Special good luck with the surgery...I also had various stages of my surgeries at different hospitals (my surgeon practiced at several and scheduled me wherever there was the fastest opening) Some I don't even remember....We could be on the hospital review boards if we did remember....haha
trying to clean out the refridg before we leave for nc, mostly the fresh vege stuff that wont be good when we get back. got some chicken and corn, so I will do a chicken corn chowder as I know my DH will eat the whole pot and there wont be any leftovers.
Carole...the funny thing about the med is...that I took it for hot flash relief (did not have depression that I knew of...a little anxiety maybe) and I weaned myself really slow (months) sooo not quite sure what happened that I got so down when off it All good now, though, and marching forward

Quick note, for Carole, the "pork queen" .....I am watching The Chew and Mario Batali is making an easy pork chop skillet dish (sweet and sour, I think) with orange and yellow bell peppers and garlic. It looks like it will be wonderful. He is not turning the chops until the end of the show...how easy is that?! If you check on their website, they will list it under Mario's recipes. I keep thinking of how many pork recipes you will want to be using now that your freezer is full!
Last night I made a sort of cod provencal, topped with feta. Had orzo and a garden salad with it. Probably should have skipped the orzo, but I can easily rationalize those tiny guys.

Went to see a hilarious one woman show last night - "Sister's Christmas Catechism". Two of us were raised in Catholic schools, two were not. We all had tears running down our faces. Dinner afterwards was delicious: Veal Parm, Linguine Pescatore, grilled Red Fish in lemon butter & wine, Prime Rib. Unfortunately we also had delicious appetizers - calamari, spinach & artichoke dip - so none of us has room for dessert.
hooray for this kitchen table!!! Will one of you who participate in Facebook please tell Laurie thanks for starting this thread & let her know we think of her often.

lacey - I just did pork loin chops last night, pan seared then finished in the oven, and cooked onion and Granny Smith apple slices in the pan drippings - easy and fast. We had creamed spinach and sweet potatoes with brown sugar glaze.
minus - I want to eat all that stuff!!! Unfortunately my plan to eat fun things has gone awry - my PS has me on a prophy antibiotic and it is messing with my tummy - so I have not eaten much in the last couple of days except for last night's aforementioned pork chops.

A happy carnivore I am. Tonight's dinner was a big thick rib eye that we shared and small boiled white potatoes. They were good, too, with butter and sour cream.
We could have had all the leftovers but I was in the red meat mood. Dh is a master at cooking steak on the grill. He has a magic fork.

More Adventures of the Lazy Gastronaut:
Yesterday early afternoon went to brunch and had egg-white/chevre/sundried tomato scramble with cucumber-tomato salad; Drank a Virgin Mary and then a “meh” domestic bubbly (J. Roget, IMHO good only in mimosas). Dinner out was sharing steamed mussels Provençal (gave DH the croutons, I used a spoon for my half of the broth), then pan-seared sea bass with diced tomatoes and sauteed asparagus. Drank a Chandon Brut split (aaaah, that’s more like it). Late night snack of tuna salad & tomato slices on whole wheat hi-fiber lo-carb bread.
This morning had a fried “egg-in-the-hole” using the aforementioned lo-carb bread. Midafternoon snack was sugar-free chocolate and a breve cappuccino. Ordered out for dinner from our favorite Indian restaurant: seekh kabab, 1 cube chicken breast tikka, 1 sm. piece of battered cauliflower fritter (nod to Hanukkah tradition of deep-fried food), stewed eggplant, tandoori chicken (leg & thigh) and a pappadum. (Let non-dieting DS go to town on the samosa, pakora, other fritters, roti bread and rice). Washed down with seltzer. No wine today or tomorrow, to make up for yesterday and Sat. night’s Bar Show cast party (started downstairs at Kitty O’Shea’s w/a non-alc. Kaliber, then at party progressed to a glass of prosecco). Also have a champagne tasting coming up Thurs. night.
Happy Hanukkah--lit the second candle....uh, screwed in the second lightbulb.

Dinner tonight was a grilled whole chicken, spatchcocked, roasted Greek potatoes and a huge green salad with a mustard vinaigrette. After the kids got home from work, I rewarmed the potatoes, made him a new salad, and a bowl of peas for the girl. The chicken was so good it needed no additional manipulation.
Our weekend on the Cape was wonderful. Friday was L's night to make dinner. She did a grilled steak, baked 'tater, and a salad. Saturday night I made lamb chops from this year's lamb [oh man are these good!], a sweet potato gratin and another salad. Friday I made a buttermilk blue cheese dressing; Saturday was a lemon vinaigrette.
I am not feeling that well as I have decided to stop taking the Letrazole. I don't remember feeling so horrid when stopping aromasin, so this is a bit of a shock. The house project is steamrolling forward. I am trying to keep up!

Good grief I ate bowling alley pizza tonight....But now I am reading about steamed mussels and roasted Greek potatoes....and now I want to eat all over again.....

Tonight we had two of the merguez sausages that I made on Sunday. They were very tasty and nicely spiced this time in spite of being slightly overcooked. I can't seem to get the grill timing down on these (especially when grilling in the dark.) Today was Clean Out the Refrigerator Day so sides were sauteed yellow squash, zucchini, onions, peppers, garlic and fresh tomatoes, and potato pancakes made with leftover mashed potatoes.
Tomorrow is a doctor day in the city so I'll try to stop by Trader Joe's and do some other shopping on my way home. Living in a small town, I have to maximize those shopping opportunities! Unfortunately that will make me too tired to cook so dinner will no doubt be something from the freezer.

Have fun food shopping at Trader's Nance. I was there tonight on my return from gym....to get some organic grape tomatoes. Right!! Picked up two nice white (sort of yellow) poinsettias and also some small xmas cactus plants that were adorable and will brighten our kitchen bay window. I ended up buying more bagged greens (making smoothie for the rest of week tomorrow) and that delicious pesto gouda cheese that DH loves. At the check out line they had these boxes of chocolates that looked like large round pebbles....very pretty and varied flavors. I know I can use them for something over the holidays.
All of your meals....in and out (!) sound so wonderful.
Tonight dinner was solo so I thought I'd do my kale sauté with eggs, (it's turning into a compulsion!) but I was starving by 7PM after putting groceries away, and saw a nice ripe last slice of brie in the fridge so ate that with pretzle crackers (unrecommended!), then poached the two eggs that awaited on the counter and had them with a chunk of sour dough bread and a small spinach salad with red onion and pear slices, evoo and balsamic. When DH arrived home about an hour later we each enjoyed a giant orange from a bushel we recently purchased from the local Exchange Club. Not sure where they come from, but they sure are delicious!
Minus, I enjoyed your account of the one woman show as much as your drool worthy dinner report!
Susan, I'm sorry that your body is responding that way to stopping the AI.
Maybe hormone related reactions? I don't recall any reaction to abruptly dropping the Tamoxifen, other than being able to sleep and think! But they are different drugs....just both hormone related. Hope it passes......

Cornbread in the oven in an iron skillet. Mustard greens with pickled pork and turnip roots with ham left over from Sunday's boiled ham will go great with the cornbread smeared with butter. .
Susan, your chicken dinner sounded perfect. I will do baked chicken soon. I have two chickens in the freezer.
Lacey, I had several wedges of brie (warmed in the microwave) with crackers for lunch. What is better than brie?

I had a serendipity today...in the form of a wonderful chat with the woman who started the Copper Kettle Baking Co., where the Welsh Cakes I buy at Volantes are made. I was calling to see if I could pick up some of her "cakes"and Welsh Cake Mixes to give as hostess gifts over the holidays. I had no idea where this "bakery/store was. Well, there is not a brick and mortar store, just a contract kitchen in a neighboring town, but we struck up a great conversation about many things beyond her bakery business, and she is going to bring my order to my house since she is coming to my town this week. Even better she is going to throw in an extra mix so that I can experiment with egg and butter substitutes acceptable to the "doc vegans". This will be fun!
Tonight we had a store roasted chicken, roasted acorn squash with a drizzle of maple syrup and sprinkle of cinnamon, spinach salad with pear, scallions and walnuts, and a vegetable (onion, carrots, broccoli, black olives, garlic powder and mint) toss with the orzo I had leftover from Sunday. Boy, I like orzo!!
So this afternoon we bit the bullet and bought our tree! Ha! For the past five years we've talked about just getting a Charlie Brown style tree...and every year we back down and get a regular sized tree. Well this year neither of us was the least bit ambivalent, and the pic below shows it! We have it on a perfect small table in the living room, and DH already put on the lights (in record time!). The biggest problem as I see it is deciding which of our zillion favorite ornaments make the cut for adorning this "tree". I actually think it is sort of cute.

Tonight, some of the leftover chicken breast turned into chicken salad. I served it with a green salad dressed with a Greek vinegar. We both pulled breads from the freezer... I chose a French dinner roll, he chose a rustic mini-loaf. We have enough chicken salad leftovers for lunch tomorrow. I still have half a breast to work with and then STOCK!!!!!
Lacey, you are getting home delivered Welsh cakes? You are so bloody cool!
We purchased our tree at Costco. $31 and it is perfect! Not too big. Not too small. Just right. And the price is ridiculous!
The house renovations continue to consume most of every day. My to-do list is growing every day. This only begins to describe what our days are like.... each day is an adventure. The Great Sergio says he wants/needs to be done with our job by February 1st. Amazing isn't it?

Lacey - love your tree. I did sort through ornaments last year and got rid of a ton of stuff. I still had the big old outside lights that my parents past along when I first got married. Also chose a bunch that I know nieces, nephews & their children would like in the future, so those went in the gift drawer & they'll get one every year. My favorite tree was the years we were flying out of town to my folks so we had a live Norfolk Island Pine.

A package of ground turkey and a box of chopped spinach are thawing. I will mix them together with other ingredients and make a meatloaf or meatballs. Haven't decided. The meatballs would need a tomato sauce. Veggie will be sautéed yellow squash and zucchini.

Continuing my lazy gastronomy, ordered out for Peking duck, wonton soup and stir-fried Chinese broccoli. I had one wonton and one little crepe for the duck last night (skipped the rice), and had another duck rollup this morning. Just that little bit of carb made my weight rise a pound and a half. Sigh.

Tonight I was STARVING. This doesn't happen often these days, so we decided that Chef Lorenzo should cook for us. His small Mexican restaurant is turning into a favorite spot for a casual mid-week supper. I ordered the tortilla soup and a tostada. This was my first time ordering his tostada and to be honest, I think it was the best one I have ever had. A crispy tortilla topped with his delicious black beans, grilled dark meat chicken, some shredded lettuce, crema and a bit of queso fresca. The plate had TWO of these guys, but Mr. 02143 did me a favor and ate the second one with gusto. Next time, I will order one and ask for a bit of pico de gallo and some salsa verde. Mr. 02143 had the carnitas plate with extra pico de gallo. You can always tell when Chef Lorenzo is in the kitchen. The serving sizes are really large. 6:30 on a Wednesday night and we were the only people in this 18 seat spot. I guess around here, people really want tex-mex and don't know or value real Mexico City food. I will miss them terribly when they close.

Made tomato soup and grilled cheese sammys for DH and DD, I am fasting except for a hot caramel apple spice drink - I tolerate anesthesia better this way.

p.s. Computer is acting up which isn't acceptable when you make your living as an IT specialist. I am going to wipe my drive and rebuild. I might disappear for a day or two while I undertake this arduous and nerve-wracking task.

Tomorrow I'm finally getting all new windows. I spent today dragging furniture to the middle of the rooms, but I have some pieces in front of windows that are too heavy & they will have to move. Dinner was easy - baked flounder fillet w/butter & Penzey's Foxpoint seasoning (salt, shallots, chives, garlic, onion & green peppercorns); 1/2 a baked potato & green peas. I expect I'll spend tomorrow afternoon & Friday dragging all the furniture back into place.

Minus, I am admiring and envious of your having that window job done. We could really do the same in this hundred year old house, but the reason I keep deferring it is because of the work it would involve clearing the way for the workers, the worry about mess...and my allergic reaction to having our "old construction" floating around in the air. I hope yours is messless and fast. My next door neighbor raved about how easy it was. Hmmmmm.
Sounds like a great meal, Susan! I forget the news you probably shared that your fave mexican restaurant was closing. That's disappointing. Good luck with your computer fix.
Tonight our menu was based on a fridge search. Found two portobellos that I stuffed with diced onions, potatoes, carrots and a bit of the chicken leftover from last night. Added some balsamic and topped with mozzarella and parmesan. Not too special, but good enough. Salad was blend of baby spinach and romaine, red onions, orange bell pepper, grape tomatoes, and some diced spicy cherry peppers that I get in a jar from Trader's. I recently bought a bottle of a pinot grigio vinegar that adds the most delightful flavor to my salads. So I use it often with EVOO for a refreshing light dressing.
Am trying to get motivated to start my pizzelle making process....and wondering if I can possibly alter the ingredients to make them "doc vegan" friendly, so I can bring them some on our visit next weekend. Oy! DDIL was always crazy about them. Wondering if she strays from her vegan regimen for special treats. We'll see....

My favorite Mexican restaurant is not closing... yet. But they can't stay open with the number of customers I have witnessed. I am on an old computer.... the reformatting isn't going as well as I had hoped.
