I hereby don both Carole and Nance with the title of "Resident Fish Slayers and Preparers."
Dinner was fresh local green beans, potatoes with local Spring onions and young garlic, and a two day aged Prime steaks. There is a ton of food left. We have decided that I will use the potato and green beans in a fritatta in the morning, and Mr. 02143 thinks he might have a bit of steak as well. Steak and eggs is traditional isn't it? The ribs have been rubbed down and will be ready to smoke in the morning. Mr. 02143 has requested the vinegar cole slaw, and a tortellini salad. The tortellini salad has some sun-dried tomatoes, pesto and some raw veggies, with of course, Greek vinegar. I am thinking I will also add a raw spinach salad. I need to add some dark greens to my meals as often as possible.

I started at noon on the 4th and just got back to the hotel at 3:30am on the 5th. Dinner was Cliff Bars and water.

Sorry, Eric. That does not sound like a nourishing meal!
Today was a bacon day. About 10 am we had breakfast. Bacon and over-easy eggs with a toasted multi-grain English muffin. I am not a jelly/jam person but I love the berry jam I bought from the bread and pie lady. She cooked a lot of different berries together and I can taste the raspberry.
Tomorrow dh and I are planning to drive to two different locations to look at boats advertised on Craigslist/Bemidji.
Not sure what dinner will be tonight. There's a lot of jambalaya left. I wonder if brown rice freezes well.
Susan's steak sounded very appetizing.....

Carole, I often freeze brown rice. In fact I just used some in jambalaya last week!

Thanks, Nance. I think I'll freeze the jambalaya in a couple of portions. First, I may have to remove something from the freezer to make room!
Did I mention that my next-door camper neighbor made some ice cream in one of those little square ice cream makers that was the best vanilla ice cream I have ever tasted? Of course, ingredients included cream and half and half!

Went grocery shopping for a bit yesterday, had no other plans as we stayed with the very nervous anti-fireworks dog while DD was out on the boat with friends. Came home from the store to find that one of our two AC units had frozen and ceased working - anyone who has been in Florida in the summer knows what this means for comfort in the house. The good news is that our house is L-shaped and the other side is relatively cool. We closed all the doors in both the hot and cool parts, and DD and I dragged a twin mattress into the study on the cool side so she could sleep last night. She is at work today in the AC. I did broil steaks last night and had 3-bean salad and pasta salad that I had made earlier. The bad thing is that the kitchen sits in the middle between hot and cool, we are not calling for service until tomorrow, so I am trying to be judicious about what I am cooking so as not to heat up that area more.

SpecialK, I can definitely empathize especially since I turned on the a/c here in the camper about an hour ago. If it cools off later, we can open up again.
I took out a ribeye steak for dh to cook outside on our portable gas grill that was pricey and worth every $$$. It has been with us for a lot of miles. I also have some asparagus and salad makings.

Took the last of my cooked turkey breast out of the freezer this morning and a pound of ground chuck. Inspiration will surely come soon to use one of the other. Speaking of hot - I don't like to use the oven in the summer. So although I was hungry for meatloaf when I took out the meat, the 96 degree temp & the 96% humidity is a deterrent. Could be a big salad w/the turkey. Could be meatballs in the electric skillet w/some Raos.
Special - you have my sympathy. We live in areas where A/C is a requirement. I remember moving to Houston from New Mexico in 1973 and telling my DH that I didn't need an A/C in my car because we could just go out for ice cream after dark when the temperatures fell. No such thing as cool down!!! So I'm thinking about Carole, who perfectly understands our heat/humidity issues, up in the north country...
Eric - wow, you have some intense duty. Are you there for a month? Or 6 weeks? I probably wouldn't have bothered to eat at all after a day like that.

Minus, I have a fairly large toaster oven that I use when I don't want to heat up the big oven. I miss it when we're living in the camper. My microwave oven is a combination microwave and convection oven but I haven't mastered using the convection capability. I'm thinking we will probably buy a bigger gas grill, which could be used as an oven.
I steamed the asparagus and am cooling it with ice. I'll make a salad with slices of tomato, asparagus and avocado with a dollop of mayo or bottled dressing of choice.

Yeah, it's probably time for me to finally break down and buy a toaster oven. Decided on a meatloaf so I'm just staying out of that part of the house while the oven does it's thing & the A/C stays on. Wish I had a potato. Maybe rice?

Hi Ladies----and Eric, I am wondering if any of you have used something called a NuWave oven? It sits on the countertop, maybe it is a convection oven. I think they hawk them on QVC>Anyhow, I was at the flea market on the 4th of July and this gal had one in her booth for $20.00. Of course, I did not have my old lady cart with me and it was too heavy, so I passed on it, plus the kitchen in Carole's camper is probably bigger than mine... Now I am kinda kicking myself. I know when I've seen them on the info-mercials that if you order in the next 15 minutes, you get a second one for Shipping and handling.....
Should I have bought this??????

Having serious missing daughter issues now that she married purely psychological probably. She called me today and said, spontaneously "take a vacation and come hang out just the two of us"
We've always been close.
I'm just afraid that when her husband graduates from Yale granulate school - he's in New Haven during the week now, they'll move away out of necessity for him to find a job, even though they want to stay in Boston.. Oh, that empty nest.

Red, I have no idea what the NuWave oven is. I personally have Breville oven envy, but to be honest, it makes no sense for me to buy stuff given my circumstances. If you look up the price on the full, counter top Breville prices, have your smelling salts handy.
Bedo, you know... as I told the kid when she was musing about college in California, you can follow them anywhere they might go. Your skills can be sold anywhere after all. Imagine this, Bedo-Trailer following young people like they are the Grateful Dead wherever they go. :-)
The ribs were wonderful. It took me 3 hrs to make the three salads. Ridiculous. Thank goodness there is enough for at least another meal. It took Mr. 02143 three hours to smoke the ribs. The kids joined us for dinner after they returned from visiting my Mother in the North Country. While they were there, my mother was given 25 minutes with Hilary Clinton, interviewing her while the national press watched from the sidelines. She does love presidential season. To be a journalist in NH during primary season is a total rush for her.

Bedo, there's no reason you won't continue to be close with your daughter in this new phase of her life. It's normal to feel nostalgia for the past. Susan has a good point about your mobility and job skills.
The plan is to do some driving this am and look at a couple of boats in two different towns. One towned called Perham is pronounced "perm" by the locals. When I pronounced the name with two syllables, I got puzzled looks! We'll probably eat lunch out somewhere and that will be our main meal of the day.
Minus, I dragged my feet about buying a toaster oven, too. I recently gave away the 4-slice toaster. The oven I bought is a Cook brand. It's not huge but not one of those small ones, either. Be sure to buy one with the removable tray on the bottom for easy cleaning. The cost was under $100. I don't remember exactly but it was on sale.
Last night's ribeye was cooked perfectly, medium rare a little on the rare side. That's probably my favorite meal, steak and salad. Or steak and potato.

Carole, that's exactly what I ate last night. The hotel has a grill outside, so I cooked up a ribeye steak and a potato--medium rare.
I've heard of the NuWave oven, but I have zero experience with one and I don't know anyone who has one either.
When I'm baking some food and want to do baked (or twice baked) potatoes and the two foods' baking temps aren't compatible, I use the toaster oven. It works quite well. It's not the biggest toaster oven out there, but it works well. I can't use the toaster oven and the microwave oven at the same time because both are on the same electrical circuit and using both will trip the circuit breaker (blow the fuse).
Tonight is probably going to be hamburger or spaghetti. I've not yet decided. I don't want to buy too much stuff, so the menu is somewhat limited. :-) I'll be leaving on 11 July--a two week deployment.

Thank you Susan, your post made me feel better. She actually said, "If we move to someplace horrible like St Louis would you actually come there for 2 years until we found a better place?" St Louis is not horrible, just hot, and yes I would if she were having my grandchild. I would miss my friends here, but they are more family to me than my family.

I packed cottage cheese, cherries, grapes. cold cooked corn on the cob for lunch tomorrow with sushi. It's Pollock I see on the label. Susan and all, is that another horrid fish? lol
The striped bass was good, kind of fatty cold for lunch.

Pollock is real fish... enjoy! I rather like pollock though it is not a high value fish. Most commercial pollock gets turned into fish sticks. I think pollock is particularly fond of green herbs, butter, and lemon. A few capers are not a bad idea either. Ohhhhh... I just goggled and someone is suggesting parmesan-herb crusted pollock. How delicious does that sound?
Dinner was exactly the same as last night. Gosh am I getting lazy. We had the rest of the Pho for lunch. Went to view another house after lunch; well not the inside but the outside and the neighborhood. Since we had to drive by a Whole Foods on the way, I replenished our tart cherry supply for granola, and the black turtle beans.

Dinner tonight will be popcorn w/LOTS of real butter & salt. It's a choice between that or macaroni with real butter since aerobics class was late & I'm too tired to do much else. At least I had salad for Eleveneses (like Pooh) & protein for very late lunch - left over meatloaf.
Thanks for the toaster oven discussion. I hate to give up my wide mouth Oster toaster, but...

MinusTwo: medium-rare potato--don't ask. You don't wanna know. But popcorn with real butter and lots of salt sounds like an acceptable dinner for those "I'm too tired to cook" nights after a hard workout. But I admit nothing. Except that a good toaster oven is marvelous.

We subscribe to Blue Apron. (Blueapron.com) They send you all the ingredients for three dinners in a refrigerated box but you still have to prep and cook. Saves us from meal planning and grocery shopping and is pretty darn tasty. Takes about half an hour to cook, you can choose vegetarian or carnivore and even eliminate certain meats, like pork or shellfish...
We had fried chicken, little buttermilk biscuits and kale salad tonight. It's meant for two people but could feed three or have leftovers for next day's lunch.

DH really liked the fish and chips in Seattle, where the fish is cod, I think. I would order salmon when we ate out in a restaurant and he would order cod.
We had lunch yesterday in the tiny village of Vergus at Billy's Bar and Grill, which had been highly recommended by some of the folks here at Pine Hollow. I had a California burger, which means it's served with lettuce, tomato and mayo. I chose blue cheese as an add on. It's a 1/2 lb. pattie on a bakery bun and came with kettle chips and pickles. It was juicy and delicious.
So for dinner last night I had cheese and crackers with pepper jelly. DH had some warmed up jambalaya in addition to some cheese and crackers.
We still are not boat owners. DH liked one of the two boats we looked at, but the owner refused our offer. It was a good thing because dh had decided by this morning that the 75 hp Evinrude was too much motor for us.
No thoughts about dinner but I bought a small rack of baby back ribs yesterday.

Last night was stuffed red and green peppers, I made them with ground beef cooked with onion, garlic, shredded carrot, tomato paste, a bit of water to thin out the paste, brown rice, crushed red pepper, S&P, and some almond mozzarella. I topped them with more of the mozzarella and a sprinkle of bread crumbs and then a drizzle of olive oil. They were good - also made the Whole Foods copycat Cabbage Crunch Salad, which is shredded cabbage, sliced almonds, scallion, black sesame seeds and the dressing is vinegar/olive oil/honey. DD works tonight so will just be DH and I - I am thinking turkey kielbasa sautéed with the rest of the unused cabbage, not sure yet. I also have some cooked chicken breast that needs to be used so might do a salad - it is very hot here and we are still AC-less in the kitchen half of the house, ugh. The good news is that some of the broken parts are still under warranty, so less cost, but because we had a leak we have to replenish the refrigerant. Hoping it is fixed tonight.

Dinner will be fish tacos made with two nice-sized walleye fillets that were given to us. I bought some corn tortillas yesterday that looked good. We have avocado and cabbage.
Today is a perfect golf day, low humidity and sunshine and temperature in low 70's. We played golf at a lovely little course near the campground. Sadly, I had to rent a cart and dh walked with his push cart. In the past I walked, too. It was most enjoyable to be out on the course on such a gorgeous day. Since I didn't get much exercise, I'm feeling that I should accomplish something this afternoon, like cleaning the windows outside and in.

Steak and salad or potatoe is one of my favorite summer meals. Had one Sunday night
Tonight is spaghetti with sauce.....and probably the last two of the six black and white cookies I bought yesterday at Fresh Market......craving sugar like its going to be taken off the market or something.....weird........
Fish taco's I have never tasted, and I really don't think I ever want to.. I like fish, I like taco's but the thought of combining the two just makes my throat close

Tonight for dinner nothing really, it's too hot.
Packed up watermelon, grapes and blueberries in a jar for lunch tomorrow, and "Lobster delights" Pollack, ( Yay!) to have with cocktail sauce, a boiled egg, and cooked corn on the cob-not so good the next day but serves it's purpose.
Hope that everyone in New England is able to deal with this heat.
Sorry to those in the Southern states, I am a weanie and have never adjusted. I know that some love the heat.:)

Scored some fresh grouper today (at great expense, talk about a swoon) so that was dinner with fresh corn on the cob and a French green bean potato salad. Oh yes, and watermelon. Very summery feeling dinner.

Beef and broccoli stir fry tonight. I usually make a half recipe, but tonight due to a large amount of ingredients, I made the full one. Oh my was that wok heavy! We have enough left for ample lunches tomorrow, in addition to the three servings tonight.
So, I have a French cousin who is going to arrive with about 10-days notice! She is 18 and I am scrambling to figure out how to fill the month plus 4 days that she will be here. This is going to be complicated! So far, I imagine the Freedom Trail, a harbor cruise, the Peabody Essex museum, a water park [just cause it is so American], clam shack, a Red Sox game...... other thoughts? I have never met this young lady, though I know her parents and grandparents.

Susan - I'll be excited to watch what you come up with. If my friend doesn't back out, we will spend a couple of days in Boston around the 1st of October, then catch a Royal Caribbean cruise up the coast. I said I'd be responsible for activities in Boston & finding a place to stay for the days before we get on the ship. My friend has never been to the East Coast except for a week in NYC in 2013 when I had to back out for treatment so she'll want to see much more than I'll have the energy to accomplish. Thanks for sharing & I'll look forward to Lacey's input too.
