mombie - I do mayo and mustard, salt & pepper in my deviled eggs too. I think my MIL adds pickle, not sure but I know if my DH makes tuna salad he puts pickle in too - I don't. To me pickles and fish are a no go.

Special--I am a contradiction when it comes to fish and pickles. I only like them with tuna, but the pickle has to be a very crunchy dill, only served on the side. I don't like pickle pieces IN anything. It's kind of silly, but I guess it's a texture thing. My deviled eggs sound similar to yours except my hint of pickle juice and I add a little granulated onion.

Sounds like I am the only one in this group that doesn't do anything special for Easter. Not sure when we stopped making this a family meal, but since we don't do anything special and the boy's family does, I loose the kids to his family every year. That is part of my justification to "claiming" them for Thanksgiving! His family seems to have claimed all the Hallmark holidays, Easter, 4th of July and Labor Day. And in return, I get Thanksgiving.
Deviled eggs are delicious! Mine are pretty simple, to be honest. I make my own mayo with a bit of extra lemon juice. Then I cream the yolks with both dry and Dijon mustard, salt, and paprika. Pickles can be on the same table, but the two items should not meet. An anchovy draped over the top is wonderful, as are a few chopped chives, but I never actually serve them this way. No one but me will eat those little anchovies.
I prefer to buy smoked hams that have not yet been cooked. Then cook it up at a lower temperature. I did buy a cooked, smoked ham from Costco this year which was boneless. I cut it into pieces and froze them. No way we can eat a whole ham. We get bored long before the thing is gone. I worry about having leftover cooked meat in the fridge for too long. We will see how those ham chunks do when I thaw one.
PET scan was okay. Woke at 4am, finished eating by 4:45 per the instructions. Arrived early since there was no traffic this morning. My poor vein almost failed, but he managed to get that crap into my body. And then I promptly fell asleep. Into the tube, and slept a bit more. Came home, had a piece of toast and fell asleep yet again! Client meeting that didn't go well. Made a pasta e fagioli soup with smoked turkey stock for dinner and found I had no appetite. Think my body is just plain confused! I have either had a very long day, or a bunch of really short ones.
Anyhow, now I wait. And fix the client's files. I had really hoped that today would be the last day of true development work. Instead, I will spend the weekend cleaning this up, and then I will get to the taxes.

My deviled eggs have mayo, a small amount of sour cream, spicy mustard, a little bit of white vinegar, salt and pepper. No pickles. It's a slight modification of an ATK recipe. I use another recipe sometimes that's not much more than mayo and some mustard and paprika. It's all good.
Susan, hope tomorrow is a better day.

We have not in recent years done much for Easter, either, but this year DS2 and girl are happy to come and our niece from San Diego could use a home cooked (vegetarian) meal. It will be fun for her to see her cousin (DS2) and meet (formerly) Chicago girl. This niece has already informed her parents that she intends to stay here and not return to SanDiego once the semester ends so we are eager to learn what the draw is...I strongly suspect she has a love interest who is local.
We have also invited a few friends/neighbors to join us since I am making so much food to cover all the bases.
I never make deviled eggs, but always got a kick out of the fact that DS2 frequently made and brought them to social events with his friends.
Last night, at a restaurant that is noted for its grilled watermelon steak appetizer, I tried that.....for the last time. The texture was like a slippery water balloon, and not something that my sensory system enjoyed. My flank steak topped with a green onion and cilantro relish was much nicer.
Tonight we had scallop and crab cakes (one of each kind) that I picked up at Roche Brothers. They were frozen, but small enough that they heated up pretty quickly. Defintely more bread crumbs than I would hope for, but tasty. We just had a garden salad and faux french bread to round things out.
I made Italian cookies with sprinkles for the annual neighborhood coffee tomorrow morning. Made enough that we will also have them for Easter dessert along with pizzelles and strawberries with sour cream and brown sugar....that's a throwback to the 70's.

Lacey - If those strawberries are a throw back, I'm hopelessly mired in the past. Most of my strawberry intake is dipped in sour cream & rolled in brown sugar. Yum!! Raspberries on sale here 2/$5.00 so I'll get some to drench with heavy cream for breakfast next week. So glad none of these fruit choices have any calories - LOL.

Lacey, With all the deviled egg talk, I thought your cookie picture was some weird version of eggs. LOL I hadn't read the post yet. Glad I did. haha In the right context those look yummy.

I love all the egg ideas. I might have to try some new things in my deviled eggs this year. Minus--the french's yellow is my stand by too.

Susan--glad the scan went smoothly. When do you hear back?

All the devilled eggs sound good. Some people put minced onions in them. A dirty trick, IMHO! I had some recently that had crumbled bacon in the filling. The bacon taste dominated. I can split a boiled egg, spread mayo on top, tiny bit of s & p, and enjoy!
Lacey, I love those round Italian cookies. My Italian sister-in-law's family make them every Christmas and I get to eat some of those that are given to my mother. The flavorings are subtle but delicious and I like the texture. These Italians use icings colored with food coloring.

I also use French's mustard in mine and forgot to add that I do sprinkle mine with paprika, but I have also made another version when I catered with mayo and spicy mustard and cilantro dusted with chili powder - kind of Tex-Mex.

My MIL makes deviled eggs. DD would eat 3 or 4 dozen "pair" if we would let her. She loves the things. :-)
Sharon, when she makes tuna sandwiches, puts in relish with the tuna...so I guess that's adding pickles.
Boy dog here is trying to catch a fly. It's kind of fun to watch the high leaps and hear the loud snaps....ohhh he just got it.....Now if I see him chasing a horse, cow, etc......I'll start to worry.
Breakfast is calling...so I guess I'd better go eat. Busy day today...helping a friend with solar panels, get a car smog tested, oil changes and some yard work before we head up to the lake to go kayaking tonight..we fire up battery operated red and green Christmas lights, lay them out appropriately and stay in the slow speed areas.

I use the mixer to do my deviled eggs-- Mayo, mustard and dill pickle relish (well drained) Then after I tuff them, I put a slice of pimento stuffed olive on type. Looks like eyes....HASpecial, the Ham on the hamster is in the haunch, just like a pig. I think they call them Hamsters cause they are so meaty around the rear---just ask my cat Esmerelda..... They are like the capons of the cat world.

One of the best parts of living in the South was the diced sweet and dill pickles at the supermarket. Brilliant! Already diced pickles! We were rather wedded to the Mt. Olive pickles, made in Cairo GA, a small town near my husband's "hometown." I like dill pickles in tuna. I like a combination of sweet and dill pickles in potato salad. I don't care for pickles inside my eggs. I like them nearby. Funny isn't it? I was not raised with French's which I hear is odd. As a child, my mother always used a spicy deli mustard, and then she progressed to Dijon. The only reason I ever buy French's is to make Inner Beauty Sauce, a famous Jamaican-style sauce developed by Chris Schlesinger. I make this in the Fall when the habaneros are in season.
Tonight, our life is all about the NCAA finals. This is my husband's non-musical passion: b-ball. We are dinner [I kid you not] at 5:30!!!! He wanted pizza so he went for take out, while I made a large salad. It was alright but not great.
My life is all about fixing these files. Then taxes, then planning, then laundry, then packing.... I am a bit overwhelmed.
Red, how is your wrist today? Did the mixer solve the pain issues for you?
Love that we have hamster for Easter... those little suckers are really only big enough to serve as an amuse bouche. I really send my best wishes to anyone celebrating Passover and Easter this week. I am making our tandoori chicken [again.] I know, I am getting boring. Having trouble getting really inspired to try new things while my life is so full of obligations.

I will make deviled eggs with mayo, mustard, a dash of cayenne and a bit of salt. But I won't eat them as i don't like mayo or mustard. LOL! Every one else likes them.

I'm proud of myself. I mustered the energy to make the deviled eggs I wanted and I made twice baked potatoes for tomorrow's Easter dinner. I didn't think I was going to be up to it. I can't seem to stop sleeping!!

I clobbered DH at Scrabble again tonight.

Mombie, impressed that you made your specialties in spite of radiation. I did T-Day dinner for 26 people while undergoing radiation, a decision that was dumb beyond belief! Sleep as much as your body needs. It really needs whatever it asks for to restore its health.

Easter dinner in my house will be pork roast, roasted carrots and potatoes, homemade rolls and a Reese's Peanut Butter Creme Pie (store bought).

Moon what a beautiful kitchen. I have kitchen envy. I love that baby's eyes! She makes the cutest expressions. My kitchen is not ready for photos. I have to polish the pots and pans and my rib hurts.
Deviled eggs. No relish but horseradish. I used to make them for a job. Everyone would ask for them when it was office party time. I put various toppings on them...green onions, black olives, bacon, paprika radishes. It drove me nuts because I don't like them and I never had one of those deviled eggs carriers.
Speaking of jobs this new one is feeling kind of sketchy. The person who oriented me left last Friday, my supervisor has been out for at least a month and may not come back, her supervisor has only been there for 5 months. , and I am setting up my office which has no furniture yet, that site has been empty for 2 years.and I found out that our contract is up for renewal. That's fine, it would be fun to work at a summer camp in Maine or Wyoming

Although I love pickles, the only thing I like them in is potato salad. Tuna has only mayo and onions.
More whim cooking. I made a lemon meringue pie for two yesterday (6 inch). A nice springy treat. It held up better in the refrigerator than most lemon meringues last night so it will serve as dessert tonight as well. I forgot how much trouble they are to make compared to fruit pies.
Hope your day is lovely! DH has promised me French toast this morning. That's certainly a good start!

Susan was DH's NCAA brackett blown last night? I had been rooting for Wisconsin and should have selected them to take it all. I did a brackett because DS2 is the "commissioner" of one. No win for me but a respectable placement....blew it by selecting Villanova to go the distance. Can't help but muse about how funny it would have been for DS2's old mom to win it all.

Alright enough escapism here...
Oh, and I think sprinkles on all those deviled eggs (pickles or not) would be festive. LOL!

Oh, Nance, I think lemon meringue pie is much easier than fruit pies since I prefer making the meringue to a top crust. Glad it held up in the fridge. I'm sure it is totally delicious!! Yum! You are my baking idol!

Love lemon meringue pie and never make it! Tonight is ham (DH got a late breaking deal on one last night after the estate tax appointment) scalloped potatoes - which will be experimentally made with almond milk, and asparagus. I have some mini tart shells which I will fill with lemon curd mixed with CocoWhip (coconut milk whipped topping) and topped with a berry. Just the two of us. Oh, and deviled eggs!
moon - love the kitchen, looks like you have a nice big window over your sink - I always like that, and love the DGD photo - she always looks like she knows what's up! So cute!

Thanks for the encouraging thoughts about letting myself rest. I was worried that I wasn't normal to be so much more tired now that I'm done. I can't believe you did T-dinner for 26 in this condition Susan!! You must have been sub-human by the time that was over. I can't even imagine.
Everyone is doing the rest of the cooking, but we are having BBQ pork ribs, twice baked potatoes, deviled eggs, lots of veggies, fruit cobbler, lemon bars....There's probably more, but I don't know what the other extended family members are bringing. I didn't have the energy to make Frog-eye salad. My third kiddo will be so disappointed. He doesn't eat most desserts in the world, but he likes Frog Eye Salad.
Sounds like we will all have a wonderful feast today. Happy eating and Happy Easter.

Lacey - the meringue part is kind of fun, it's all the other juicing and grating and cooking the filling -- lots of "mis" to get "en place". You'd like this recipe -- it had some lemoncello in it. That's probably what made it hold up so well lol!

The pork roast I made was delish. Before I cooked it, I injected it with some wine and put Ms. Dash's seasoning on them. The roast came out perfect. Enough leftover for another night or two.

Now I don't know who to root for on Monday. My bowling potluck is Mon night and even though I haven't bowled since the first week of Feb, they want me to come. I am making.....deviled eggs. And so they are on the stove now in the water.... Now this is my "signature" potluck item but I didn't think (being childless and all) about the glut of hardboiled eggs that may be out there... Lets just hope half the bowler s don't bring the same tihing....
