Slow Cooker Chicken and Noodles
Nonstick cooking spray
1 1/2 pounds boneless, skinless chicken thighs*
1 onion, chopped
1 1/2 cups chopped carrots
1 cup diced celery
1 teaspoon pepper
3/4 teaspoon thyme
1/2 teaspoon onion or garlic powder
1/2 teaspoon salt
2-3 cups low sodium chicken broth
1 can reduced fat cream of chicken soup
1 can reduced fat cream of celery soup
1/2 package noodles (6 ounces)
Directions: 1. Spray a 6-quart slow cooker with nonstick spray. Add chicken, onion, carrots, celery, pepper, thyme, onion powder and salt. Pour enough chicken broth over mixture to cover. 2. Cover and cook on low setting for 6-8 hours or until chicken falls apart. 3. Stir chicken mixture until chicken shreds and add soups. Turn slow cooker to high and cover until chicken mixture starts to boil (~5-10 minutes depending on model). Add noodles and cook an additional 10-15 minutes or until noodles are done.
*I couldn't find boneless thighs so I used the bone in.
Yield: 6 servings, approximately 2 cups each

melt in your mouth beef stew
3-4 small round steaks
2lbs potatoes cut in 1" cubes
medium onion cut up
small bag of baby peeled carrots
500 ml can of diced tomatoes
1 can mushrooms
1 can of corn
worchestershire to taste
garlic and onion powder to taste
2 tsp seasoned salt
1 can of mushroom gravy
i tbsp vegeta flakes (optional)
i cup red wine (optional)
throw it all in the crockpot, stir it up well (leave steaks whole)
turn cooker on high, go to work and forget about it.
when you get home give it a brisk stir......the meat will fall apart at this point.
make a bit of thickener with flour and COLD WATER and stir into bubbling contents, recover and allow to thicken for 15-20 minutes and its done.
you can throw other veggies in too, but that is what my "family" prefers.
i've actually thrown it together in 5 minutes and used frozen steaks and unpeeled potatoes and it was still out of this world. -

There is whole section about midway down the page. There is a whole section on slow cooker recipes. Her program is primarily focused on food combining, but there are many awesome recipes that could be easily adapted to any way of eating. -
Try www.tastycrockpotrecipes.net
i have found a lot of them on that one. Also, check out Kraftfoods.com. Sign up for their free magazine. Lots of recipes and good ideas and tips.

Beth,
Thanks for the crockpot link, I love cooking in mine & I'm always looking for new recieps.
The Kraft website is great! Almost all of the recipes include only a few ingredients and very easy prep time....plus I've had good results with all of the dishes I've tried. Several times a year the company sends me by regular mail a wonderful full page cookbook...included are tasty, easy to prepare recipes with few ingredients - my kind of cooking.
