mind so much if they just did it for an hour or so, but They. Just. Won't. Quit.
Yesterday, our clothes dryer quit heating (hope this is not an epidemic). After some googling and you tubing, we determined that the problem is the thermal fuse -- an easy fix, so tomorrow it's off to the parts shop and trying to convince them not to charge us $30 for a $3 part. Thinking of you Eric!
Happy 4th all y'all!
-
Nance, here's hoping that the noisemakers pass out early enough for you to get some peace!
Your subdivision sounds like NH....only there, no one knows when the 4th weekend is over. Our poor dog used to go nuts trying to scratch her way into the bathroom floor so many loud summer nights. It doesn't help that the "live free or die" state sells and approves of fireworks for all! And the "Massholes" take full advantage of being there for that privilege.
Yesterday afternoon we arrived in our P-town outskirts after driving down in a LOT of traffic....silly me to have expected that most people would have been settled at their weekend destination by then. I felt lousy and tired when we arrived, so napped a bit, and we ended up ordering pizza delivery for dinner...pesto chicken with a Greek salad. Not great, but helped me avoid a trip into town.
This morning we got up and walked into the town center (45mins) where we awaited the parade. In years' past the P-town July 4th parade was a pretty wild funky deal. No longer! Lots of loud fire trucks with a few dressed up characters (Statue of Liberty, Elvis) and lots of local admins and their families throwing candy. A quick deal. But at least we got our walk in and ate a quick lunch while in town. I had kale soup and a BLT, and DH had a fried fish sandwich and kale soup. Tonight we head to Cafe Heaven after seeing the start of the town fireworks, where DH has already put in his order for their giant fish stew. He is too much!!
Off to the beach now. Loving San Diego weather on our beautiful outer Cape!
Nance, your birthday plans with DDIL sound perfect to me!
Happy 4th everyone

I just caught up reading posts. I was 3 pages behind. Olivia is adorable. Goodness, she is growing and has already changed from being an infant. Joyce, your pool is lovely. No wonder you're staying home and enjoying the back yard. Luv, glad you're back. Nance, my mother is doing well in the nursing home, too. She just won a Blackout Bingo for the first time.
Love the deer pictures. Apparently we have a mother deer and two fawns making visits in the "back" area of the campground. They ate one of the weekender's blooms off all her potted plants and even grazed on the hostas.
I'll be flying to Louisiana on July 12th and staying 2 weeks to give my youngest sister a break from her daily visits to the nursing home. My sister is very pleased with the way my mother is making the transition to resident.
We participated in a 4th of July boat parade around the lake today at 11 am. All the boats had flags and decorations. There were about 22 boats. It was quite a procession.
DH and I have been going out on the lake fishing. He has learned to operate the trolling motor. It's lovely out on the lake with loons surfacing here and there and occasionally eagles soar overhead. Yesterday I caught a keeper size walleye. We put it in the live well in the boat and brought it back to the dock. But it was so pretty and energetic that I opted to release it back into the water rather than harvest the fillets.
Most of my cooking has been on the grill. I'm learning to do the aluminum foil packet technique. Last night I sliced up potatoes, sprinkled the slices with seasoning and added pats of butter and cooked in a foil packet. Put shredded cheese on at the last minute. Yum. Delicious with a ribeye.
Tonight I'm roasting skin on bone in chicken thighs in an iron skillet, using the grill as an oven. The side will be asparagus cooked in a foil packet.
Things are going well here at the resort. DH is enjoying being busy with various duties. His brother is arriving on Wed. for a brief visit.
So that's about it from Pine Hollow Resort in northern MN.

Good to hear from you Carole! Funny thing about the deer and hostas. They've eaten about half of mine but I noticed today that they've very carefully eaten around the weeds that have grown up in the middle of some of them. Very discerning they are!
-
Glad to read that you are doing well, Carole....and that your mother is adapting nicely. She will no doubt be so happy to see you! I have loon envy, since we have just a few on our lake. They are so beautiful and love hearingtheir haunting calls in the evening.
-
Nance, discerning indeed! And so very annoying! Silk floral bushesmay be in our future!
-
Carole - thanks for checking in. I love foil "bag" cooking, but have done more on campfires than back yard grills. Hope you have a great time with your Mother.
Nance - the nursing baby deer are delightful.
-
I’m hoping to find some bluefish; failing that, mackerel fillets. I love to cook it en papillote Mediterranean style (got the idea from Pisces II Greek seafood restaurant in Bellerose, Queens)--in oiled parchment with fresh herbs, tomatoes, mushrooms & peppers, nuked for 2 min.
Got double-yolk egg #12 in a row this morning. (No wonder Whole Foods ran out of that brand so fast). Tonight, I reheated my leftover pork chop and mashed sweet potatoes from our anniversary dinner party, as well as the collard greens and black-eyed peas from the BBQ turkey legs we had last night. Grilled a grass-fed NY strip (seasoned with freshly ground pepper and espresso sea salt). Started with chunky gazpacho (didn’t feel the need to haul out the Vitamix or stick blender to puree it). With dinner, we had the rest of the 2013 Bouchaine Pinot Noir (Carneros). For dessert, we cracked a Mumm’s Napa Demi-Sec, expecting it to be as sweet as the moscato we had at our dinner party or even an Asti Spumante. Instead, it was delightful and just slightly off-dry, like Moet White Star or Mumm’s Cordon Rouge Extra Dry. The Brut is good with dinner--but the Demi-Sec is great for aperitifs or even celebrations. We sipped on the deck as the firecrackers (and a few fireworks) went off all around us, as the fireflies flitted about. Then we went inside and watched the Macy’s fireworks and A Capitol Fourth on TV.
-
Carol glad that you are doing well. I am at camp and am still waiting to cook foil dinners over the camp fire
Susan So much fun to meet new people!
Sandy, I love bluefish when I am home in Rhode Island. I'm missing the weekly farmer's market and my fish guy. I have tried everything from whitefish, wreck fish, skate, you name it. I'm hoping for some sea robins when I get back. We try to eat the fish who eat the endangered fish.
I love the deer pic
Here I am at camp. So as far as dinner, they don't serve fish for some reason, so there is a salad bar at lunch and dinner and I eat lettuce, tomatoes, mushrooms, beets, hard boiled eggs, sometimes tuna, tofu, pickles, olives, hummus mandarin oranges, croutons, cottage cheese, shredded cheese, apple sauce, crinkly Asian topping things from the 60s, and 10 other things which I can't remember right now.
Sometimes there is mac and cheese or spaghetti
For breakfast either yogurt or oatmeal with brown sugar cinnamon, or raisins
And lots of coffee in the am There are 600 campers here!
Tomorrow I take the swim test so that I can swim and do all the kayaking and water sports.
I bought red Keds, as our camp colors are red and white. Red Keds! How fun.
I got the University job for the Fall and will have a 10 day break after camp and before starting.
Gonzo cat is loving it here
It is very beautiful here
Thank you Internet Gods
I read all your posts and thought about each of them. It is hard to answer with the internet, and my hours are spread out so I sleep in between clinic.
The campers are so cute
Happy 4th everyone

chisandy - you must have been a child bride and happy anniversary to you and Bob!
bedo - good to hear from you, sounds like you are having fun!
Didn't leave the house yesterday, or even go outside. DH paddle boarded and DD worked until 8 pm. Made Mexican food for dinner last night, chicken enchiladas, rice with chicken stock and salsa stirred in at the end, and a salad of black beans, grilled corn, jalapeno, and avocado. Sat with our terrified dog through the fireworks - if he could have gotten in my pocket he would have - but he weighs 45 lbs. Fireworks are big business in Florida, you can buy them on every street corner - all year round. It is continuous noise for at least two hours on the 4th, and also on New Years Eve - along with gunfire. Unfortunately everyone buys the reduced price fireworks the day after so the noise continues sporadically for a couple of days. Our poor dog has never gotten used to it.
-
That cracks me up Special I don't think I've ever lived in a state with legal fireworks except a lake house in Alabama. Right at the state line there was a huge billboard FIREWORKS!! And since our county was dry, right over the line of the county Wedowee was in, was a beer store, but you could only buy warm beer. Go figure.
Celery, chick peas, pinto beans, radishes, shredded carrots, six different kinds of dressing.....
-
bedo - I am from California where the only fireworks one saw on the 4th was the big show put on by the city or Parks Dept. A lot of this was due to liability and the fire hazard, because by July California is usually pretty dry - especially so in the last few years due to the drought. I was shocked the first year here (we have lived in a bunch of other places all over the country due to military moves - all with no "at home" type fireworks) because it sounds like a war zone! The gunfire was especially disconcerting! My favorite place was northern Virginia - my husband was stationed at the Pentagon and we would go and picnic on the grounds and we had a great view of the fireworks down the Capitol Mall without dealing with the crowds and mayhem down there.
-
Bedo, so good to hear from you, sounds like you're enjoying summer camp and it's a blast! Bet it's so much fun.
Yesterday was the quietest 4th we've ever experienced here. The only fireworks we heard were from the display in the neighboring town. Don't know why, but I hope it's a trend. When our dogs were alive they would be stuck to me like glue for the duration. We tried to keep the tv loud and to distract them as much as possible but it was hard on them.
We got the part for the dryer (for a whopping $20). We decided ahead of time that that was the most we were willing to pay locally for the convenience of getting it fixed today. They must have read our minds but the dryer is fixed. Yay! I love You Tube!
Got some more sweet corn today that's destined for the freezer. We didn't get any last year because of the poor crop due to weather. I'm trying to make up for it this year by eating as many ears as possible.
Dinner tonight is grilled ham and pineapple steaks with baby Yukon gold potatoes and green beans from the garden.
-
Bedo - camp sounds great - but even better - you got the University Job for fall!!! Congrats & hooray. Is it full time? Where will you be living? Glad to "see" you.
Went to the gym after PT today and did 2 miles on a recumbent bike and 30 min on a treadmill. I know that sounds wimpy, but remember I haven't done anything since 3/11 when I broke my arm. My membership expires in August so maybe I can make myself go again tomorrow and decide if I'm going to re-up.
