    Been lazy or overwhelmed here, you decide. Lunch was a French omelette with a bit of gruyere cheese. Dinner will be angel hair pasta with a sauce that has lemon and just a touch of cream, served with some cold smoked salmon. I heat the salmon in a bamboo steamer so it doesn't dry out. Not sure if there is enough lettuce for a salad. If not, English peas will substitute.

    I love lemon cakes. My daughter made one last weekend. I only had one bite, but it was wildly moist and full of lemon flavor. I think it was from the Flour recipe book.

    Add me to the list for wanting lemon cake. Yum. I have two small 1/2 pints of blackberries I need to do something with. Suggestions?

    Kinda back to serious cooking. Last week was just to plum full to do much. Wed. was eye doc day then of course I couldn't see a thing for hours. Thur. I took myself to the GI doc who recommends another dang blasted colonoscopy (had one Dec. 2012). I know it is for my own good. Scheduled one then promptly discovered it was on DH's day off he had traded with another worker. Tomorrow when I have the day to myself I will call to reschedule. Then Friday we went to Oklahoma for the weekend. I had to get things ready like dog, food, clothes, goat sitter. Food last week was a blur.

    Yesterday I mashed up a can of Trappey's black beans with garlic, onion and olive oil and heated then with some salsa and lime juice. Made burritos. Don't think I will ever buy refried beans again. These were great. Had them for lunch today. Tonight we are grilling a tri tip steak that DB and SIL sent us for Christmas and some giant portobello mushrooms. The burgers the camping friends make are always pink and I just don't eat pink hamburger. Now steak is a different matter. So I've been taking the portobellos to substitute for me. Ended up with an extra package. DH won't eat them so I'll probably make something weird for me tomorrow - rice with mushrooms or something. Any ideas for leftover giant mushrooms?

    Susan - I would vote for overwhelmed. I only went about 1.5 hours away and I felt like I was forgetting stuff. Gosh look how far you are about to go and your arrangements.

    A daughter (age 24) of friends is getting ready to go to Paris and Italy. Her aunt is retired, escorts small group tours. She has a Paris apt for a month in ?June I think. The girl is spending a few days in Paris with aunt then taking the train to Cannes then across to Italy to Cinque Terre. She has been to Italy b4 but I think northern Italy. Aunt married an Italian though now divorced but speaks great Italian. Girl I think Spanish OK. She is a budding chef. About to open as sous chef a new restaurant in Dallas offshoot of where she works now. I am extremely jealous but don't think I could have done that at 24.

    Here is the dry one . I tried this one twice. Also the cake I get from the Italian deli has lemon curd in the middle not frosting . Heads up if you try this one . There is twice the amount of frosting needed (in my opinion) . I picked this one as it looked like "authentic Italian" to me .

    My apologies I should have read up before replying ........... Both of those cakes sound great and I will try them as well. I promised my DH that I would try and replicate the deli's cake. He is not big on sweets but loves that one (go figure probably one of the hardest to make and to find a good recipe for ).

    Fiaranch - interesting that there is a link inside your link to also see "Limoncello Bundt Cake". That one is similar to Special K's except it's Jello Pudding instead of regular jello & does have the measurements to use Limoncello.

    Welcome, Fiaranch.  I second Susan in inviting you to chime in. 

    I can resist lemon cake, bars, etc.  They aren't brown! 

    Somehow "lazy" isn't a word that comes to mind to describe you, Susan. 

    Yesterday I took my 2003 Camry to a Toyota dealership for service.  I wandered into the showroom and before the day was over, I had bought a new 2014 Prius.  The rebate and zero interest financing roped me in.  I'm having fun with the bells and whistles like Blue Tooth connection to my cell phone so that I can answer and make calls with the phone in my purse.  I like the back up camera and the built-in gps.  With me, there's always some buyer's remorse when I spend a chunk of $$. 

    I have quite a bit of lamb in the freezer.  So far I haven't cooked a single package of the lamb I ordered from the Indiana farm.  I need to find some recipes for dishes that aren't "heavy."  I have two pkgs of kabob chunks, shanks, and a boneless shoulder roast.  Also one pkg of ground lamb. 

    Dinner tonight will be a shared ribeye, small boiled potatoes and a salad.

    luv - I vote for blackberry sangria!

    carole - I actually laughed when I read about the car - good for you!  Sounds like something I would do - I love a sensible impulse buy.  You will enjoy the back-up camera and the phone and GPS.  I am somewhat of a techno idiot and I use all that stuff all the time - it is great!  What about marinating the lamb kabob chunks and grilling them and having some Horiatiki salad and maybe some rice?

    Tonight in honor of susan packing and planning I am making a quick French onion soup and shrimp Louie salad which is not French, but it sounds like it is, lol!

    fiaranch - you could do the Jello cake recipe in round pans and put lemon curd in between - I bet it would work.

    Special, your lemon cake adaptations sound lovely...I bet it turns out delish, especially with the lemon curd in between layers.

    Welcome Fiaranch! We are a varied group and would love to have your ideas and recipes once you have time to enjoy your cooking time as you retire.

    Tonight I was planning to just warm up the roasted veggie lasagna, but remembered that I bought artichokes a few days ago, and wanted to use them while still fresh. So I used that Sicilian red sauce artichoke recipe that I found on UTube.....with a few of my own variations. They were quite good....as was the leftover lasagna and our Greek style cuke salad. I also made garlic bread.

    Off to watch the girls play.....with fingers tightly crossed! ;)

    This is the 2nd most requested recipe in the house . I add 2 cooked chicken breasts (sliced thin) for more protein and I use Udon noodles.

    Ok ladies, the "thing on my surgical arm that grew under my cast" is questionable. The derm gave me the option of her taking a sample or taking the whole thing off today.  I opted for the whole thing.  She marked potentially cancerous on the biopsy form and told me IF I had to come back it would be minimally invasive, perhaps with some ointment added in.  She thought it might be an "age spot" that decided to go rogue in a new environment......  She thought she might have seen another tiny one forming close by, and she took something totally different off the web between my index finger and my middle finger, also on the surgical side. It had popped up about 2 weeks before the cast came off and itched like the dickens, but it was red.

    Good news was I won 2.00 on a scratch off lottery ticket a friend put in my b-day card.

    We had a tragic  plane crash near our airport killed all 7 guys on board who were returning from the NCAA game. Plane didn't arrive at midnight and they found the wreckage about 3 this am.  Killed the ISU Assistant Basketball Coach, the Deputy Director for the Athletic Dept. External affairs, the owner of the Local college Pub, a broker from my brokerage firm,  A business exec from Sprint, The Pilot, who used to fly coach Weber and the U of I team and did a lot of mission work in Haiti, and the owner of a Meat packing business.  His father owned the plane, but wasn't on board.  All good family men who did much in our community.  We had light rain and dense fog, but FAA is't sure if it was a factor.  Evidence of a small fire on impact. Everyone was found strapped into their seats. Four had to be id'd by dental records.  My town is 180,000 but when this kind of stuff happens, we are a small community.

    Red, I heard about that plane crash on the news. Thoughts with your community which must be in terrible shock. Hoping for you that the biopsy is a dud!

    Luv, I'm envying your large portobella stash. I, of course, would sauté them with garlic, onions and my favorite greens....kale, or maybe even chard. Sooo healthy and tasty as a side. If you are dining solo, add an egg or two on top, and it is lovely (for odd eaters like me, anyway!;) For more mainstream folks, how about roasting them, sliced, and adding to lasagna, or quiche....or makea nice rice dish with them and scallions. They are so wonderfully meaty! I just read yesterday that portobellos characterize the fifth taste sense of umami.

    So the ND ladies lost....not in a blow out, but they certainly did not bring their best game. UCONN has amazing talent, and will certainly be back for another trophy next year.

    Fiaranch - don't worry, there are lots of us who lurk & occasionally post who specialize in 'quickie' meals & easy recipes. Sometimes I have popcorn for dinner. We learn so much from our talented "chefs" (note ladies, I didn't say "cheffettes") (are we back to the hamster's ham discussion?).

    Carole - I have a 2003 Camry. Hmmm.

    Love all the meal plans. Susan - I agree. I don't think you have the genes to be lazy. Hope you'll have some time to slow down before your trip.

    red - I also read about that crash yesterday - so sad - and I am sure the community is reeling. Hoping the "thing" under your cast is not a problem.  I have had many skin cancers, seems like at a more frequent pace since chemo, and I have had them removed by every method.  One thing I can say is that the farther any of these lesions is from the heart (extremities) the longer it takes for them to heal - legs ones take forever.  So, don't fret if it seems to be taking a while before it is fading.

    On the portabella discussion I have seen them broiled briefly then crack an egg into the mushroom and bake it for about 15 mins. with a bit of parmesan sprinkled on top.  I always thought it was a unique recipe, but have not tried it since I am weird about mushrooms - I only like smallish ones - love baby bellas, the big ones not so much.

    Fiaranch, not sure what you mean about being careful about what you post? I'm thinking about you having more time for fun with food once retired...and also having "post" time. Anything goes here..... :)

    Heading to the gym this morning, then prepping for my Kindergarteners with whom I plan to do role plays tomorrow about bullying prevention.

    Carole, your car buying scenario is exactly the way mine transpired six months ago. Enjoy your new wheels!

    We'll be doing rosemary/balsamic chicken breast leftovers for dinner with butternut squash and salad.

    Luv, I like to grill those giant portabellas, you can baste them with some balsamic or not. Very meaty and delish.

    I have this cool watch that has a clip to you hang it from your bag. The face in that position is upside down so when you raise it to view, the face is the correct direction. I bought this on a whim years ago, and stopped using it when we all got cell phones. Took it to the watch guy and for $6 he put in a new battery and it works just like new. The watch shop just happens to be next door to the chicken guys. On a whim, I have decided to make chicken and rice for dinner using Puerto Rican flavors. My frozen sofrito is out thawing as are the garden roasted tomatoes. A trip to Rite Aid provided me with individual laundry detergent packets so I don't have to find that in Europe or buy a huge container. And I have a pouch for coins, finally. Buying things in Euros involves lots of coins. They are worth real money.

    Taxes are done. IRA is purchased. Technology bag is packed. Now onto kitchen and clothes.

    Red, for some reason, we missed this story on the news. How very tragic. Truly a waste. I guess that is the proverbial bus we keep hearing about.

    Bedo, Minestrone soup sounds perfect for today's weather. I bet your house will smell wonderful.

    Carole, that is about the funniest story I have ever heard! I bet that salesman gets an award! We could start posting car pictures next.

    Lacey, your Easter diner sounds like so much work! What a collection of needs around that table. The leftovers are they key however. Getting three or four days off seems like a decent payoff.

    Fiaranch - I've been known to stock up on Stouffers bigger dinners and stash in freezer for "those" days. Cooking skill is not judged here. Just join us.

    The tri tip was fantastic if a wee bit spicy. It was from Williams-Sonoma, a Christmas present from my DB. One still remains in the freezer. I grilled my 3 portobellas, ate 1. Also had these pretty good frozen battered green beans "Pictsweet" brand. At least one more meal from the tri tip tonight and maybe 2 but most likely only a lunch serving after tonight. Craving mac and cheese but only have shredded cheese. Do you think that will work? I know the preshredded is coated with something to keep it separate but not getting to the store today. Or maybe cauliflower with cheese sauce. Yes, the same one I've had forever, just checked it and it's fine. That might work to satisfy the cheese craving and get rid of the cauliflower.

    Yes, Susan, I agree with your assessment of Lacey's dinner. Keep spinning the leftovers for payola.

    Fortuitous occurrence. Dinner for church family again next Thurs. Chicken/Italian rice. Chicken pieces on sale this week. Love when things like that happen. Will buy Tues and it will spend 2 days refrigerated.

    Yum those lemon cupcakes look lovely. Does limoncello go bad? Have a bottle in refrig I've had forever. Guess I need to do the sniff test.

    Red - wanted to express my sympathy for the coaching staff and locals lost in the plane crash. Such a waste of precious lives. Sorry about the "unknowns" you found when cast came off. Hoping doc finds nothing serious in the results.

    I'm thinking of making a bit of rice for me and stirring in the chopped 'shrooms. Sounds good on a rainy afternoon. Dinner won't be until near 10 anyway and DH detests mushrooms so I have them all for myself.

    Another ingredient I had not heard of--lemoncello.  Will look it up after posting.

    Red, dh and I go to a dermatologist regularly and "irregularly" when we spot a skin growth that suddenly appears.  Have had a couple of basal cells removed on my leg and one squamous cell cancer on my face.  If a growth isn't dark brown with irregular edges, I don't panic.  We heard on the news about the plane crash.  Very sad. 

    Susan, you are getting your ducks in a row.  I can sense the excitement mounting.  Chicken and rice are a good combination. 

    I bought red snapper fillets for dinner at a seafood market this afternoon.  The fillets weren't exactly the right size.  One "might" not have been enough for two servings and two fillets are too much.  But I got the two fillets.  The problem with leftover cooked fish is that it usually gets tossed after a suitable time in the refrigerator.  I'm thinking about green beans as a side.  Maybe steamed and then dressed with a vinaigrette or maybe a green beans almondine.  I have a big bag of sliced almonds in the freezer.  OR...  toasted sliced almonds would be good on the pan-seared fish...

    Bedo, it's much too hot here for soup.  We seem to have gone from fireplace weather to a/c weather and skipped spring.

    Luv, I doubt that limoncello goes bad. If it does, I expect you will be able to see it. I have a bottle too. I hate the stuff in drinks, but love it to cook with.

    I have a leftover pie crust from making the lemon pie so it will become a ham and broccoli cheddar quiche for dinner. A cucumber salad willl go with it. All this talk of lemon cakes is making me want something lemony. I'm going to have to dig out a lemon girl scout cookie.

    Now I am hungry for pie. This is the recipe my grandmother used and I use it for all pies (fruit , chicken pot pie etc) Enjoy if you have never tried it ..........


    Pie Crust (makes 4 single crusts)

    4 cups all purpose flour

    2 tablespoons sugar

    1 teaspoon salt

    stir above dry ingredients together till mixed then add

    2 sticks of CRISCO - nothing else will match the flavor - can use original or butter flavor

    cut the Crisco into the dry mixture until pea size make a well in the center of the mixture then add:

    1/2 cup water - just tap water

    1 tablespoon apple cider vinegar

    1 whole egg

    continue to mix until incorporated into a one ball. Cut ball into 4 equal parts wrap each with plastic wrap and put in refrigerator for several hours - . One quarter of dough = one pie crust.

    This dough is extremely flaky and tastes out of this world.

    Carole congrats on your car. I have a 2003 Saab. Hmmmm. Nah. That's our "good" car. LOL

    Going to shop with DD2 and baby tomorrow. Stay over and sit that afternoon. DD picked up a half shift and Daddy wants to go fishing. LOL. She's changing jobs and going to work 4 days a week. I'll probably still sit on the 5th day for awhile until the crawling baby is faster than I am! LOL. They have an older couple who raised their kids who run a home day care. They only have 4 kids with Felicia.and since it's pay by the hour, they'll put off 5 days as week as long as possible. Daddy will drop her off in the early afternoon before he goes to sleep for night shift.So really most days will be half days. Also 2 of the kids belong to teacher so during the summer there will just be 2 children there. Sounds like a good choice for such a wee one.

    Dinner To nite is leftover flatbed and soup.

    I have Limoncello - Italian Lemon Liqueur - in my freezer - where my baby brother used to keep his Vodka. It's 64 proof so I certainly won't freeze. All the lemon items sound like spring. I agree w/Nance - I'm not a fan in drinks so it lasts forever.

    Carole - Oh Red Snapper. I'm jealous.

    Moon - it will be such fun to see the little one on a regular basis and watch the growth.

    Dinner was leftover Laurie's Salsa Chicken w/ Mrs. Renfro's hot green chili salsa. I think it's better the next day. It was a huge hit with my son - served over Quinoa & Brown Rice with corn, coleslaw and flour tortillas. Did anybody ever try it with pork chops? What do you think?

    Minus, I tried the salsa chicken with pork chops.  It works.
