    Tonight is ramen noodles with chicken, napa cabbage, carrots, onions, toasted sesame oil, scallions.  DH is at the gym so needed something quick.

    Here is the Daily Roo in the form of a wallaby footprint - isn't it cute?  DD brought it home today!

    Special, that is so cute...reminiscent of the hand prints the kids made at school! :) 

    Minus, those lemon tarts prompted me to remember I need to renew a Costco membership which I have let lapse for a few years....but sadly, then seeing the cashew ingredient makes me an outlier....it's one of my big allergies which would land me in the ER. :(  I have never been to a Vegan restaurant since so many of the food items have cashews in various forms, a vegan staple I guess. But boy do those sound good!! I think you or someone else may have mentioned these before. Glad you mentioned the ingreds now, so I can take my time with that Costco renewal. :)

    So I have delivered myself from the funk of earlier today.....called the ins co to see how much I would have to co-pay for the AIs which I am now sure will wreck my current life quality. So, GOOD NEWS! As with Tamoxifen, recently in my state, legislation was passed that AIs  are considered a form of chemotherapy, and as such, the patients taking them cannot be charged a co-pay. So that's one good thing.

    Then as it turned out with the local school,  the woman who could not make the meeting today, emailed later that she could make it afterall. So I met with both of the school clinicians and we made a plan for me to start working with lunch groups and teaching social/emotional skills in the kindergarten classrooms in two weeks. I'll do that one full day a week as a volunteer. It's interesting to see how colleagues set up their programs. I think I will be working on my flexibility as I move into this since I had a pretty tight program I ran in my former school, with my own office space, a stable (if way too large) caseload, and things are clearly more fluid in this setting. I am happy to see that the clinician I had yet to meet seems very nice and should be a pleasure to work with. Hoping it works out well....

    Tonight's dinner.....Before and after that meeting, I made a big pot of (you guessed it!) kale/veggie/bean soup. It's that time of year! When I tasted it in the early afternoon, something was missing, but I wasn't sure what....then I realized....the parmesan rind!! What a difference that makes in the final product. Love this soup! We had it with more leftover ratatouille (one more night of that left!), and some roasted tomato/mozzarella crusty bread. Not bad for using up things in the fridge....

    We'll be enjoying kale soup over the next week....maybe I'll just post DITTO for a few days.

    Tomorrow night we are heading out to dinner with DS2 (solo) to a restaurant he just signed on to an office park his company is developing in a Boston suburb. I hope we get to hear more about this relationship with Chicago girl. Boys can be so darn tight lipped! He and GF went to yet another wedding last weekend in OK, and head to Puerto Rico for another one next weekend. One might think that the topic of their future could be up front with them given all the wedding hopping they have done over the past year!

    Anyway, the restaurant is supposed to be an authentic Italian family run place with an Italian market attached, and after some of the disappointing meals we had in Italy, I hope it is better! Oh, I must get back to that travel report. Apologies...I have been very distracted.

    Thanks all for the welcome and the words of wisdom.  Takeout tonight.  Yummy chino latino stewed beef over yellow rice and black beans.  An old favorite that I will be kicking to the curb soon in the name of trying to eat healthier.  But yum for now.

    Leftover red beans and brown rice with a delicious tossed salad that included avocado and feta cheese.  Also some slices of multigrain bread with butter.

    Lacey - my only argument w/Costco is their book section.  At least at my store, it sucks.  I really don't want to switch to Sam's, but they have a much better book selection.

    You're right - guys don't talk much.  My son has been w/the same girl for 13 years now.  It dawned on me they have no intention of getting married when they bought a house together.  Duh!!  No grands for me, sigh.

    Special - looks like the Roos had a kindergarten fingerpainting day.  Fun.

    minus & lacey - roos fingerpainting and handprinting - that is it exactly!  We also have sea lion and dolphin paintings!  They are hilarious - DD had them made for Mother's and Father's Day gifts - I got the sea lion one and DH got the dolphin one.

    The roo print reminds me of the fish painting we did on Tshirt for FISH Day! Girl Scouts. Fish Day is a city celebration here in Port. You just dip the side of the fish in paint and roll it on the shirt. Weird but cute and TOTALLY messy. LOL

    Susan that soup sounds so good parm rind or not. 

    Lacey sorry about the cashew thing. They're one of my faves. Can you eat other nuts? 

    I have to go shopping.  I wanted to make soup and didn't even have a can of tomatoes.

    The chicken carcass, along with the last grilled chicken carcass, are now in the oven. The house smells like chicken. I expect that I will enjoy some soup for lunch tomorrow. We are headed to soup season. I don't actually love the cold winter, but I love love love soup. And winter makes soup seem logical. And Lacey, parmesan rinds are a gift to soup, aren't they?

    I also have chicken parts in the fridge, so I will be making more stock this weekend. This domestic-goddess stuff takes attention to detail!

    Around here, a chicken or turkey carcass always goes into the stockpot.  Stock is amazing stuff! :-)

    Happy to not be making dinner tonight....tho I do need to figure out soon what to do with two eggplants in the vegetable bin in the fridge....if they are even holding up. No more ratatouille for now......

    My favorite way to eat eggplant is a roasted salad-dip in the Greek style. My favorite recipe isn't online, but Diane [world-renowned for her Greek cookery] has several options to choose from here: http://zesterdaily.com/recipe/greek-roasted-eggpl... I have had great success roasting in the oven when I don't plan the grill properly. My recipe does have you roast the eggplant and then drain it overnight in a strainer for a more eggplant-ie flavor, but, certainly not essential.

    Serve with a lamb kebob, or with a lovely Greek salad and you have a really nice meal.

    Well, I may not be thinking about making dinner, but was curious about what I might be having for dinner. OMG! Overwhelmed by the menu of the restaurant DS2 is taking us to tonight. Love that they use saffron in many dishes....and so much else about the menu. Choices, choices! Yikes.... Check it out:

    That is the company that started in Salem, NH that Michelle loved so much. Will be interested to hear if they have been able to keep up the quality after becoming a chain. My daughter attended a wedding at the Salem location last Fall and thought it wasn't that very special, but banquet stuff is never great. Do report back!

    The parm rind in soup, I learned about that long ago. But i just saw on the Chew this week Mario called it one if the Chefs privileges! He cut it up in large dice. I always just left it in the soup. Guess you learn something new every day! LOL

    Hmmmm. Does two make a family restaurant a "chain"? Hope not. I am figuring that the family is big enough that they needed to create a second venue to keep everyone busy and out of each other's hair. I'll be going with an open mouth and a critical eye....will be gentle tho since this is one of the lease coups that DS2  landed for his new office park account.

    DH has already announced that he wants to arrive there way before the reservation so we can check out all of the market offerings. Ooohhhh, okaaaay hon.......

    Oh Lacey looks like a divine menu. How to choose what a dilemma. I took a look thru the desserts. How to choose? And a market too?

    Lots of leftover chicken here for dinner tonight. Have to pry DH off couch to work on freezer organization.

    That toast will definitely happen...and not under anyone's breath since DH also knew her and DS2 learned about her positive influence on so many of our lives. It will be a sweet way to "open" the MA version of her favored restaurant.

    So Mercury is definitely in retrograde! There will be no reports on the Tuscan Kitchen from me tonight. :(

    I had some intestinal distress earlier today, which has not only not subsided (even with immodium) but has expanded to general malaise. I realized an hour ago that I could certainly not face ordering and eating wonderful food...and worried that feeling sick during or afterwards would leave a very bad impression about the restaurant. 

    I actually hoped DH and DS2 would go without me so I could at least have a report.....but loyalists that they are, they preferred to postpone. I won't complain...but did feel badly that DH spent most of his day fasting in anticipation and I'm sure his dinner here of leftover kale soup and kale bedded raviolis did not quite cut it. Oh well......

    Oh crap! [pun intended] What a huge disappointment. I am sure that everyone was looking forward to your report as much as I was. Will you be able to reschedule with DD2?

    Tonight I used the remaining 6oz of pork to make a pork-napa cabbage stir fry, but for some reason, I had a craving for scallion pancakes. Yea, silly me spent an hour making these little delights. Lot of time, but they were really delicious with the stir-fry.

    Lacey - sorry to hear you're under the weather but glad they postponed.  We'll look forward to a report another time.

    Tonight was spinach salad w/bacon, cranberries, sweet onions, hard boiled eggs & poppy seed dressing.  Going to a new restaurant for lunch tomorrow, Cafe Mezza, with my SIL before an afternoon chamber music concert.  LOVE afternoon concerts so everyone is home before dark.  I'll report on both.

    Disappointing trip to Costco today. No lemon tarts, boo! No wild caught salmon either. Consolation prize was fresh Canadian walleye. So dinner was panfried walleye and potato salad with a champagne vinaigrette.

    Supper was chicken and stove top stuffing.  Don't judge me. LOL I love stove top I use applesauce in place of the butter though. It's so good.
