Thank you for the excellent food report, Susan! You are very good at this kind of reporting. You must have inherited some of your mother's journalistic talent. I'm glad your dh enjoyed your leftovers. I've seen boar ragu prepared on tv cooking shows. I wonder where the restaurant gets the boar meat. We have wild boars in the woods and swamps and people kill them because they're vicious and can be a nuisance but I haven't heard of anyone eating the meat.
I have never seen a picture of Minus or Susan so I don't know who is who in the picture. I recognize Lacey.
I plan to cook leek potato soup tomorrow using the recipe I've used before, one that Susan recommended. I will add some ham left over from today's heavy noon meal at my mother's house. The weather has cooled off enough to enjoy soup.
I hope Minus has a wonderful vacation.

I'm glad to be seeing pictures of some of the folks on here. I think I know who is who. From left to right...Lacey, Minus and Susan. Is that right? I hope I didn't embarrass myself (or anyone else).
Fall has finally fallen here. It was 107F degrees last week. Yesterday and today it was in the low 90s.
Sharon and I turned today into a "get a lot of projects done" day and DD was doing homework..so today was a fend for yourself for dinner night.

And our weather has cooled off enough to REQUIRE soup making! Apologies for not naming photo subjects....Lacey on left, Minus in middle, Susan on right.
Went to Farmer's Market today and loaded up on really big arugula, beautiful spinach, pea tendrils, my favorite lettuce bowl lettuce, scallions, tomatoes and assorted other veggies. Corn was dirt cheap so DH got 14 ears...pretty poor end of season quality, as my father used to say, "cow corn". I have yet to decide if it is even worth trying to make a chowder with. If not, maybe, I'll leave it out for our returned groundhog. Ha! He is so annoying and entitled!!
So I spent the rest of the afternoon sorting and cleaning food stuffs until I developed an annoying headache and sore throat, leading to my deciding we could do take-out pizza tonight and I would just make a salad, which we did.I used some of all my precious greens, some red onion, a shaved carrot and golden raisins, dressed with evoo and white balsamic. Very nice with our take-out margherita pizza. Some chocolate brownie ice cream later in an attempt to soothe my throat. Annoying to catch a virus as soon as Fall starts.

Bedo, I think you are the vegan that eats fish, so I have to ask, would some ham be ok added to the split pea soup?
When I went to the hill I n St. Louis I got a couple of prosciutto bones that Maria said her hubby adds to split pea soup.

Hi everyone! Remember me??? I wanted to pop in and say...perhaps make an effort to come back. Life has been so busy! As the boys are getting older our schedule seems always so full. We had an amazing summer with a lot of camping trips and trips to the lake several weekends. My boys finally learned how nice it is to sleep in this summer which was amazing. Not so amazing now that school has started and I have to wake them up every morning now!
We are getting ready to head to our last camping trip this weekend for Columbus Day weekend. For those of you who remember this is our Halloween Camping weekend where the campground has trick or treating, pumpkin carving, hay rides etc, year every year. This is our favorite trip of the year and will be our 5th year doing it which is kind of amazing considering my youngest is 5 1/2!
My oldest son turned 8 this past weekend and we had a camping themed friend sleep over, 7 boys! His bff has a birthday a few days after his so the other mom and I did a joint party and it was cheap and a blast! 7 boys and the other mom and I all slept in our camper for the night. They had nerf gun wars for 5 hours outside. We gave head lamps as party favors and they played flash light tag until they collapsed. Loads of fun!

Lovely photo Susan, and I feel almost embarrassed to say that I am actually headed back there this Wednesday (no, I did not forget my wallet or cell phone!) since DH was dying to go after hearing about our meal and we will be in the general neighborhood to see LaBoheme. While I was busy languishing upstairs trying to manage my head cold this morning, he made a reservation. It sure beats Flemings and some of the trendy newer restaurants in the Theatre District. I will eat a very pared down version of the meal we had Saturday, and am glad to know that I can get a half portion of a special pasta dish if one sounds as good as your wild boar selection was.
I had no intention to cook tonight, but needed to get more greens and protein into me....so made my favorite sauté of two types of kale, onion, red bell pepper, mushrooms, and garlic with poached eggs on top. Oh, and some sprinkled mozzarella cheese melted over the whole thing. Yum! Salad was baby spinach, baby arugula, green onions, chopped pea tendrils (they make their way into all of my salads after buying them at the Farmer's Market), sliced pear and golden raisins with (again) white balsamic and evoo. We both enjoyed that weird little meal...putting it together was the only productive thing I did all day. I washed some extra greens so I can make some smoothies to have on hand for the next few mornings. Better get to it before I fade out....

Great to have you pop in, Laurie! I agree that you and the other mom are two brave women. The enchilada recipe looks yummy. Almost everyone on this thread has cooked/does cook your salsa chicken. Some of us have even modified it by using pork instead of chicken. Minus uses only green salsa. I thought about you during the past year when I made stuffed shells. I remembered that the shells were one of your regular dishes.
The leek/potato soup was/is very good. So silky without any dairy. I added bits of cooked ham. Our weather today warmed up quite a bit so that it wasn't really soup weather tonight but we had the soup anyway with a good romaine veggie salad and some bought French bread. Bread is too much temptation for me. I ate more than I intended. With butter, of course. My plan was to make garlicky croutons but I ended up just heating part of the loaf in the toaster oven until the crust was very crusty.
Tomorrow I plan to check out Fresh Market after I play golf. I may buy some salmon for dinner, depending on what is available. Lacey is making me feel guilty about not eating sautéed greens. Maybe I'll find some nice Swiss chard, which is my favorite greens aside from fresh-out-of-the-garden mustard greens.

Lacey, I feel like a restaurant match-maker who has had a success! Oh I hope that the mackerel is on the menu so Mr. Lacey can enjoy it too.
Colonoscopy prep here for Mr. 02143 so I made him some chicken broth and I ate the rest of the boar ragu. We are making an offer on a property tomorrow. Wish us luck!

Today was DH's birthday. His wishes were: French toast for breakfast; to go see The Martian; homemade pizza for dinner; a chocolate birthday cake with chocolate icing. All wishes were granted. (The boiled cider was most excellent on the French toast).

The dinner looks and sounds so fun! Loved the picture and wish we could all have been there - but with the great description of the eats and the sweet snap of our three lovelies - it kind of felt like we were! Yay!

I haven't really been cooking much of note lately. DD is doing the 21 day fit thing - mostly non-cooking because it is hard to combine very many of the acceptable ingredients into recipes, easier to just eat the things by themselves, lol! DH was out of town, and I was unmotivated to do any cooking just for me. Yesterday was the Bucs/Panthers game, got rained on about 17 different times and ate some soggy sweet potato fries in my poncho, the game was a debacle - was a wee bit cranky by the time I got home, so didn't cook, lol! Fortunately, DH made himself a sammy. Unfortunately he used all of DD's 21 day fitapproved low sodium turkey.

Tonight the boys both have soccer practice so I put beef stew in the crock pot for dinner this morning so it will be ready when we get home at 7. Tonight DH and I need to plan our food menu for our camping weekend. I am soooo looking forward to this trip! We get to sleep in, have fun-no sports no school! My youngest got his costume today and he is going old school vampire. I'm psyched he isn't a power ranger or something like that! My oldest can't decide and needs to figure it out fast!

I found wild king salmon at Fresh Market and bought two 8 oz fillets. They're thick in the middle. I'm thinking of doing a baked recipe. Whole wheat panko crumbs with chopped cilantro and parsley bound with a little olive oil. Pressed on top of the fillets, which are supposed to be spread with sweet mustard, whatever that is. I'll use either mayo or grainy mustard or just oil. Very hot oven for 10 to 15 min.
Fresh Market is a zoo on Tuesdays, when the chicken breasts and ground chuck are $2.99 a lb. You have to take a number at the meat and fish counter! I also bought chicken legs, a ribeye steak, and ground chuck. Rao's was on sale for $6.99 and some other items, too. No Rao's Puttanesca, though. I bought a marinara to have on hand. The swiss chard was huge leaves. I didn't buy it.
Sides tonight steamed broccoli (yawn) with a little butter and fresh lemon juice and a salad.
Last night I announced to dh that I planned to let my cooking magazine subscriptions lapse. I immediately found a great recipe for a base potato salad with about 6 variations in Eating Well. Then I opened up Cooking Light and liked the first three recipes, especially one for stuffed cabbage using Savoy cabbage.
Ina Garten just cooked some salmon fillets on her tv show. She seared them for two minutes on the stove top and then popped them into a 450 degree oven for 6 to 8 minutes. They were skinless fillets.

That method works well with skin as well. What I love to do with skin-on salmon is throw my cast iron fry pan into the oven and crank the broiler to 500 or 550º. [I have a really powerful broiler, so I move the rack down away from the heat source a bit.] While the pan is heating, melt melt a bit of butter and put on a plate. Rub the fish into the butter, and then top the fillet with some herbed-slightly moist with butter bread crumbs. When the pan is screaming hot, carefully remove the pan, put the fish in skin side down. Back into the oven for just a few minutes, or until your preferred doneness. Such a lovely way to cook this fish. And fast!
Ina also does a roasted salmon [but using a whole side, though it works for fillets as well. She mixes some mayo, dijon mustard, and a bunch of herbs. Shen then puts the salmon on a baking dish [lined in foil] and pastes the dijon stuff on. Ah, the "paste" is a little different... here is the recipe. I made this once or twice and it was excellent.

I had my last radiation treatment today and feel a bit weak. Making sure I'm drinking enough water and trying to eat more protein even though I don't have much of an appetite. Lost my appetite for meat so I made some lentil soup for dinner.

meezers - try some Greek yogurt - easy to get down and has quite a bit of protein, you can add some peanut butter and sprinkle with chocolate chips to improve the taste and make it seem like a treat - also maybe scrambled eggs with some cheese? I hope you feel better soon!

The salmon was a home run! The herb and bread crumb coating was crunchy and delicious and the doneness was perfect. Even dh said it was good. Thanks for the tips, Susan. I feel confident enough now to serve salmon cooked like this to company. As Susan said, the cooking is done fast.
I had too much food and couldn't eat all my broccoli and salad. I should have gone with one side since the salmon fillets were 8 oz. each. We ate all of them.

Phew. I would hate to be the person who "ruined" your fresh, wild caught salmon.
Mr. 02143 had his colonoscopy today. After it was all done, and the doctor praised his prep, we headed home, right past Sweet Tomatoes. We are not stupid, and we were hungry, so we stopped and bought a large Pesto Splash pizza. We hardly ate any of it, and packed it up for lunches. We ate at around 2:30, so for dinner I warmed some chicken stock pulled from the freezer and I made a chicken noodle soup. I love the Greek short noodles, and only sautéed some onions and carrots. More than that seemed like too much, so a very simple soup.
Our offer was generous enough. Out of the four offers, we are the one that is in negotiation. Such a difference from the last negotiation. Generous responses. Concerns are addressed, and we are being treated with respect. We are really close to a document everyone can sign. The issues on the table are not about the money! I think we will own the right to buy this property by tomorrow night. Or, there will be a huge offer submitted while the sellers gather information that knocks us off the blocks. If we actually get this property, the renovations will begin. _sigh_
